Number Of Ingredients 14

1 pound (450g) ground pork
1/2 Tbsp chopped green onion
1 tsp chopped ginger (or ground)
1 Tbsp soya sauce
1/2 Tbsp wine (opt)
1 Tbsp corn starch
1 egg
1/4 C chopped water chestnuts
4 Tbsp sugar
2/3 C water
4 Tbsp vinegar
1 Tbsp soya sauce
2 tsp corn starch
1 tsp sesame oil (or any other)

Steps:

  • Mix pork with 2 Tbsp cold water. Then add green onion, ginger, soya sauce, wine, chestnuts, egg and cornstarch. Mix well. Heat oil in frying pan. Wet left hand and place 2-3 Tbsp of pork mixture in palm of hand and close fingers. An amount about the size of a walnut will spurt from the top of the fist. With a wet spoon remove the ball and drop in hot oil. Balls will rise to the top and become golden. Fry about 1 minute. Mix sauce ingredients in a pot. Bring to a boil until slightly thickened. When all the balls are cooked, add the seasoning sauce and mix in a serving bowl.

This recipe has been a closely guarded family secret for over 20 years, we make them every Christmas and they're always a hit. I've decided they're too good not to share.

5 pounds bulk Italian sausage
2 (8 ounce) cans water chestnuts, drained and chopped
2 bunches green onion, chopped
½ cup soy sauce
3 eggs, beaten
2 teaspoons garlic powder
2 ½ cups fine dry bread crumbs
1 ¼ cups white sugar
6 tablespoons cornstarch
2 cups white vinegar
1 cup pineapple juice
1 cup ketchup
soy sauce to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the sausage in a large bowl and mix in the chestnuts, green onion, 1/2 cup of soy sauce, eggs, garlic powder, and breadcrumbs. Roll the mixture into 1 to 1 1/2 inch balls and place on a broiler pan. Bake in the oven for 1 hour. When done, place the meatballs in a slow cooker.
  • While meatballs are cooking, prepare the sweet and sour sauce by stirring together the sugar and cornstarch in a large saucepan. Pour in vinegar, pineapple juice, ketchup, and soy sauce to taste. Bring to a boil over medium-high heat, then reduce heat to low, and simmer until thickened. Pour sauce over meatballs, and keep warm in the slow cooker.

Number Of Ingredients 14

2 large eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon salt
6 green onions, sliced
2 pounds lean ground pork
2 cans (8 ounces each) sliced water chestnuts, drained and chopped
1 cup dry bread crumbs
SAUCE:
1/4 cup cornstarch
1 cup pineapple juice
1/3 cup sugar
4 teaspoons minced fresh gingerroot
1 can (10-1/2 ounces) condensed beef consomme, undiluted
1/2 cup white vinegar

Steps:

  • Preheat oven to 400°. In a large bowl, combine first 4 ingredients. Add pork, water chestnuts and bread crumbs; mix lightly but thoroughly. Shape mixture into 1-in. balls. Place in a greased 15x10x1-in. pan. Bake 15 minutes., In a 5- or 6-qt. slow cooker, mix cornstarch and juice until smooth. Stir in remaining ingredients. Add meatballs; stir gently to coat. Cook, covered, on low for 3-4 hours or until meatballs are cooked through and sauce is thickened. Freeze option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently and adding a little broth if necessary.

  • Add ground pork into a large bowl. Add 4 tablespoons water. Mix well with a spatula until water is fully incorporated.
  • Carefully place 3 to 4 meatballs in the skillet and make sure to leave enough space to flip them. When the bottom side is just set, carefully roll the ball with a spatula to cook the other sides. Continue to do this until all sides are set and browned (*see footnote 2). Transfer to a plate. Continue to brown the rest of the meatballs.
  • Store the meatballs in an airtight container in the fridge for 3 days or in the freezer for up to 2 months. After steaming, the meatballs will render some fat and liquid. Drizzle it on the meatballs before storage, to keep the them tender and moist.
