POTATO SAUTE SURPRISE
This very simple recipe invented by my wife, Michelle, is called 'surprise' because I thought 'OK, sauteed potatoes', but then the taste was so much better and out of the ordinary I'm posting it because everyone deserves a chance to try it. The trick about is that everything but the potatoes seems to disappear into background but the flavours are there to surprise you. Peel the tomatoes the easy way. Drop them into boiling water for a 15-20 seconds. Run under cold water until cooled enough to handle then skins should nearly fall off. I hope you enjoy as much as I do, John

Steps:
- Put potatoes in lightly salted water, boil until cooked.
- Drop tomatoes into boiling potato water (see directions above).
- Remove tomatoes from boiling water and peel (see directions above).
- Once potatoes have cooked set aside to cool.
- Meanwhile heat oil in pan and sauté garlic, onion and tomatoes until cooked.
- Add the oregano and stir into mix.
- Slice the potatoes about ½ inch (12/13mm) thick and add to the tomato mixture.
- Put combined mix into oven-proof dish.
- Dot top with butter and bake in hot oven (230 degrees) for about 20 minutes or until potatoes are golden.
PERFECT POTATO SOUP

- Add the bacon pieces to a soup pot over medium heat and cook until crisp and the fat is rendered. Remove the bacon from the pot and set it aside. Pour off most of the grease, but do not clean the pot.
- Return the pot to medium-high heat and add the carrots, celery and onions. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with the Cajun spice, 1/2 teaspoon salt and some pepper. Pour in the broth and bring it to a gentle boil. Cook until the potatoes are starting to get tender, about 10 minutes. Whisk together the milk and flour, then pour the mixture into the soup and allow the soup to cook for another 5 minutes.
- Remove about half of the soup and blend in a blender or food processor until completely smooth. Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasoning, adding more of what it needs. Stir in the cream, then the parsley,
- Serve in bowls garnished with the grated cheese and crisp bacon pieces. The soup can also be frozen.

- Shred the potatoes and rinse in cold water. Drain thoroughly. Place in a greased 9-in. square baking pan; pour cream over all and sprinkle with salt and pepper. , Cover with foil and bake at 325° for 1-1/2 hours. Uncover and bake 30 minutes longer or until lightly browned on top.

TWO-POTATO SAUTé WITH BACON AND CREAM
This smoky, creamy combination of white and sweet potatoes may be the ultimate Thanksgiving side dish.

Steps:
- Bring large pot of salted water to boil. Add white potatoes; cover partially and cook until almost tender, about 10 minutes. Using strainer, transfer potatoes to large bowl. Return water in pot to boil. Add sweet potatoes; cover partially and cook until potatoes are almost tender but still retain their shape, about 6 minutes. Drain. Transfer to bowl with white potatoes. (Can be made 1 day ahead. Cool; cover and chill.)
- Cook bacon in very large skillet over medium heat until almost crisp, about 10 minutes. Using slotted spoon, transfer bacon to paper towels and drain. Pour off all but 1/4 cup drippings from skillet. Add onion and bell pepper; cover and cook until tender, about 15 minutes. Mix in potatoes and bacon. Cover and cook 10 minutes. Add cream and cook uncovered until potatoes are tender and coated with sauce, about 3 minutes. Season with salt and pepper. Transfer potatoes to large bowl. Sprinkle with parsley.
SAUTEED POTATOES
Diced potatoes tossed with salt, pepper, and chives make a homey, quick side dish suitable for breakfast or dinner.

- Peel potatoes, and place them in cold water to inhibit discoloration. Remove, and cut into 3/4-inch cubes.
- Heat half the oil in a large saute pan over medium heat. Pat potatoes dry; add half to pan. Season with salt and pepper. Cook, tossing frequently, until potatoes are golden, 12 to 15 minutes. Add half the butter; as it melts, toss to coat potatoes.
- Transfer to a serving plate; keep in a warm place while you repeat with remaining oil, potatoes, and butter. Toss potatoes with chives. Serve immediately.
SAUTEED POTATOES WITH ONION

- Place potatoes in a saucepan, add cold water to cover and salt to taste. Bring to a boil and cook until the potatoes are tender, about 20 minutes. Drain thoroughly and let cool.
- Cut the potatoes, with skins on, into 1/4-inch slices.
- Heat the oil in a large nonstick skillet and when quite hot add the potatoes, salt and pepper to taste. Cook until they start to brown on one side, about 3 minutes. Add the onions; shake the skillet to toss and redistribute the potatoes. Brown evenly, about 4 minutes more.
- Add butter and parsley, toss well and stir gently. Serve immediately.

PEANUT BUTTER SURPRISES
These chewy cookies are best eaten when they are fresh from the oven, while the chocolate center is still warm.

- Combine flour, baking soda, and salt in a medium bowl, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter andsugar on medium speed until light and fluffy. Add egg and vanilla; beat until well combined. Add peanut butter, and beat until combined.
- Add the flour mixture all at once, and beat on low speed until just combined. Add the peanuts; beat until combined. Wrap dough in plastic wrap, and chill in refrigerator at least 2 hours.
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Pinch off about 2 tablespoons of dough, and make a well in your hand with the dough. Place one chunk of chocolate in the center, and enclose with the dough to cover completely. Roll dough into about a 1 3/4-inchball with your hands.
- Place the ball of dough on the baking sheet; repeat with the remaining dough and chocolate, placing cookies about 2 inches apart. Press 2 peanut halves into the top of each cookie.
- Bake until cookies are golden, 16 to 18 minutes, rotating the pans halfway through. Remove from the oven; transfer cookies to a wire rack to cool slightly.

From Paula Deen's "Celebrates!" cookbook I got for Christmas. I love her recipes because they are so "home cooking" as compared to a lot of the other Food Network chefs. All of her recipes are stuff I can actually get ingredients for around here and are totally what my grandmother or mom would've fixed.
