HERBED POTATO SALAD



Herbed Potato Salad image

This healthy potato salad recipe is full of fresh flavor. It's mayo-free, easy to make, and sure to be a hit at your potluck! This salad is vegan, egg free and gluten free. Recipe yields 6 side servings.

2 pounds small red potatoes, scrubbed and sliced into 1/4-inch thick rounds
1 tablespoon fine sea salt
1/4 cup olive oil
1/3 cup lightly packed fresh flat-leaf parsley, roughly chopped, plus about 2 tablespoons more for garnish
1/3 cup roughly chopped green onions, plus about 2 tablespoons thinly sliced for garnish
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
2 cloves garlic, roughly chopped
Freshly ground black pepper, to taste
3 stalks celery, chopped

Steps:

  • In a large saucepan or Dutch oven combine sliced potatoes and salt. Cover with water by 1 inch. Bring to a boil over high heat, then reduce heat to medium-low and cook until potatoes are easily pierced by a paring knife and pulled out with little resistance, about 5 to 6 minutes.
  • Reserve 1/4 cup cooking water, then drain. Transfer the potatoes to a large mixing bowl.
  • In a small food processor or blender, combine the olive oil, 1/3 cup parsley, 1/3 cup green onions, lemon juice, Dijon mustard, garlic and freshly ground black pepper. Process until the herbs and garlic have been chopped into little pieces. Then, while running the food processor, pour in the reserved cooking water and process just until blended. (If you don't have a food processor or blender, just finely chop the parsley and onions and whisk the dressing together until the oil is fully incorporated.)
  • Drizzle the potatoes with the herbed olive oil mixture and gently mix to combine. (It will look like you've poured in too much dressing, but don't worry, the potatoes will soak it up!) Let the potatoes rest for ten minutes, gently tossing every few minutes.
  • Add the celery to the bowl, along with a couple tablespoons each of additional chopped parsley and green onions. Toss again. Season generously to taste with salt and pepper.
  • Serve immediately, or cover and refrigerate until you're ready to serve. This salad is best served within a few hours, but will keep in the refrigerator for about three days.

2 pounds white potatoes
2 T cider vinegar, divided
2-3 T olive oil
2 T finely minced parsley

Steps:

  • Cook potatoes in their skins.
  • When cool enough to handle, quarter. Sprinkle 1 T vinegar over them, stir gently to distribute. Let cool completely, marinating in the vinegar.
  • Mix remaining vinegar, 2 T oil, and parsley, let sit to meld.
  • Cut potatoes into bite sized pieces. Toss with the dressing, adding up to another T of oil if you find it is needed. Chill before serving.

I am very excited to try this! You can make this dish the night before but just wait until serving time to add the bacon so it is nice and crisp. Enjoy.

1 3/4 teaspoons kosher salt
1/4 teaspoon black pepper
4 slices bacon
3 tablespoons extra virgin olive oil

1 cup flat leaf parsley, roughly chopped

Steps:

  • Place potatoes in water and 1 tsp salt and simmer until tender, about 15 to 18 minutes. Drain and run under cold water to cool. Cut into quarters.
  • Meanwhile, cook bacon in skillet untel crisp. Crumble when cooled.
  • Whisk oil, vinegar, mustard, remaining salt, and pepper in a large bowl. Toss with the potatoes, bacon and parsley.

1 1/2 pounds fingerling potatoes, cut in 1/2 lengthwise
Water
1 tablespoon salt, plus 1 teaspoon, plus more for potato water
6 tablespoons olive oil, divided
1 tablespoon coarsely ground black pepper, plus 1 teaspoon
1/4 cup pine nuts
1 1/2 cups fresh parsley leaves
2 tablespoons fresh oregano leaves
1 tablespoon lemon juice
1 tablespoon chopped garlic
1 tablespoon capers

Steps:

  • Preheat the grill to medium.
  • In a large saucepan, add the potatoes and cover with water. Salt the water and bring to a boil over medium heat. Cook until slightly tender; about 15 to 20 minutes. Remove the potatoes from the water to a bowl and let cool. Season with 3 tablespoons of olive oil, 1 tablespoon of salt and 1 tablespoon of pepper. Arrange on the preheated grill and mark for 1 to 2 minutes on each side. Remove to a serving bowl and reserve.
  • In a small saute pan, toast the pine nuts over medium heat until lightly browned. Remove from the heat and set aside. Cook's Note: No need to oil the pan; pine nuts are coated with oil already.
  • Add the parsley, oregano, lemon juice, garlic, capers, 1 teaspoon of both salt and pepper, 3 tablespoons olive oil, and the pine nuts to a food processor. Pulse until the mixture forms a smooth paste. Add to the potatoes and toss to coat well. Serve at room temperature or cold.

2 cups cooked potatoes, chopped
2 stalks finely sliced celery
1/2 cup finely chopped green onion
1/2 cup firmly packed fresh basil, approx
1/4 cup fresh parsley
salt & freshly ground black pepper
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 clove chopped garlic
1/2 cup mayonnaise
15 cherry tomatoes, approx or 3 tomatoes, chopped
extra basil leaves, for serving (optional)

Steps:

  • Combine in a large bowl, chicken, potatoes, celery and the onions, season to taste with salt and pepper.
  • Put in your food processor, basil, parsley, garlic some salt and pepper and process as smooth as possible.
  • Blend in the oil and vinegar.
  • Put this in a small bowl and mix with the mayonnaise.
  • Pour this over the salad and mix it very well.
  • Cover the dish, leave in the fridge for at least 2 hours.
  • When ready to serve, taste and adjust the seasoning if necessary, transfer to a shallow serving bowl and garnish with the tomatoes and some torn basil leaves.
