ROASTED POTATOES AND ONIONS - EASY AND DELICIOUS
If you are sick and tired of mash potatoes, fries, chips and all the other ways potatoes are prepared but don't have the time for a complicated roasted vegetables dish than this is an easy and flavorful way to get 'er done.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.
- Roast in the preheated oven for 25 minutes. Remove foil and continue to roast until potatoes and onion are browned and edges are crispy, 15 to 30 minutes.

Steps:
- Preheat oven to 350 degrees.
- Spray non stick cooking spray on bottom and sides of large casserole dish or casserole pan.
- Empty and mix all ingredients ( except potato chips ) directly into the casserole dish/pan and spread evenly.
- Cover with foil and bake 30 minutes until dish starts to bubble at sides.
- Remove foil and cover casserole with small smashed bits of potato chips.
- Resume cooking uncovered for 15 minutes more.

Steps:
- Dice pancetta bacon and cook in a non-stick skillet over medium-low heat until crisped. Remove bacon from skillet onto a paper towel and reserve oil.
- Prepare potatoes according to package directions in pancetta oil, except don't cook as long as required. The potatoes need just a little browning. Remove potatoes from skillet and drain on paper towel.
- Pour heavy cream into a heavy bottom sauce pan. Add potatoes to cream and continue to warm/cook over low heat for 20 minutes, stirring frequently. Add pancetta and about 4 ounces of the pepper cheese. Finally, add chicken base and continue to warm over low heat, stirring constantly, until cheese has melted. Remove from heat and serve.
- *Taste soup before adding chicken base flavoring. The pancetta is salty and adds a lot of flavor, so if you're watching your salt intake, you may want to leave out the chicken base.
- Recipe makes 4 servings.

- Saute the chopped Pancetta until just brown, take from pan and set aside in a bowl. Saute the chopped onion and peppers in the pan using the oil that was rendered from the Pancetta. Once the peppers and onions have wilted, put in the 4 cups of Simply Hash Browns and return the Pancetta to the pan. Stir all and flatten out in the pan, let it cook uncovered for 10 minutes on medium heat. Begin to flip the mixture over in fourths until all of the brown side is showing, drizzle 1/4 cup olive oil and brown the other side until crispy and serve while hot. Sprinkle a little shredded mozzarella on top if desired.

- Brown the pancetta in a pan till slightly crisp. Add the sliced onions, sprinkle with salt and pepper and cook slowly till soft. In a small bowl, add the olive oil and set aside.
- Using a small casserole or baking dish, brush lightly with the oil. Starting with a layer of some Simply Potatoes Shredded Hash Browns, next pancetta/onion mix, continue alternating layers and end with a layer of potatoes. Lightly brush the top with the spice mix and sprinkle coarse salt on the top, bake very slowly in a 350 degree oven for 30-45 minutes (depending on the thickness of your casserole). Test by piercing with a thin knife, if it goes through smoothly, it's done! You can increase or decrease any of these ingredients to fit any size baking dish, large or small, just adjust your cooking time and test with a thin knife. Enjoy!
