Potatoes Noisette on Potato Purée image

For a Thanksgiving feast at Wolves & People Brewery, on a hazelnut farm in Oregon's Willamette Valley, chefs Jaret Foster and Mona Johnson created this tribute to the farm. They cut potatoes into tiny balls with a melon baller, sautéed them, and then roasted them to a crunchy golden brown--until each resembled a "noisette" (French for hazelnut). Then they piled the potato balls on a bed of ultra-rich potato purée. Despite its vast amount of butter, the purée doesn't taste greasy; instead, it's like a cloud. That said, you can still make luscious potatoes with half the butter.

Number Of Ingredients 9

6 to 6 1/2 lbs. large russet potatoes, peeled, divided
2 pounds large Yukon Gold potatoes, peeled, divided
2 cups heavy cream
1 pound plus 2 tbsp. unsalted butter, softened, cut into chunks
About 1 tsp. kosher salt
About 3/4 tsp. freshly ground pepper
4 tablespoons clarified butter, or a mix of 2 tbsp. each unsalted butter and grapeseed or avocado oil
3 to 4 large fresh thyme sprigs
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 450°. Using a small melon-baller (3/4- to 1-in. diameter), scoop out as many potato balls as possible from 2/3 of russet potatoes and 2/3 of Yukon Golds. Drop potato balls into a bowl of water as you shape them, to prevent browning.
  • Cut holey potatoes into 2-in. chunks and drop into a large pot of well-salted water. Cut remaining potatoes into 1-in. chunks and add to pot, with enough water to cover. Bring potatoes to a boil, covered. Reduce heat and simmer until tender, 15 to 20 minutes.
  • Heat cream just until steaming. Drain potatoes; set pot back on stove. Pour half of hot cream into pot and add 1/2 cup butter. In batches, pass hot potatoes through a potato ricer into pot, alternating with rest of cream and 1 1/2 cups butter. Stir potatoes until smooth; then stir in 1 tsp. salt and 3/4 tsp. pepper. Add more salt or pepper if you like. Keep warm over very low heat until serving or, if making ahead, cover surface of potatoes with plastic wrap and pour a little cream on top of the wrap to keep a skin from forming. Chill.
  • Pat potato balls dry in a kitchen towel. Heat 2 large cast-iron or other heavy-bottomed pans over medium-high heat. Add 2 tbsp. clarified butter to each and swirl to coat. Add potato balls in a single layer and season lightly with salt and pepper. Brown well all over, 10 to 15 minutes.
  • Top potatoes with thyme sprigs and bake in pans or on a rimmed baking sheet in a single layer until very crisp, turning occasionally, 15 to 30 minutes. Toss with remaining 2 tbsp. butter, the parsley, and salt and pepper to taste.
  • Spoon warm potato purée onto a platter and mound potatoes noisette on top.

This is an easy-to-make recipe, but the way of forming the potatoes is what makes it different -- I like to serve potatoes this way when having guests over. I usually serve this with a steak and a salad.

6 russet potatoes
2 tablespoons butter
salt
fresh ground black pepper
1 teaspoon minced fresh flat-leaf Italian parsley, for garnish

Steps:

  • Preheat the oven to 400 degrees. To prepare the potatoes, use the small end of a melon baller to scoop out at least 24 nut-size balls of potato flesh. Heat the butter in an ovenproof pan or skillet and saute the potato balls over medium heat for 3-4 minutes, stirring often.
  • Transfer to the oven and roast for 20 to 30 minutes, stirring occasionally, until tender and golden brown all over. Season with salt and pepper, and sprinkle with the parsley just before serving.
  • ** I don't like to waste the bits of potato that are left after making the potato balls, so I shred them in the food processor and fry them into hash brown patties. I refrigerate them to eat with breakfast in the next day or so; they turn out well when I reheat them in the microwave or in a skillet briefly.

Number Of Ingredients 8

3 pounds Russet potatoes, peeled and cut into 2-inch pieces
1 1/2 sticks unsalted butter
4 sprigs fresh thyme
2 cloves garlic, peeled and crushed
1 1/2 cups heavy cream
1/2 cup milk
2 teaspoons sea salt
Freshly ground white pepper

Steps:

  • Fill a large pot with about 2 inches water. Set steamer basket in pot (water should not come through the holes). Bring to a boil, and then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with a knife, 25 to 30 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium heat. Simmer, whisking occasionally, until the butter is deep golden brown, 5 to 10 minutes. Place the thyme and garlic in a fine mesh sieve lined with cheesecloth. Strain the butter over the garlic and thyme into a medium bowl, add cream, and whisk to combine.
  • Remove potatoes from steamer basket. Drain, and immediately press through a medium mesh sieve into a large bowl using a rubber spatula. Fold the cream mixture into the potatoes. Press mixture through a fine mesh sieve. Season with salt and pepper and serve immediately.

This potato purée is a refined, incredibly luxurious version of good old-fashioned mashed potatoes-and that means Chef Emma Bengtsson doesn't stint when it comes to butter and milk! We recommend using a food mill or potato ricer to get extra silky-smooth results.

2 pounds Yukon Gold potatoes, peeled and cubed
Kosher salt
2 sticks unsalted butter, room temperature
1 cup whole milk, warmed in a saucepan
Minced parsley, for garnish

Steps:

  • Add cubed potatoes to a medium saucepan with a big pinch of salt and enough cold water to cover. Bring to a simmer over medium-low heat and cook until very soft and almost falling apart, about 20 minutes. When potatoes are cooked, drain well. Then place them back into the hot pot (with the heat turned off) to evaporate any residual moisture, 30 seconds.
  • Run potatoes through a food mill or potato ricer into a mixing bowl. Add butter and stir well to combine; then pour in the warm milk and whisk until thoroughly combined. Add salt to taste and place back into the saucepan. Over very low heat, whisk again to release extra moisture in the potatoes.
  • When potatoes are smooth and creamy, but still hold their shape when folded over, transfer to serving dish. Sprinkle with chopped parsley and serve immediately.

CELERY ROOT AND POTATO PUREE

3 large Idaho potatoes, cut into 1-inch cubes, held in water until ready to use
Kosher salt
1 large celery root, tough outer parts removed, cut into 1-inch cubes
1 to 1 1/2 cups heavy cream
1 stick cold butter, cut into pats

Steps:

  • Place the potatoes in a pot large enough to accommodate the celery root and the potatoes. Add enough water to cover the vegetables by 2 inches and season generously with salt. Bring to a boil and cook for about 10 minutes. Add the celery root and cook until both vegetables are fork tender. Strain the celery root and potatoes.
  • Pour the cream in a small saucepan and bring to a boil. Meanwhile, pass the celery root and potatoes through a food mill into a large bowl. Add one-quarter of the hot cream and 2 pats of the butter. Stir vigorously until the cream and butter are thoroughly combined. Repeat for the remaining cream and butter. Taste for seasoning, you will probably have to add salt. Serve in a warm serving bowl immediately or keep warm until ready to use.

REALLY CREAMY POTATO PURéE



Really Creamy Potato Purée image

3 pounds large Yukon gold potatoes
2 cups heavy cream, warmed
1/2 pound (2 sticks) European-style salted butter, diced, cold
Kosher salt
Chopped chives, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • On a parchment-lined sheet pan, arrange the potatoes in an even layer. Bake the potatoes until tender, about 45 minutes. Let the potatoes cool slightly until able to be handled but still hot. Peel the potatoes.
  • Add one potato at a time to a ricer and rice the potatoes into a pot. Add the warm cream to the potatoes and some pieces of butter. Whisk until smooth. Continue to add most of the remaining butter, whisking piece by piece, reserving 1 to 2 tablespoons to finish. Season the potatoes with salt.
  • Fill a small Dutch oven with hot water to warm it up. Dump the water and transfer the potatoes to the pot. Top with the remaining butter and garnish with chives.

FRENCH POTATO PUREE



French Potato Puree image

2 pounds/1 kg floury potatoes, scrubbed
Salt and freshly ground black pepper
1 clove garlic, peeled
1 bay leaf
1 sprig fresh thyme
About 1 cup/250 ml milk
1/2 cup/110 g butter, cold

Steps:

  • Put the potatoes, whole, in a pot and cover with cold water. Salt the water. Bring to a boil, and simmer until very tender, about 30 minutes, depending on size.
  • Meanwhile, drop the garlic, bay leaf, and thyme in a saucepan with the milk, bring to a boil, turn off the heat, cover, and set aside to infuse 10 minutes. Pull out the garlic and herbs, and discard.
  • When the potatoes are done, drain them and peel while hot. Put them through a food mill set on the smallest setting over a large pot. Beat in the butter a piece at a time. Bring the milk to a boil and beat it in, splash by splash, until completely absorbed. You are looking for a very soft, fine puree, not unlike baby food! Check the seasonings, and serve.

PARSNIP POTATO PUREE

2 pounds parsnips, peeled, cut into 1-inch chunks
2 pound Yukon gold potatoes, cut into 1-inch chunks
Kosher salt
1 cup heavy cream
4 tablespoons (1/2 stick) cold unsalted butter

Steps:

  • Put the parsnips and potatoes in a large saucepan and cover with about 2 inches of water. Season the water generously with salt - TASTE IT to make sure the water is seasoned appropriately.
  • Bring the water to a boil and reduce to a simmer. Cook the parsnips and potatoes until they are fork tender, about 30 minutes.
  • In a small saucepan, bring the heavy cream to a boil. Turn off the heat and reserve.
  • Drain the parsnips and potatoes and pass through a food mill.
  • Toss in a couple of pats of cold butter and about 1/2 of the hot heavy cream. Stir vigorously to combine. Repeat the process with the remaining butter and heavy cream. Taste and adjust the seasoning if needed.

NOISETTE POTATOES

16large potatoes , peeled and washed
cooking oil
knob of butter

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. Scoop the potatoes into balls, rinsing well once all are cut. The potatoes can now be dried on a clean tea towel ready for pan-frying.
  • Heat 2 tablespoons of cooking oil in large frying pan and pan fry 2-3 handfuls of potatoes on a medium to high heat until golden brown, then transfer to a roasting tray. Repeat until all are coloured. The potatoes can now be finished in the oven for 15-20 minutes until they're tender.
  • Once the potatoes are cooked, remove the tray from the oven, add the butter and season with salt and pepper. The Noisette potatoes are now ready to serve.

CELERY ROOT-POTATO PURéE

1 pound celery root, peeled and sliced .5 inch thick
3 pounds potatoes, preferably Yellow Finn or russet, peeled, in 1-inch cubes
4 to 6 garlic cloves, peeled
Salt
1 cup milk or half-and-half, more if necessary
1 stick unsalted butter (1/4 pound), cut into 8 pieces, at room temperature

Steps:

  • Put the celery root, potatoes and garlic cloves in a soup pot. Cover with cold water and salt generously, then boil over medium-high heat until tender, about 15 minutes. Drain and press through a ricer or the large holes of a food mill, then return to the pot. (If you prefer a rough-textured purée, mash with an electric beater or a hand-held potato-masher.)
  • Over medium-low heat, whisk in the milk or half-and-half until the thickness of the purée is to your liking. It shouldn't be too stiff. Whisk in the butter and incorporate. Taste for salt and adjust. Make sure the purée is heated through. May be made up to 2 hours in advance, held at room temperature, and reheated in a double boiler.

Coarse salt and freshly ground white pepper
2 pounds Yukon Gold potatoes, peeled and cut into 2-inch pieces
3/4 cup heavy cream, plus more for reheating (optional)
2 cloves garlic, crushed
1 to 2 tablespoons rosemary leaves (from about 2 sprigs)
1/2 cup (1 stick) unsalted butter

Steps:

  • Fill a large pot with about 2 inches of water and add a pinch of salt. Set steamer basket in pot, making sure water doesn't seep through holes. Bring to a boil, then reduce to a rapid simmer.
  • Add potatoes to steamer basket and steam until tender when pierced with the tip of a paring knife, 25 to 30 minutes.
  • Bring cream, garlic, and rosemary to a simmer in a small pot, then remove from heat and let steep 30 minutes. Strain through a fine sieve. Clean pot, then return cream to pot. Add butter and heat over medium until melted, stirring to combine. Cover and keep warm, either over lowest setting on the stove or in a warm pot.
  • Remove potatoes from steamer basket and while the potatoes are still hot, pass through a ricer or a food mill fitted with a fine disk into a large bowl. Stir in cream mixture and season with salt and pepper. If a finer texture is desired, pass puree through a medium-mesh sieve, pressing on solids with a rubber spatula to extract as much puree as possible. Reheat over medium heat with a little more cream or water if necessary before serving.
