In the hands of a great mixologist, simple syrup can add a lot more than just sweetness to the mix, and it is the secret to this delicious sidecar. Joaquín Simó of Pouring Ribbons, an East Village bar, uses a concentrated concoction made from two parts Demerara sugar to one part water, which add a compelling toffee-like taste and silky texture to the amber booze. Brown-sugar simple syrups are also wonderful in nonalcoholic drinks, particularly lemonade and ice tea, and they will last for months in the fridge.

Number Of Ingredients 8

125 grams (1/2 cup) Demerara sugar
Orange slice, for garnish
Granulated sugar, for rim
2 ounces Cognac, preferably Pierre Ferrand 1840
3/4 ounce dry Curaçao, preferably Pierre Ferrand
3/4 ounce fresh lemon juice
1 dash orange bitters
Orange twist

Steps:

  • In a small pot over low heat, simmer the Demerara sugar with 1/4 cup cold water. Stir until sugar has melted, about 5 minutes, and let cool. (You will have extra syrup.)
  • Rub orange slice around half the outer rim of a coupe glass. Place sugar in a small dish. Holding glass parallel to dish, coat with sugar only the half you've rubbed with the orange. Set aside.
  • Combine 1/2 teaspoon simple syrup, the cognac, Curacao, lemon juice and bitters in a mixing glass. Add ice, then cover, shake and strain into the sugared glass. Garnish with an orange twist and serve.

3 ounces cognac
1 1/2 ounces fresh lemon juice

Steps:

  • Rim the glasses with the lemon halves. Place some sugar on a shallow plate and dip the tops of the glasses in it. Fill a shaker halfway with ice. Add the cognac, lemon juice and orange liqueur. Shake for 10 seconds. Strain into the sugar-rimmed glasses and enjoy!

Juice of 1 lemon, for sugaring the glasses
1/2 cup sugar
1/2 cup dried cherries
12 ounces bourbon, divided
6 ounces freshly squeezed lemon juice (2 lemons)
6 ounces Grand Marnier liqueur
Ice

Steps:

  • To sugar the glass rims, pour the juice of 1 lemon into a shallow bowl and put the sugar on a small plate. Dip the rim of 4 highball glasses first in the lemon juice and then in the sugar. Set them aside to dry.
  • In a small bowl, combine the dried cherries with 4 ounces of the bourbon and microwave on high for 60 seconds. Set aside.
  • Combine the 6 ounces of lemon juice with the remaining 8 ounces of bourbon, the Grand Marnier, and 1 tablespoon of the marinated cherry liquid.
  • Fill a cocktail shaker three-quarters full with ice and pour in the cocktail mixture. Shake the mixer for a full 30 seconds (it's longer than you think!) and strain into the prepared glasses either straight up or over ice. Thread 3 or 4 marinated cherries on each of 4 small skewers and serve each drink ice cold with a skewer of cherries.

The Sidecar is another famous cocktail that came out of Paris in the Twenties, thanks to Prohibition driving the best bartenders out of the country. It is said to have been invented at the Ritz Hotel by American ex-pat Frank Meyer, the head bartender. It was a favorite of Hemingway, F. Scott Fitzgerald, and Henry Miller. The Sidecar is also an ideal after-dinner option or even a nightcap because of its "candied" nature. Cognac is rarely mixed with juices, as the subtle qualities in fine brandy are easily lost in cocktails. The Sidecar is one exception-it blends cognac and Cointreau beautifully and balances them out with fresh lemon juice. The key to this cocktail is its sugar rim on the glass. This dissolves on the tongue and mixes with the rest of the drink to create the perfect balance, leaving room for the brandy. For a simple variation on the Sidecar, add a splash of Benedictine and lose the sugar rim to create the Honeymoon.

Superfine sugar, for rim
1 1/4 ounces Courvoisier VS cognac
1 1/4 ounces Cointreau
1 ounce freshly squeezed lemon juice
1 orange twist, for garnish

Steps:

  • Moisten the rim of a cocktail glass with the lemon wedge. Carefully dip the rim in the sugar so that only the very top edge is coated evenly. Place the glass in the freezer to let the sugar rim harden. Pour the cognac, Cointreau, and juice into a mixing glass. Add large cold ice cubes and shake vigorously. Strain into the prepared cocktail glass. Garnish with the orange twist.
