SPICY GARLIC LIME CHICKEN

Steps:
- In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
- Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes more, stirring frequently to coat evenly with sauce.

SPICY GARLIC GRILLED CHICKEN

- Add all ingredients except the chicken to a medium bowl and whisk to combine. *
- Transfer the marinade mixture to a large ziptop plastic bag, add the chicken, seal, and squish contents around to evenly coat the chicken.
- Place bag in the fridge to marinate for at least 30 minutes, or up to 24 hours.
- Preheat an outdoor grill to medium-high heat (or indoor grill pan) and grill the chicken for about 7 minutes, or until done; flip intermittently to ensure even cooking.
- Optionally garnish with fresh herbs and serve with reserved marinade, if desired.

HOT & SPICY GARLIC CHICKEN

Steps:
- Marinade the chicken with all the marinade ingredients, and set aside for 30 minute.
- Heat 4 Tbsp oil in a wok and stir fry the chicken for 10 min over a medium heat.
- Drain and set aside.
- In the same oil add garlic and red chilli powder.
- Fry for 3 minutes and add tomato puree, bell pepper, onion and spring onion.
- Stir fry for 3 minutes on high heat.
- Add fried chicken.
- Stir-fry and add salt, sugar and chicken stock.
- Mix the cornflour in 1/4 cup water and add to chicken slowly, stirring continuously to thicken the sauce.
- Finish with the vinegar.
- Serve with fried rice or noodles.

Steps:
- Pat chicken dry and sprinkle with pepper and 3/4 teaspoon salt. Dredge chicken in flour, shaking off excess.
- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Brown chicken in 2 batches, turning over once, about 5 minutes total per batch. Transfer to a plate.
- Add garlic to skillet and cook, stirring, until just golden, about 2 minutes. Add wine and boil 1 minute. Add broth, then cover skillet and simmer until garlic is tender, about 15 minutes. Return chicken, skin side up, to skillet and simmer, covered, until just cooked through, 20 to 25 minutes. Transfer chicken to a platter. Mash 8 garlic cloves into sauce and season with remaining 1/4 teaspoon salt. Sprinkle with parsley. Spoon sauce and garlic over chicken.
