Small potatoes roasted in za'atar seasoning are crispy on the outside, tender on the inside, and bursting with flavor.

nonstick aluminum foil
1 (1.5 pound) package small creamer potatoes (such as The Little Potato Company® dynamic duo potatoes)
2 tablespoons olive oil
2 tablespoons za'atar seasoning
½ teaspoon salt
1 teaspoon chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Place potatoes in a large bowl. Add olive oil, za'atar, and salt; stir to coat. Spread potatoes in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 12 minutes. Stir potatoes and roast for an additional 12 minutes. Stir once more and cook until crispy, about 4 more minutes. Garnish with parsley.

Often called the king of herbs, za'atar is treasured for its savory-thyme-oregano flavor. The spice blend adds complexity to these crispy roasted potatoes.

2 cups fresh cilantro leaves
2 cups fresh mint leaves
1/4 cup pine nuts
3 tablespoons fresh lime juice, plus zest of 1 lime
1/2 cup extra-virgin olive oil
Kosher salt
1 1/2 pounds baby red potatoes
Kosher salt
2 tablespoons ghee
2 tablespoons extra-virgin olive oil
2 tablespoons za'atar
5 sprigs rosemary

Steps:

  • Make the herb sauce, if desired: In a food processor, combine cilantro, mint, pine nuts, and lime juice and zest. Process until finely chopped. With machine running, pour oil in a steady stream through the feed tube; process until smooth. Season with salt.
  • Make the potatoes: Preheat oven to 450 degrees. Bring potatoes to a boil in a large pot of salted water; reduce heat and simmer until just tender, about 15 minutes. Drain and transfer to a large rimmed baking sheet. Let cool 5 minutes, then lightly crush each potato with the heel of your hand. Drizzle generously with ghee and oil and season with salt and za'atar. Top with rosemary. Roast until golden brown and crisp, about 35 minutes. Serve with herb sauce, if desired.

4 potatoes, very large, peeled (or use more, smaller potatoes)
2 cups spinach, washed, chopped, and pushed firmly into the cups
1 cup oil (this sounds like too much, cut down by all means)
4 garlic cloves (or equal in mashed garlic or dried garlic flakes)
2 cups garbanzo beans
1 red pepper, seeded, diced
1 green pepper, seeded, diced
1 medium onion, peeled and chopped
1 teaspoon oregano (or use 1 tblsp fresh)
2 teaspoons dried basil (withstands heat better than fresh)
ground cayenne pepper

Steps:

  • Cut potatoes into chunks and boil about 8 minutes in a little water.
  • Add spinach and cook until potato chunks are tender, then drain well in a sieve or colander.
  • Heat the oil in a large, deep saucepan until very hot.
  • Add the potatoes, spinach, beans and remaining ingredients.
  • Fry until potatoes are creamy and ingredients are cooked through. This will be quite quick in the hot oil. (Decide yourself on the quantity of oil needed).
  • The recipe says merely to sprinkle with red pepper powder, simmer 3 minutes, and serve!
  • I'm not sure, but it might need some draining. Follow your chef's instincts. These recipes are never perfect as given!
