SPICY "BARBECUED" TOFU BURGERS

1 (14 ounce) package extra firm tofu, drained and pressed
1/2 cup spicy barbecue sauce
1 tablespoon pure chile powder
4 rolls or 4 buns
1 large pickle, sliced
2 cups coleslaw mix or 2 cups shredded cabbage
3 tablespoons mayonnaise
1/4 teaspoon cajun seasoning
1/8 teaspoon fresh coarse ground black pepper
1 teaspoon sugar
1/8 teaspoon lemon-pepper seasoning
1 teaspoon white vinegar
cayenne (to taste)

Steps:

  • Cut tofu cake horizontally into 3/4 inch thick rectangles (about the size of your buns).
  • Cover the bottom of a small pan with half of barbecue sauce. One by one, rub both sides of each tofu rectangle with chile powder; place in a single layer on sauce. Top with remaining sauce. Let stand for 30 minutes.
  • Meanwhile, make slaw: Mix all ingredients (except for cabbage/slaw) together in a small bowl. Let sit for 5 minutes. Mix sauce into cabbage and chill until ready to use.
  • Preheat broiler with rack 6 inches from heat. Line a baking sheet with aluminum foil; place a baking rack on top. Spray rack with cooking spray. Take tofu slabs out of the barbecue sauce and place on rack with space between pieces. Reserve leftover barbecue sauce. Broil until top of tofu is browned and bubbly, about 5 minutes. Turn tofu over. Broil until browned and bubbly, about 5 more minutes.
  • Toast the buns, place tofu, more sauce (if desired), pickles and a scoop of slaw on top of each sandwich.

2 medium red onions, finely diced
3 tablespoons garlic, minced
2 tablespoons spicy curry powder
2 tablespoons Worcestershire sauce
1 tablespoon cayenne pepper
1 teaspoon italian seasoning
1/2 teaspoon mustard powder
salt
freshly ground black pepper

Steps:

  • Mix all the ingredients together, using breadcrumbs if required, until the meat holds together well.
  • Divide into four lumps then gently pack each burger into patties.
  • Barbeque for 10-15 minutes or back in a 450F oven for 25 minutes until crispy.
  • Serve in a bun with salad.

1 clove garlic, finely grated
1 1/2 teaspoons red or yellow curry powder
1 tablespoon extra-virgin olive oil

Steps:

  • Mix the cucumber, yogurt, cilantro, 1/2 teaspoon salt, and pepper to taste in a bowl. Set aside while you make the burgers.
  • Combine the beef, onion, garlic, curry powder, 1/2 teaspoon salt and 1/8 teaspoon pepper in a bowl and mix with your hands until just combined. Form into four 4-inch-wide patties, about 1/2 inch thick.
  • Heat the olive oil in a large cast-iron skillet over medium-high heat. Add the burger patties and cook, turning once, until cooked through, 7 to 8 minutes for medium.
  • Place the burgers on the buns. Stir the cucumber-yogurt mixture and spoon on top. Serve the burgers with sweet potato chips and pickled okra.

I really think I nailed this finally after years of mediocre veggie burgers, My youngest son (although I wouldn't say he had refined taste buds) declared these as good as meat burgers and that's what he usually eats. Fairly firm, good texture, great taste. Freezing the tofu is the key. Please do let me know what you think if you try them

1/2 cup onion, finely chopped
1/2 cup oats, finely ground or 1/2 cup oat bran

1/4 cup wheat germ
1/4 cup nutritional yeast
1 1/2 cups cooked beans (whatever kind you have, I used kidney beans)

2 pounds sirloin steak tips*, trimmed of excess fat and cut into 1/2-inch chunks
4 tablespoons unsalted butter, melted and cooled slightly
Salt and pepper
1 teaspoon vegetable oil
4 hamburger buns, toasted and buttered (I prefer brioche burger buns)
NOTE: *sirloin steak tips is also known as "flap meat". It doesn't sound pretty, but don't let that discourage you. It's delicious. I buy mine at Costco.

Steps:

  • Place steak on baking sheet in single layer. Freeze steak until very firm and starting to harden around edges but still pliable, about 35 minutes. Place one-quarter of steak in food processor and pulse until finely ground into 1/16-inch pieces, about 35 pulses, stopping to redistribute around bowl as necessary to ensure meat is evenly ground. Transfer meat to second baking sheet. Repeat with remaining 3 batches of steak. Spread meat over sheet and inspect carefully, discarding any long strands of gristle or large chunks of hard meat or fat. Adjust oven rack to middle position and heat oven to 300°F. Drizzle butter over ground meat and add 1 teaspoon pepper. Gently toss with fork to combine. Divide meat into 4 lightly packed balls. Gently flatten into patties 3/4 inch thick and about 4 1/2 inches in diameter. (Patties can be refrigerated, covered, for up to 1 day.) Season 1 side of patties liberally with salt and pepper. Using spatula, flip patties and season other side. Heat oil in 12-inch skillet over high heat until just smoking. Using spatula, transfer burgers to skillet and cook without moving them for 2 minutes. Using spatula, flip burgers and cook for 2 minutes longer. Transfer patties to rimmed baking sheet. NOTE: I actually cooked this over a gas grill, because it was too hot to cook in our kitchen. I had to handle the patties with care, as they are tender and could disintegrate if flipped too hard.

This recipe comes from The New McDougall Cookbook. I have added BBQ to the recipe and left out the parsley for personal taste. I am not fully versed yet in the Mcdougall diet so I am unsure if the addition of the BBQ sauce is allowed. It does add a lot of flavour though. The original recipe also called for the burgers to be browned in a 350 oven for 30 minutes flipping at the 20 minute mark. I use a fry pan and lightly spray with pam. Again I am unsure if Pam is allowed on the Mcdougall plan. My 18 year old son loves these burgers and will often take them to school for his lunch. They reheat very well. For a tofu burger they are actually quite good.

½ cup uncooked rolled oats
⅔ cup evaporated milk
2 tablespoons minced onion

Here's a way to infuse the evocative spice and smoke flavors of true barbecue into a conventional fast-cooking burger. It uses a smoke-scented barbecue rub. I call it The Barbecue Burger; you might call it smoky nirvana.

2 pounds ground beef (preferably a mixture of ground chuck and sirloin, about 18 percent fat)
2 to 3 tablespoons Kansas City Sweet and Smoky Rub, or your favorite barbecue rub
4 romaine lettuce leaves (take from near the center)
3 tablespoons extra virgin olive oil
4 onion rolls or 4 hamburger buns, sliced almost in half through the side
4 thick strips artisanal bacon
4 thick slices red ripe tomato
6 to 8 tablespoons Smoke Wrangler's Barbecue Sauce, or your favorite barbecue sauce
You also need:
1 1/2 cups hardwood chips, soaked in water for 30 minutes, then drained

Steps:

  • Form the ground beef into 4 patties, each about 3 1/2 inches across and 3/4-inch thick. Make a slight depression in the center. (Burgers rise more in the center than on the periphery, so the slight indentation helps give you an even thickness.) Generously season the burgers on both sides with the Kansas City Sweet and Smoky Rub and let marinate in the refrigerator while you light your grill.
  • Set up the grill for direct grilling and preheat to high. Brush and oil the grill grate.
  • Lightly brush the romaine lettuce leaves on both sides with olive oil (you'll need about 1 tablespoon.) Brush the insides of the onion rolls with the remaining oil.
  • Arrange the bacon strips on the grill grate and grill until browned on both sides, 3 to 4 minutes per side. (Move them as needed to dodge any flare-ups.)
  • Grill the hamburgers until cooked to taste, about 4 minutes per side for medium (160°F on an instant-read thermometer.)
  • Grill the lettuce leaves over the hot fire until lightly browned, 30 seconds per side. Toast the onion rolls, cut side down, over the hot fire, 1 to 2 minutes.
  • To assemble, place a grilled romaine leaf on the bottom half of each onion roll. Top with a burger, then barbecue sauce, then a tomato slice, bacon, and more barbecue sauce. Top with the other onion roll half.
