CARAMELIZED PINEAPPLE
So simple, yet SO delicious. Doesn't require many ingredients or much time, perfect for a last minute way to use up that ripe pineapple that will turn any day!

Steps:
- Melt the butter in a medium to large saute pan over medium heat.
- Place the pineapple slices (no more than 1/2 inch thick) over the melted butter in the pan. Sprinkle with the brown sugar.
- Baste the pineapple by tilting the pan a bit to scoop some of the butter/sugar mixture and pouring it over the pineapple slices. Cook for about 3-4 mins per side.
- Continue to baste every so often to incorporate the flavor of the butter and brown sugar.
- When cooked, place slices on plates and drizzle some of the sauce it cooked in over top. Serve with vanilla ice cream to make EXTRA delicious! Pour some of the sauce over that as well. VERY hot, let cool a little before serving.

Lovely pineapples grow in the Azores and Port IS from Portugal, so no surprise that this is a classic Protugese dessert, tho not nearly as rich as most. From Jean Anderson's "The Food of Portugal"

Steps:
- Slice the top and bottom off the pineapple, stand it on end, and slicing straight down, remove all the prickly peel.
- Cut the pineapple lengthwise into 8 wedges, slice off the hard core at the point of each wedge, then slice the wedges about 1/4" thick, making small, fan-shaped pieces.
- Place the pineapple fans in a large, non-metallic bowl, add the Port and toss to mix.
- Cover and chill 3 to 4 hours.
- Add the minced mint and chill another 30 minutes.
- To serve, spoon into stemmed glasses and garnish with mint sprigs.
- Note: While this is lovely as it is, you can dress it up into an extraordinary recipe by serving it, parfait style, with Coconut Sorbet (recipe 170147) or with Greek style yogurt sweetened with honey.

Steps:
- Melt the butter in saucepan at low heat.
- Add the sliced pineapple and sugar.
- Add the rum and let it flambe. Stir the contents together well.
- Once the pineapple reaches a golden color of caramelization, it is done.
- Place the pineapple into a serving dish and cover with cinnamon powder to taste. Serve while hot.
