POWERFULLY DELISH POTATO SOUP
Creamy, cheesy, potato soup with lots of bacon and potatoes. So simple and always receives rave reviews every time I've made it. My super picky family loves this soup

Steps:
- Peel and dice potatoes.
- dice the celery, carrot and onion (if you have a small food chopper it makes this much easier).
- cut bacon in small bite sized pieces and pan fry until done but not crisp. Save 1 tablespoon of drippings.
- using a large dutch oven melt the butter and add the tablespoon of bacon drippings.
- saute' the onion, celery and carrots, garlic, pepper in the margarine until softened.
- add the diced potatoes with the water and chicken broth along with both packages of au gratin potatoes both the potatoes and the sauce packages. make sure all the potatoes and vegetables are covered with fluid (water and chicken broth). Add most of the browned bacon keeping some out to garnish the top of each individual bowl.
- If you need to add more liquid add equal parts chicken broth and water.
- boil on medium high heat for 40 minutes or until all potatoes are softened.
- Watch your liquid. It evaporates quickly. Add equal parts water and chicken broth. If you have to add liquid add 1/2 cup broth 1/2 cup water to start and keep adding liquid in this fashion. A lot depends on your altitude. Just keep a close eye on it.
- take a potato masher or fork and coarsely mash the potatoes and vegetables leaving lots of chunks.
- add the pint of cream and heat throughly being careful not to scorch the soup.
- heat on low until desired consistency. It thickens up quickly. Dish into bowls and top with green onions (scallions) and bacon.
LOADED POTATO SOUP
Steps:
- Set a large Dutch oven over medium-high heat. Add the bacon and cook until crispy, 6 to 8 minutes; remove to a plate. When cool, crumble and set aside for garnish.
- Add the onions and garlic to the pot, and cook in the rendered bacon grease until softened, 4 to 5 minutes. Add the flour and some salt and pepper, and stir until combined. Cook for 3 minutes, so the raw flour taste cooks out. Add the chicken broth and heavy cream, whisking to remove any flour lumps. Add the potatoes and cook over medium heat until tender, about 10 minutes.
- With a potato masher, break up the cooked potatoes¿this will yield a thick and chunky consistency. Whisk in sour cream and then the shredded cheddar; let it melt through.
- Serve garnished with crispy crumbled bacon and sliced scallions.

- Preheat your oven to 425˚F (220˚C).
- On a parchment paper-lined baking sheet, rub potatoes with salt, pepper, and olive oil.
- Bake in preheated oven for 40-50 minutes.
- Once cooled, peel and mash potatoes, and set aside.
- Heat oil in large pot over a medium-high heat.
- Add onion and garlic. Cook until translucent and garlic is fragant, about 5 minutes.
- Add butter and melt.
- Bring in flour and stir until mixture is lightly browned.
- Add in the chicken broth and cream cheese. Stir until fully incorporated
- Add in the mashed potatoes and combine.
- Season with salt and pepper.

- Heat 1 1/2 cups water to boiling in 3-quart saucepan. Add potatoes and celery. Cover and heat to boiling; reduce heat. Simmer about 20 minutes or until potatoes are tender.

- In a large saucepan, cook bacon until crisp. Remove bacon, and set aside. Drain all but 3 tablespoons bacon fat from the pan.
- Brown onions in bacon fat over medium heat.
- Add potatoes, and enough water to cover. Cover and cook until potatoes are tender, 15 to 20 minutes.

UNBELIEVABLY EASY POTATO SOUP
Don't let the sparse ingredient list fool you. This is a recipe that's so easy to make yet so delicious that everyone inhales it. My mother was raised on this soup and she served it often to us. My grown daughters now demand it when they are home. To this day, entering the house on a cold day and smelling this soup is the most comforting, delicious aroma imaginable. - Peel and cube potatoes.
- Put in a saucepan along with the onions and celery.
- Add water, but don't quite cover the vegetables.

DELICIOUS THICK CREAMY POTATO SOUP
One of the best potato soups, I think the sour cream makes the difference, I like to add in the cayenne pepper for just a bit of heat, and I most always double the complete recipe and use 4 russet potatoes and 4 red potatoes. - Place the potatoes in a pot with chicken broth, onions, garlic and celery; bring to a boil and simmer until veggies are tender (about 20 minutes).
- Remove from the stove and cool slightly (or you can refrigerate to puree later) using an electric mixer or a food processor blend until a smooth (leaving a few chunks of potatoes is fine!).
- Add in 1 cup milk or half and half, Parmesan cheese and bouillon cubes or packets, then place back on the stove to heat slowly.
