2 12- to 14-ounce pork tenderloins
2 teaspoons crumbled dried sage leaves
1 tablespoon butter
6 tablespoons pure maple syrup
6 tablespoons apple cider vinegar
2 teaspoons Dijon mustard

Steps:

  • Rub pork tenderloins all over with crumbled dried sage; sprinkle with salt and pepper. Melt butter in large nonstick skillet over medium-high heat until hot and bubbling. Add pork tenderloins and cook until brown on all sides, turning occasionally, about 6 minutes. Reduce heat to medium-low, cover and cook until thermometer inserted into pork registers 150°F, turning occasionally, about 10 minutes longer. Transfer pork to platter; cover to keep warm.
  • Whisk 5 tablespoons maple syrup, 4 tablespoons apple cider vinegar and Dijon mustard in small bowl to blend. Set aside. Add remaining 2 tablespoons vinegar to skillet and bring to boil, scraping up any browned bits. Reduce heat to medium-low. Return pork and any accumulated juices to skillet; add maple syrup mixture and turn pork in glaze just until coated, about 2 minutes. Remove from heat. Transfer pork to cutting board. Cut pork into 1/2-inch-thick slices. Stir remaining 1 tablespoon maple syrup into glaze. Season glaze to taste with salt and pepper.
  • Arrange pork slices on plates. Spoon glaze over pork and serve.

2 tablespoons Dijon mustard
1 teaspoon sesame oil
3 cloves garlic, minced
fresh ground black pepper to taste
1 cup maple syrup
1 ½ pounds pork tenderloin

Steps:

  • Combine mustard, sesame oil, garlic, pepper, and maple syrup. Place pork in a shallow dish and coat thoroughly with marinade. Cover, then chill in the refrigerator at least eight hours, or overnight.
  • Preheat grill for medium-low heat.
  • Remove pork from marinade, and set aside. Transfer remaining marinade to a small saucepan, and cook on the stove over medium-low heat for 5 minutes.
  • Brush grate with oil, and place meat on grate. Grill pork, basting with reserved marinade, for approximately 15 to 25 minutes, or until interior is no longer pink. Avoid using high temperatures as marinade will burn.

3/4 teaspoon rubbed sage
1/2 teaspoon pepper
2 pork tenderloins (3/4 pound each)
1 teaspoon butter
1/4 cup maple syrup
3 tablespoons cider vinegar
1-3/4 teaspoons Dijon mustard

Steps:

  • Preheat oven to 425°. Mix seasonings; sprinkle over pork. In a large nonstick skillet, heat butter over medium heat; brown tenderloins on all sides. Transfer to a foil-lined 15x10x1-in. pan. Roast 10 minutes., Meanwhile, for glaze, in same skillet, mix syrup, vinegar and mustard; bring to a boil, stirring to loosen browned bits from pan. Cook and stir until slightly thickened, 1-2 minutes; remove from heat., Brush 1 tablespoon glaze over pork; continue roasting until a thermometer inserted in pork reads 145°, 7-10 minutes, brushing halfway through with remaining glaze. Let stand 5 minutes before slicing.

This is a great autumn dish. The aromatic sauce of maple, sage and mustard creates a unique seasonal treatment for pork. Consider sauteing some apple slices in butter, maybe with a pinch of sage as well, to serve along side.

2 (12 ounce) pork tenderloin, trimmed
2 tablespoons minced fresh sage, divided or 2 teaspoons dried sage
salt & freshly ground black pepper
2 tablespoons unsalted butter, divided
1 tablespoon olive oil
1/4 cup chopped shallot
1 cup chicken broth
3 tablespoons maple syrup
3 tablespoons cider vinegar
1 tablespoon Dijon mustard

Steps:

  • Rub the tenderloins with 1 TBS of the fresh sage (or all of the dried sage, if using) and season them with salt and pepper.
  • Heat 1 TBS of the butter and the olive oil in a large skillet over medium high heat until sizzling.
  • Add the pork and brown on all sides, about 4 minutes.
  • REduce the heat to medium-low, cover, and cook until the pork registers about 150*F in the center of the thickest part, turning the tenderloins occasionally, about 15 minutes.
  • Transfer the pork to a platter and tent with foil to keep warm.
  • Add the shallots to the skillet and cook over medium heat until they begin to soften, about 30 seconds.
  • Add the broth,maple syrup, vinegar, and mustard, and scrape up any browned bits from the bottom of the skillet.
  • Simmer until the liquid is reduced by one quarter, and has thickened enough to coat the back of a spoon, 8 to 10 minutes, stirring often.
  • Whisk in the remaining butter until well blended, then season the sauce with the remaining fresh sage, if using and salt and pepper to taste.
  • Return the pork and any accumulated juices to the skillet and turn the pork to coat with the glaze.
  • Remove the pork from the skillet, slice the tenderloins into 1/2 inch strips and arrange them overlapping, on a warm serving platter or individual plates.
  • Drizzle the meat with additional sauce and serve.
  • NOTE: Real maple syrup give by far the best results in this recipe, both in flavor and in consistency of sauce.
  • If using maple flavored pancake syrup, don't reduce the sauce too much, or it will become quite sticky.

1 cup maple syrup
1 tablespoon minced ginger
1/2 tablespoon minced garlic
1/4 teaspoon chile flakes
1/2 cup veal stock
4 tablespoons butter
6 (8-ounce) caribou tenderloins, pork or veal can be substituted

Braised Red Cabbage, as an accompaniment, recipe follows
Sweet Potato Puree, as an accompaniment, recipe follows
4 tablespoons grape seed oil
2 tablespoons butter
1/2 cup diced smoked bacon
1 red onion cut in small dice
1 head read cabbage, slice thinly
1 tablespoon brown sugar
1 cup red wine
1/2 cup red wine vinegar
Salt
Pepper
4 tablespoons butter
1 pound sweet potatoes, peeled and cut in large dice
1 yellow onion sliced
2 tablespoons minced fresh ginger
2 cups chicken stock
2 cups heavy cream
Salt
Pepper

Steps:

  • In a saucepan on medium heat, add all ingredients for the Chile Maple Glaze and reduce by half. Be careful not to allow to boil over.
  • Preheat oven to 450 degrees F.
  • Season tenderloin with salt and pepper. Sear tenderloin in a saute pan, roast in a hot oven until medium rare, and then brush with glaze and cook another couple minutes. Caribou should be served rare because of its leanness, veal medium rare, and pork medium. Transfer meat from the pan to a cutting board and add the glaze to pan with veal stock and butter. Reduce until thickened and season with salt and pepper. Serve with Braised Red Cabbage and Sweet Potato Puree.
  • In a heavy-bottomed pot on medium heat, melt the butter in the oil. Add the bacon and onions and cook for 2 to 3 minutes. Add the remaining ingredients and cover. Turn down the heat to low. Cook for 20 minutes, stirring every few minutes. When cabbage is tender, season with salt and pepper.
  • Place all ingredients into a large pot, bring to a simmer, and cook for 30 minutes. Strain off excess liquid, puree, and season.

2 teaspoons ground coriander
1 teaspoon garlic powder
1/2 teaspoon ground ginger
2 pork tenderloins, each about 12 ounces, silver skin removed
1 tablespoon vegetable oil
Kosher salt
Freshly ground black pepper
1/4 cup pure maple syrup
2 tablespoons sherry vinegar
2 teaspoons chipotle chile hot sauce
1/2 teaspoon kosher salt

Steps:

  • Position a rack closest to the broiler and preheat to high. Combine the coriander, garlic powder, and ginger. Brush the tenderloins with the oil and rub all over with spices. Season with salt and pepper, to taste. Lay the pork on a small shallow pan and broil until golden, turning once, about 5 minutes per side. (An instant-read thermometer should register 130 degrees F when inserted into the thickest part of the meat.)
  • Meanwhile, for the sauce: Whisk the syrup, vinegar, hot sauce, and salt together in a small bowl. Set about half the sauce aside. Generously brush the tenderloins all over with the remaining sauce. Return to the broiler and cook, turning once, until a deep rich brown, about 2 to 3 minutes. Set meat aside for 5 minutes to rest before slicing. Serve with reserved sauce for drizzling over the meat.
  • 1. Lay the tenderloin on your work surface and slip a sharp knife under the surface of the silver skin. Keeping your knife flat against the meat, make your first cut by slicing away from you and toward the end of the tenderloin.
  • 2. Lift the unattached portion of the silver skin up and place your knife at the point where the skin meets the tenderloin. Slice to separate.
  • 3. Continue moving down the length of the tenderloin, pulling and slicing until the silver skin is completely removed.

  • Preheat the oven to 350 degrees F (175 degrees C).

This is from another web site but is so awesome tasting that you will want to try it for sure!!! And its sooooo simple!! If the glaze is prepared ahead of time it will thicken, just reheat it in the micro until it melts and then use it. UPDATE:::Made this again the other day and DID marinate it. I made the sauce, added the pork and popped in the fridge for 2 hours, took out the pork and put on the grill and microwaved the sauce, if you dont heat the sauce it will be WAY too sticky for the grill and believe me you will have a mess! I have also done this with some very thick (1 1/2 inch) cook out style pork chops and they were super too!
