FISH PUTTANESCA RECIPE

2 cups crushed tomatoes
¾ cup Kalamata olives, (pitted, roughly chopped )
2 cups loosely packed basil leaves, (washed, dried, roughly chopped )
½ cup finely diced red onion
3 tablespoons capers
½ to 1 teaspoon crushed chili flakes, (depending on the amount of heat you want)
5 tablespoons extra virgin olive oil
½ teaspoon salt
1¼ pound Sole fillets (or other mild white fish like Cod, Tilapia or Bass)
freshly ground black pepper

Steps:

  • Set the oven. Preheat the oven to 375°F and adjust a rack to the center.
  • Make sauce. Add the crushed tomatoes to a 9 x 13 x 2 - inch baking dish. Add the olives, basil, onion, capers, chili flakes, extra virgin olive oil and salt. Mix to blend all of the ingredients and remove about ⅓ of the mixture and set it aside in a bowl.
  • Add fish and bake. Lightly sprinkle the fillets with black pepper and then add them to the baking dish. Spoon the sauce you set aside over the tops of the fillets. Place in the preheated 375°F oven and bake just until the fish is cooked through, about 15 minutes.
  • Serve. Serve the fish over the pasta, rice, potatoes, or alongside a crusty bread.

4 medium red potatoes, cubed
6 tablespoons butter, cubed
2 tablespoons olive oil
1 pound grouper or other lean fish, cut into 3/4-inch pieces
1/2 cup all-purpose flour
2 cups sliced fresh mushrooms
1/2 cup chopped celery
1/4 cup chopped onion
3 garlic cloves, minced
4-1/2 teaspoons lemon juice
Salt and pepper to taste

Steps:

  • In a large skillet, stir-fry potatoes in butter and oil for 8-10 minutes or until lightly browned. , Meanwhile, place flour in a large resealable plastic bag. Add fish, a few pieces at a time, and shake to coat. Add to the skillet. Cover and cook for 4 minutes, stirring occasionally., Add the mushrooms, celery, onion and garlic. Cover and cook 4-6 minutes longer or until fish flakes easily with a fork. Sprinkle with lemon juice, salt and pepper.

22 ounces cherry tomatoes
1 onion, halved and thinly sliced
4 cloves garlic, smashed and sliced
2 cans (13.5 ounces each) whole artichoke hearts, drained, halved if large
1/2 cup pitted olives, such as Kalamata
1/2 cup caper berries
1/4 cup extra-virgin olive oil
1/4 cup dry white wine
Coarse salt and freshly ground pepper
1 1/2 pounds skinless firm white-fleshed fish, such as cod or monkfish, cut into 4 pieces
1 small lemon, thinly sliced
Crusty bread, for serving

Steps:

  • Combine tomatoes, onion, garlic, artichokes, olives, caper berries, oil, and wine in a large straight-sided skillet (it will be used on the grill). Season with salt and pepper, then season fish on both sides with salt and pepper and arrange on top. Place lemon slices on top of and around fish.
  • Preheat grill to medium-high. Place skillet on grill, cover grill, and cook until fish is opaque throughout, about 20 minutes. Serve immediately with bread.

1 cup shredded Mexican blend cheese, divided

  • Preheat large sauté pan on medium 2-3 minutes. Season fish on both sides with seafood seasoning (wash hands).

  • Preheat large non-stick sauté pan on medium 2-3 minutes. Place oil in pan, then sprinkle remaining 1/2 cup bread crumbs over bottom of pan; spread potato mixture evenly in pan.
  • Top with remaining 1/2 cup cheese; cook 12-15 minutes or until center is set and cake begins to pull away from sides of pan. Invert potato cake onto serving plate; let stand 4-5 minutes to cool before slicing. Serve.

10 ounces whiting fish fillets
salt & freshly ground black pepper
1/4 teaspoon paprika
vegetable oil, for frying
1 tablespoon onion, minced (optional)
1 garlic clove, minced (optional)

Steps:

  • Slice potato with a mandolin to get uniform, extra thin slices. For each serving arrange about 8 slices of the potato on a flat surface so that there are 2 rows of 4 slices each, slightly overlapping. Season with salt and pepper to taste.
  • Lay the fish fillet down the center of the potatoes slices. Bring up both sides of the potatoes to form a packet. The potato will "stick" to the fish. Sprinkle with paprika.
  • Heat enough oil in a skillet to coat bottom of pan over medium high heat. If using garlic or onion, sauté 1 or 2 minutes and remove if desired (you can also leave them in). Cook potato-fish packet 3 minutes on each side.
  • Serve over sautéed spinach, arugula, or broccoli rabe.
