You can never have too many soup recipes. This hearty soup is definitely filling enough to serve as a main course.

1 ½ pounds Yukon Gold potatoes, peeled and diced
1 medium onion, diced
1 medium carrot, diced
1 rib celery, diced
8 ounces smoked ham, diced
3 cloves garlic, sliced
3 tablespoons butter
¼ cup flour
4 cups chicken broth
2 cups water
½ cup heavy cream
salt and pepper to taste
1 pinch cayenne pepper
1 tablespoon chopped fresh chives for garnish

Steps:

  • Melt butter in a stockpot over medium heat until golden brown. Stir in carrot, celery, onion, ham, and garlic; cook and stir for 5-6 minutes, until the vegetables soften and the onions are translucent.
  • Stir in flour; cook for about 3 minutes. Stir in chicken broth, 1 cup at a time. Add water and stir to combine. Turn the heat to high and bring to a simmer. Simmer on medium-low for 15 minutes, stirring occasionally.
  • Taste the soup for salt and add more if necessary. Stir in potatoes; cook for 15 minutes, until potatoes are tender. Skim fat if desired.
  • With a potato masher, mash the soup a few times, leaving plenty of whole chunks of potato. Season with salt and pepper to taste, add cayenne if desired, and add cream. Stir to combine and heat through. Garnish with fresh chives.

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

3 ½ cups peeled and diced potatoes
⅓ cup diced celery
⅓ cup finely chopped onion
¾ cup diced cooked ham
3 ¼ cups water
2 tablespoons chicken bouillon granules
½ teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Steps:

  • Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
  • In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  • Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

I don't know where I got this recipe, but I love recipes that have ingredients generally on hand. A good use for leftover ham.

2 large white onions, thinly sliced
3 tablespoons butter
2 tablespoons parsley, chopped
2 garlic cloves, finely chopped
2 bay leaves
1/2 cup cooked ham
7 cups water
3 teaspoons chicken bouillon granules
1 teaspoon pepper
4 large potatoes, shredded
1/4 cup parmesan cheese, grated

Steps:

  • Cover and cook onions in butter in a 4 quart Dutch oven over medium-low heat for 10 minutes, stirring frequently.
  • Stir in parsley, garlic, bay leaves, and ham.
  • Cook, uncovered over high heat 5 minutes, stirring frequently.
  • Stir in the remaining ingredients except cheese.
  • Heat to boiling; reduce heat.
  • Cover and simmer for 30 minutes, stirring occasionally.
  • Remove bay leaves and top each serving with the cheese.

2 pounds rutabagas, peeled and chopped (about 4 cups)
1-1/4 pounds red potatoes, chopped (about 4 cups)
1 large onion, chopped
6 tablespoons canola oil, divided
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups cubed fully cooked ham or country ham
1 medium sweet red pepper, chopped
2 celery ribs, chopped
1/2 cup all-purpose flour
1-1/2 teaspoons onion powder
1-1/2 teaspoons smoked paprika
8 cups chicken or ham stock
1 cup heavy whipping cream
Salt and pepper to taste

Steps:

  • Preheat oven to 425°. Place rutabagas, potatoes and onion in a large bowl. Add 2 tablespoons oil, salt and pepper; toss to coat. Transfer to two greased 15x10x1-in. baking pans. Roast 35-40 minutes or until tender, stirring occasionally., Meanwhile, in a 6-qt. stockpot, heat 2 tablespoons oil over medium heat. Add ham; cook and stir 7-9 minutes or until browned. 5 pounds Russet baking potatoes, cut into 1-inch cubes
1 thick slice of cooked ham, cut into small pieces (not country ham, which is too salty)
1/2 cup (1 stick) butter
Salt and pepper
1 cup half-and-half
1/2 cup sour cream

Steps:

  • Place the potatoes in a large pot and add enough water to just cover the potatoes (too much water will make the soup too thin). Cover and bring to a boil, then uncover and cook over medium-high heat for 20 minutes. Reduce the heat and add the ham and butter. Season with salt and pepper to taste. Over low heat, add the half-and-half and sour cream; keep warm over low heat until serving time. I promise that everyone will want the recipe (men more than women)!
