The result is a juicy and tender pieces of meat with golden and crispy outer skin carnitas. Perfect for carnitas tacos or in a torta.

2 Lbs. pork loin and pork butt in large cubes about 2 inches.
1/4 cup of Lard (vegetable oil is OK)
About 6-8 cups of water enough to cover the meat
1 Tablespoon of salt
Optional: 3 cloves of garlic

Steps:

  • In a large Dutch oven or Cast Iron Pot place the pork, lard, water, garlic, and salt. Cook covered on a medium heat to a boil. Reduce to simmer for about 45 minutes until pork is almost tender.
  • Uncover and turn the heat to medium high to reduce the liquid.The meat will start frying in its own fat and lard at this point. Carefully brown the meat at medium low heat stirring frequently until pork is evenly browned. About 15 to 20 minutes. At this point do not over cook or you will get very dry meat.
  • Serve with hot tortillas and green salsa.

CRISPY PORK CARNITAS

There's nothing like carnitas. Cubes of fragrantly spiced pork are slowly cooked in lard until they're crispy on the outside while at the same time remaining soft and succulent inside. Bust some up on a warm tortilla, drizzle with braising liquid, top with a little salsa, onion, and cilantro, and you're probably enjoying the world's best taco.

3 pounds boneless pork butt (shoulder)
8 cloves garlic, peeled
¼ cup olive oil
1 orange, juiced, orange parts of peel removed and sliced into thin strips
1 tablespoon kosher salt
2 bay leaves, torn in half
1 teaspoon ground black pepper
1 teaspoon ground cumin
¾ teaspoon ground cinnamon
½ teaspoon Chinese 5-spice powder

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Remove fat from pork; cut pork meat into 2-inch cubes and roughly chop fat.
  • Mix pork, garlic, olive oil, orange peel, orange juice, salt, bay leaves, black pepper, cumin, cinnamon, and 5-spice powder together in a bowl until pork is coated completely. Transfer mixture to a 9x13-inch baking dish. Place baking dish on a baking sheet and cover baking dish tightly with heavy-duty aluminum foil.
  • Bake in the preheated oven until pork is fork-tender, about 3 1/2 hours.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Transfer meat to a colander set over a bowl. Remove garlic, bay leaves, and orange peels from baking dish and pour accumulated juices from the baking dish over meat in colander into the bowl. Return meat to the baking dish and drizzle accumulated juices over each piece of meat.
  • Cook meat under the preheated broiler for 3 minutes. Drizzle more accumulated juices over meat and continue broiling until crispy, 3 to 5 minutes. Transfer pork to a serving plate and drizzle more accumulated juices over the top.

4 pound pork shoulder ((aka pork butt), bonless)
1 onion (peeled and halved)
3 cloves garlic (crushed)
2 medium oranges (juiced and keep the spent halves)
2 limes (juiced and keep the spent halves)
1 1/2 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon cumin (ground)
1 teaspoon red pepper flakes
1 teaspoon oregano (dried)

Steps:

  • Prepare oven: Preheat the oven to 300 F degrees.
  • Mix dry rub ingredients: In a small bowl, combine all the dry rub ingredients together.
  • Season pork and place all ingredients in pot: Place the pork shoulder in a large Dutch oven or an oven safe pot and rub the dry rub all over the pork on all sides. Throw in the onion, garlic juice from the oranges, limes and the spent orange and lime halves.
  • Cover pot and cook: Cover the pot and place it in the oven. Bake for 3 1/2 hours until the meat is tender and shreddable.
  • Shred meat: Remove the meat from the pot and place it on a baking sheet. Using two forks shred the meat into small pieces. There should be about 1 1/2 cups of liquid left in the pot. Ladle about 1 cup of that liquid all over the shredded pork.
  • Crisp up carnitas: Place the meat under the broiler, for about 5 to 10 minutes. Half way through turn them over with a spatula to crisp up on both sides. You can crisp them up 450 F degrees for about 30 minutes, especially if your oven doesn't have a broiler.
  • Serve: Serve hot on tortillas, burritos, tamales, sandwiches, etc.

2 pounds boneless pork shoulder (or 2 1/2 pounds bone-in)
Salt and freshly ground black pepper
2 teaspoons dried oregano
1 teaspoon ground cumin
1 tablespoon olive oil
1 onion, coarsely chopped
4 cloves garlic, minced
1 jalapeno, seeded and ribs removed, chopped
1 orange, cut in half
3 tablespoons vegetable oil

Steps:

  • Rinse and dry the pork shoulder. Salt and pepper liberally. Mix the oregano and the cumin with olive oil and rub all over pork. Place the pork in a slow cooker and top with the onion, garlic, and jalapeno. Squeeze over the juice of the orange and add the two halves. Cover and cook on low for 8 to 10 hours or on high 4 hours.
  • Once the meat is tender, remove from slow cooker and let cool slightly before pulling apart with a fork. In a large saute pan, heat the vegetable oil over high heat. Press the carnitas into the oil and fry until crusty on one side. Serve.

1 boneless pork shoulder butt roast or pork loin roast (2 to 3 pounds), cut into 3-inch cubes
1/2 cup lime juice
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
12 flour tortillas (6 inches), warmed
2 cups shredded cheddar or Monterey Jack cheese
2 medium avocados, peeled and diced
2 medium tomatoes, diced
1 medium onion, diced

Steps:

  • In a 3-qt. slow cooker, combine pork, lime juice, salt, pepper and pepper flakes. Cover and cook on high for 1 hour; stir. Reduce heat to low and cook 8-10 hours longer or until meat is tender., Shred pork with two forks. Spoon about 1/3 cup pork mixture down the center of each tortilla. Top with cheese, avocados, tomatoes, onion, lettuce and, if desired, cilantro. Fold in bottom and sides of tortillas. Serve with salsa. Freeze option: Before adding toppings, freeze cooled shredded meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

½ cup chopped onion
⅓ cup orange juice
1 tablespoon cumin
1 ½ teaspoons kosher salt

1 lime, zested and juiced
2 (5.3 ounce) containers plain fat-free Greek yogurt
½ teaspoon kosher salt
1 pinch chili powder
16 (6 inch) soft yellow corn tortillas

Steps:

What a fantastic way to have carnitas any time of the day or night! If you do not care for cilantro, you may use chopped parsley in it's place. This is great for large groups of friends or small get-togethers. Here's a tip: I buy Pork Butt Roasts, bone-in. All you have to do is remove the bone. You just take a sharp knife and grab ahold of the bone, take your knife and just run it around the bone. It's so easy, I know you can do it. Those pork butt roasts, sometimes called Boston Butt Roasts, are really inexpensive. Much cheaper than pork chops. You are paying for the bone, but it's so easy to take out. And, it's a very flavorful piece of meat. That's all I use for my Mexican food recipes.

1 1/2 cups pork, sliced thin into 1 by 1/2 inch strips (leftovers works great)
4 tablespoons onions, chopped and divided
1 teaspoon bottled minced garlic or 2 fresh garlic cloves, minced
3 tablespoons butter, divided
2 teaspoons fresh lime juice
12 large eggs
3/4 cup water
1 1/2 teaspoons salt
1/2 cup shredded cheddar cheese
1/4 cup cilantro leaf, chopped
1/3 cup fresh tomato, seeded and chopped

Steps:

  • Saute pork, 3 tablespoons onions and garlic in 2 tablespoons butter in small skillet over low heat.
  • Saute till onion is soft, about3 to 4 minutes. Add lime juice and remove from heat and set aside.
  • Melt remaining 1 tablespoons butter in large nonstick, oven-proof skillet over medium heat. While butter is melting, whisk eggs, water, salt together in large bowl till light and fluffy. When butter is bubbly, pour 1/2 of egg mixture into skillet. Cover and cook till eggs are set on bottom (they may still be runny on top).
  • Sprinkle pork mixture evenly over eggs. Carefully pour remaining eggs over pork, cover and place in preheated 350°F oven for about 12 to 16 minutes, or until eggs are set. Remove from oven. Sprinkle with cheese and return to oven till cheese is melted, approximately 7 to 10 minutes.
  • Remove from oven and sprinkle with cilantro leaves, tomato and remaining 1 tablespoons onion. Let set 5 minutes before cutting.

5 pounds pork shoulder roast
3 cloves garlic, chopped
2 tablespoons kosher salt
1 teaspoon ground black pepper
½ small yellow onion, chopped
6 cups pork stock
1 pinch salt and ground black pepper to taste
12 each green onions, chopped
24 each fresh yellow corn tortillas
4 cups thinly shaved green cabbage
10 ounces crumbled queso fresco
2 cups fresh salsa
2 each limes, cut into wedges

Steps:

  • Heat a large, cast iron Dutch oven over medium-high heat. Season pork shoulder with garlic, 2 tablespoons kosher salt, and 1 teaspoon black pepper. Place pork shoulder fat-side down into the hot pot and sear until deep golden brown on all sides, 4 to 5 minutes. Add yellow onion to cook with rendered drippings for 1 minute. Slowly pour in pork stock to cover pork shoulder.
  • Bring to a light boil; cover and braise until fork-tender, 4 1/2 to 5 hours.
  • Transfer to a bowl and shred into carnitas, adding 1 1/2 cups of pork stock for moisture and more salt and pepper to taste.
  • Heat a cast iron skillet over medium-high heat. Add green onions and cook until slightly browned, 7 to 10 minutes. Transfer to a bowl.
  • Heat corn tortillas in the hot skillet on both sides, 2 to 3 minutes total for each tortilla. Place braised pork into tortillas and garnish with cabbage, queso fresco, salsa, green onions, and a squeeze of lime.
