ABADE PRISCO'S PUDDING
A velvety and sinful pudding, full of pleasure! Don't let yourself be discouraged from using bacon on this pudding -- the abbot knew what he was doing! You barely notice the pork; however, you get that incomparable taste of the yolks, wrapped with notes of Porto wine. It is velvety and melts in your mouth, vanishing. It's divine! This is a typical pudding from Braga, Portugal, and it was one of the finalists at the 7 Wonders of Portuguese Gastronomy.

Steps:
- Heat 1 cup sugar and 1/2 cup water in a small saucepan over high heat without stirring. Reduce heat to low when sugar reaches an amber color, being careful to avoid burning. Carefully add 1 tablespoon water, stir, and remove from heat. Pour caramel into a lidded pudding pan, making sure to coat the entire inside of the pan.
- Bring 2 cups water to a boil in a saucepan over high heat. Add 2 cups sugar, bacon, cinnamon, and lemon peels. Clip a candy thermometer to the side of the pan. Slowly heat syrup to 217 degrees F (103 degrees C) or until a small amount of syrup dropped in cold water forms a thin thread.
- Preheat the oven to 475 degrees F (245 degrees C) while syrup is cooking.
- Pass egg yolks through a sieve into a bowl.
- Heat port wine in a small saucepan over medium heat until it reduces by half, 5 to 7 minutes. Remove from heat and allow to cool.
- Pour the cooled port wine into the yolks, stirring as little as possible to avoid losing the color of the yolks.
- Remove syrup from heat when it reaches 217 degrees F (103 degrees C). Pour into a bowl through a sieve to remove other ingredients. Allow syrup to cool slightly.
- Pour yolk mixture into the bowl with the syrup. Pass the mixture through the sieve into a bowl. Pour mixture into the caramel-lined pudding pan. Cover the pan tightly with 2 layers of aluminum foil and the lid. Set the pan into a baking pan filled with an inch of water.
- Bake pudding in the preheated oven until set, about 1 hour. Add water to the baking pan if necessary. Remove from the oven and place pan on a wire rack. Let pudding cool until center is lukewarm, at least 1 hour. Carefully unmold onto a serving plate. Refrigerate until ready to serve.

My mom would always make this delicious, creamy rice pudding when we were kids. If a thicker rice is desired, increase rice to 1 1/4 cups and add another egg. Sprinkle with cinnamon.

- In a large saucepan over high heat combine sugar and milk. When bubbles form at the edges, stir in rice and reduce heat to medium-low. Cook 60 minutes, stirring often, until rice is tender. Do not allow to boil.
- Remove from heat and vigorously stir in beaten eggs, a little at a time, until well incorporated. Serve warm.

PORTUGUESE RICE PUDDING
Steps:
- Combine currants and Port in a small bowl and set aside to plump.
- Wash and drain the rice. Place in a large saucepan with plenty of water to cover. Stir, and bring to a boil over medium heat. Boil for 5 minutes, to blanch the rice. Drain rice in a colander, rinse with warm water, drain again and set aside. While rice is cooking, place 3 cups milk in a medium heavy bottomed saucepan, add cinnamon sticks, lemon zest, and salt. Bring to a simmer over medium heat. Turn off heat and let infuse until rice is ready.
- Place rice in another medium heavy bottomed saucepan, and ladle in 1 cup warm milk. Stir well with a wooden spoon, then turn on the lowest possible heat and cook gently, stirring occasionally, until milk is absorbed. Ladle in 1/2 cup warm milk, stir, and cook until absorbed. Continue in this manner until you have used up all the milk (remove and discard the cinnamon sticks). With the last 1/2 cup of milk, stir in also the sugar, butter, ground cinnamon, and the plumped currants in Port. When the last addition of milk has been absorbed, turn off the heat and evaluate the consistency against your personal rice pudding preferences, bearing in mind it will be thicker when chilled. Add 1/4 cup to 1 cup additional milk (cold is fine) as desired. Turn pudding out into a medium serving dish or divide between six individual serving dishes and decorate top with ground cinnamon.
- Portuguese rice pudding is cooked entirely on top of the stove in a risotto like manner. It traditionally is thickened and enriched further with egg yolks, but has a voluptuous texture even without them, and is lower in fat. Stir the rice frequently but NOT constantly because it can become too gummy. The classic Portuguese seasonings are lemon and cinnamon, but not vanilla. Use ground cinnamon to decorate the top; easiest way is sifting through a doily.
- Port, or Porto, comes from Portugal and is considered one of the great dessert wines of the world. It is a fortified wine, meaning that brandy is added. Most Port is made from red grapes and is served after the meal. Ruby Port is full, fruity and young; tawny ports have been aged in casks and are mellower. One can also find white Port, which is made from white grapes, and is drunk before the meal.
MOLOTOFF (UNIQUE PORTUGUESE MERINGUE PUDDING)
This is one of the most delicious puddings I have ever ate in my whole life, and what I love most about it is that it's extremely easy! It does not require special techniques :o) The only thing tricky about it is removing it from it's pan without breaking it... But after a while, you'll end up developing your own little tricks. I hope that anyone that tries this recipe enjoys it as much as I do!

- Before beginning the meringue: Bring the 5-6 cups of water to a rolling boil.
- Using the 2 cups of caramel sauce, grease a tube pan.
- To prepare the meringue: Beat the 12 egg whites on high until they start forming peaks.
- Add the 12 tablespoons sugar and 4 tablespoons of caramel sauce to the egg whites and continue beating the mixture until they form very firm peaks.
- (You will know that it is good enough when you turn your bowl upside down and the mixture is stiff enough not to move!) In an aluminum foil roaster (or any roaster you may have at home) place the boiling water, covering the entire bottom.
- Place the meringue into the caramel-greased tube pan.
- Make sure that no air pockets form when placing the meringue in the pan. Make sure it is well packed.
- Place the tube pan inside the roaster over the boiling water and place it in your oven.
- Bake 20-30 minutes at a low setting, or until the top turns slightly brown.
- Special Notes: Previously warming the oven may cause the meringue to brown quicker than it's cooking time.
- Before removing the meringue from the pan, pass a knife along the sides so it may unstick. Because you are using caramel sauce for the meringue, most of the times it is very stuck to the pan. Unfortunately, this is one of the trickiest parts of the recipe. You may use a little butter to grease the pan before greasing with the caramel sauce, but it doesn't turn out as good as using only the caramel sauce.

PORTUGUESE BREAD PUDDING
If you have left over bread, then this is a good way to put to good use, and your tummy will thank you as my mother would say !! LOL...LOL.... Before weighing your bread first remove the crust, a day or two old works best for this receipe. Hope you enjoy it. P.S. make your own carmel sauce to coat well you pudding mould all the way around and in the center.

- Prepare you carmel sauce first and coat well the pudding mould.
- With your hands break bread into very little pieces,as little as possible.
- Beat your eggs along with your milk, coconut and the grind from the orange and the juice, beat well.
- Now add in your bread and raisons, and mix everything well.
- Pour into pudding mould and place in oven for about 50 minutes, depending on stove, at 350º.
- To test if your pudding is cooked insert a toothpick, if it comes out dry its ready.
- Remove from stove and turn over to a serving dish. If you have any left over carmel pour over the top.
