This amazing no-knead porridge bread from the My Fussy Eater Cookbook is perfect to bake ahead for a quick & easy healthy weekday breakfast for kids!

400 g rolled oats
2 tsp bicarbonate of soda
1/2 tsp fine salt
500 g plain yogurt (or dairy free alternative)
50 ml milk (or dairy free alternative)
1 egg
2 Tbsp mixed seeds (optional)

Steps:

  • Preheat the oven to 200°C (Gas mark 4/400°F). Grease and line a 900g (2lb) loaf tin with baking paper.
  • Measure out the rolled oats, bicarbonate of soda and salt and mix together in a large bowl.
  • Add the yogurt and milk to the bowl.
  • Lightly beat the egg and add to the bowl as well, then mix well until completely combined.
  • Pour the bread mixture into the lined loaf tin. Smooth out the top and draw a line down the centre of the loaf with a knife.
  • Sprinkle the seeds (is using) evenly over the top of the loaf.
  • Place in the pre-heated oven to bake for 45 minutes. After 45 minutes, carefully remove the loaf from the tin then put it back in the oven, directly on the oven shelf, and bake for another 5 minutes. This will help give the loaf a lovely crispy crust.
  • Remove from the oven and cool on a wire rack.
  • Serve with butter and jam or honey for a deliciously filling healthy breakfast!

500g Co-op Greek style natural yogurt
2 tbsp Co-op semi-skimmed milk
1 large Co-op British free range egg
1 tbsp Co-op pure Canadian maple syrup
2 tbsp mixed seeds
Co-op 0% fat Greek style yogurt and fresh fruit, to serve (optional)

Steps:

  • 1. Preheat the oven to 180°C/fan 160°C/gas 4. Line a loaf tin with greaseproof paper. Stir together the oats and bicarb in a large bowl
  • 2. Mix together the yogurt, milk, egg and maple syrup in a jug
  • 3. Make a well in the centre of the oats and pour in the yogurt mixture, bringing in the oats from the sides with a wooden spoon to incorporate
  • 4. Once combined, pour into the prepared tin
  • 5. Sprinkle over the mixed seeds and bake for 1 hour, until a skewer inserted into the centre comes out clean
  • 6. Toast slices and serve with yogurt and fruit, if you like

1 package active dry yeast
11 ounces bread flour, plus extra for kneading
1/4 cup toasted uncooked old fashioned rolled oats, plus 1 tablespoon, divided
1 teaspoon kosher salt
12 ounces leftover, cooked old fashioned rolled oats, at room temperature
1/4 cup warm water
2 tablespoons agave syrup
1 tablespoon olive oil, plus extra for bowl and pan
1 large egg yolk
1 tablespoon water

Steps:

  • Combine the yeast, bread flour, 1/4 cup toasted, uncooked oats, and the salt in a small mixing bowl and set aside.
  • Combine the leftover cooked oatmeal, warm water, agave syrup, and 1 tablespoon of oil in a large mixing bowl. Add the dry mixture to the cooked oatmeal mixture in 3 installments and mix thoroughly with a wooden spoon after each addition.
  • Turn the dough onto a lightly floured surface, and knead by hand for 10 minutes, incorporating more flour, if needed. Dough will be sticky. Put the dough in a lightly oiled bowl or container. Cover with plastic wrap and set in a warm place to rise until the dough has doubled in size, about 1 hour.
  • Punch down the dough, shape it into a loaf, and put it into a lightly oiled 9 by 5-inch loaf pan. Cover with plastic wrap and refrigerate overnight.
  • Heat the oven to 350 degrees F.
  • Combine the egg yolk and water in a small bowl. Lightly brush the top of the loaf with egg wash and sprinkle with remaining 1 tablespoon toasted, uncooked oats. Bake until the bread reaches an internal temperature registers 210 degrees F on an instant-read thermometer, about 55 minutes to 1 hour. Remove the loaf from the pan to a cooling rack for 30 minutes before slicing and serving.

⅓ cup vegetable oil
1 teaspoon salt
1 ½ cups boiling water
2 tablespoons active dry yeast
½ cup lukewarm water (100 degrees F/38 degrees C)
1 cup whole wheat flour
5 cups bread flour
2 eggs

Steps:

  • Combine oats, molasses, oil, salt and boiling water. Let cool to about 105 degrees F.
  • Dissolve the yeast in the warm water and let stand for 5 minutes or until creamy. Stir the yeast into oat mixture and mix well. Add whole wheat flour, 2 cups bread flour, and the eggs. Mix until well combined.
  • Stir in enough of the remaining flour to make a soft dough. Turn dough out to a floured counter and knead for about 10 minutes. Place the dough in a well-greased bowl and cover with greased plastic wrap. Let the dough rest in the refrigerator overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Grease 3 regular loaf pans and 4 mini loaf pans.
  • Transfer the dough onto a floured surface and divide it into 4 pieces. Shape the dough into loaves and place them in the pans, seam-side down. Let rise until doubled, about 90 minutes. Bake in the preheated oven until the loaves are golden brown and sound hollow when tapped, about 30 minutes.

1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast

6 to 6-1/2 cups all-purpose flour, divided

Steps:

2 (1/4 ounce) packages quick-rising yeast
1/2 cup water (110 degrees)
1 1/4 cups boiling water
1 cup quick-cooking rolled oats
1/2 cup light molasses
1/3 cup butter

5 3/4-6 cups all-purpose flour
2 beaten eggs
quick-cooking rolled oats
1 beaten egg white
1 tablespoon water

Steps:

  • Soften yeast in the warm water.
  • Combine the boiling water, 1 cup oats, molasses, butter and salt.
  • Cool to lukewarm.
  • Stir in 2 cup of the flour, beat well.
  • Add the softened yeast and 2 beaten eggs, beat well.
  • Stir in enough of the remaining flour to make a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • Shape into a ball.

  • Shape dough into loaves.
  • Place the loaves into the pans.
  • Cover and let rise in a warm place until double (about 30- 45 minutes).
  • Mix the beaten egg white with the tablespoon of water.
  • Brush the tops of the loaves with this mixture.
  • Sprinkle the tops of the loaves with a few more rolled oats.
  • Bake at 375°F till done, about 40 minutes.
  • Cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • Remove from pans and cool on a rack.

200g cold leftover porridge
500g strong white bread flour, plus extra for dusting
½ tbsp caster sugar
1 tsp flaked sea salt
7g dried yeast
small handful of oats, to sprinkle

Steps:

  • Put the porridge in a large mixing bowl with 300ml lukewarm water. Stir in the flour, sugar, salt and yeast until fully combined. Cover with a damp tea towel and leave to prove for 1 hr, or until it has almost doubled in size.
  • Tip the dough onto a well floured surface and knock the dough back, punching and kneading it - don't worry if it's very soft. Shape the loaf and put it in a non-stick 900g loaf tin. Cover with the damp tea towel and let it prove for another 45 mins. It should expand to fill the tin. Heat the oven to 220C/200C fan/gas 6.
  • Make a slash along the length of the dough and sprinkle on the oats. Bake for 10 mins, then turn the heat down to 190C/170C fan/gas 3 and cook for another 30 mins. Carefully turn the loaf out and tap the bottom. If it sounds hollow, then the bread is ready. If not, put it back in the oven for another 5 mins. If any oats fell off when you turned it over, scatter them back over the loaf.
  • Turn the loaf out onto a wire rack and leave to cool.

I have varied the following recipe to utilize 5, 7 and 10-grain cereals, substituting them for the rolled oats. I also substitute a cup of whole or cracked-wheat flour for a cup of the "additional" flour. I also sprinkle some multi-grain on the loaf tops before the rising stage in the loaf pans. The term Porridge Bread comes from the fact that the cereal is softened in hot water. This is really an Oat Bread. This old recipe is in the narrative style.

3 cups water, boiling
2 cups rolled oats
1/4 cup shortening
2 teaspoons sugar
2 envelopes active dry yeast
2/3 cup table molasses
4 teaspoons salt
2 1/2 cups all-purpose flour
5 1/2-6 cups all-purpose flour

Steps:

  • Pour 3 cups boiling water Over 2 cups rolled oats 1/4 cup shortening. Stir until shortening melts and let stand for about 20 minutes, stirring occasionally.
  • Meanwhile, dissolve 2 teaspoons sugar in 1 cup lukewarm water (100 F) Over this sprinkle 2 envelopes active dry yeast Let stand for 10 minutes.
  • Then stir briskly with a fork.
  • Stir into partially cooled rolled oat mixture 2/3 cup table molasses 4 teaspoons salt Cool to lukewarm.
  • Add softened yeast to the lukewarm rolled oat mixture. Stir Beat in 2-1/2 cups All Purpose flour Beat vigorously by hand or with electric mixer.
  • Then gradually beat in with a spoon an additional 5-1/2 to 6 cups All Purpose flour Work in last of flour with a rotating motion of the hand.
  • Turn dough onto a floured surface and knead 8 to 10 minutes.
  • Shape into a smooth ball and place in a greased bowl, rotating dough to grease surface. Cover and let rise until doubled (about 1-1/2 hours). Keep in a warm place. Punch down and shape into 4 loaves.
  • Place in greased 8-1/2 x 4-1/2 inch loaf pans, grease tops, cover and let rise again until doubled (about 1 hour). Bake in preheated 400F oven for 30 to 35 minutes.

  • If using activated yeast, dissolve the yeast in the water in the bowl of a stand mixer first. Then add the porridge, white and brown bread flour, salt, and oil. If using quick yeast, add it to the bowl with the flour etc. Mix using a dough hook on a medium to low setting for 8 minutes. Unlike other breads the dough won't turn into a smooth ball as you knead. You need to do the window pane test to see if it is ready.
  • When the dough has doubled in size, turn it out of the bowl onto a floured work surface. Fold over into thirds, then roll into a loaf shape. Transfer to the loaf tin (seam down) and cover or place in a large plastic bag. Place in the warm location used in the step above.
