SHRIMP BRUSCHETTA RECIPE
Not your average bruschetta recipe! For a special twist, I added shrimp, avocado, and good quality basil pesto.

Steps:
- Place the diced tomatoes in a colander for 10 mins to drain its juices. Meanwhile, prepare the remaining ingredients.
- Slice the shrimp horizontally through the middle (see the picture).
- In a large bowl, combine the tomatoes, shrimp, green onions, avocado, garlic and mozzarella. Season with salt and pepper. Add the lemon juice, 2 tbsp olive oil, basil pesto and Parmesan. Toss gently to combine.
- Transfer the shrimp bruschetta into a serving bowl. Cover and refrigerate for 1 hr. When ready to serve, toss the bruschetta gently to freshen. Toast the bread slices and serve next to it. Enjoy!

- In a large shallow dish, combine the first 7 ingredients; add shrimp. Turn to coat; cover and refrigerate for 2-4 hours. , Drain and discard marinade. Thread shrimp onto 6 metal or soaked wooden skewers. Grill, uncovered, on a lightly oiled rack over medium heat or broil 4 in. from the heat until shrimp turn pink, 2-3 minutes on each side.

PRAWN BRUSCHETTA SKEWERS

- If using wooden skewers, soak them in water for 1 hr before using. If the skewers are really long, use kitchen scissors to halve. On each skewer, thread the tail of the prawn, then a cube of bread, then the top of the prawn so the prawn loops the bread. If the prawns aren't big enough, just alternate prawns and bread, so each skewer has 2 of each. Drizzle with olive oil and scatter with garlic. The skewers can now be kept in the fridge for several hrs.
- Cook over the hot coals until the bread is toasted. While still on the barbecue, squeeze over the lemon. Then remove, season, drizzle with a bit more oil and scatter with parsley. Arrange on a plate or in a small jar sticking up, with a glass of something light, cold and very fizzy.

Steps:
- HEAT grill to medium heat.
- COOK pasta as directed on package.
- MEANWHILE, mix 1/4 cup dressing and 1/3 of garlic. Thread shrimp onto 6 skewers; thread 24 tomatoes onto 6 additional skewers alternately with bread. Grill all skewers 3 min., turning and brushing occasionally with half the dressing mixture. Remove tomato skewers from grill. Place onions in single layer on grill grate. Grill onions and shrimp 2 to 3 min. or until shrimp turn pink and onions are crisp-tender, turning and brushing occasionally with remaining dressing mixture.
- DRAIN pasta; place in large bowl. Quarter remaining tomatoes. Add to pasta with remaining dressing, garlic and basil; mix lightly. Slice onions; stir into pasta mixture. Sprinkle with Parmesan. Serve with shrimp skewers.
PRAWN AND ASPARAGUS SKEWERS RECIPE BY TASTY

Steps:
- Add the lemon juice, garlic, herbs, salt, and pepper into the melted butter and mix well.
- On soaked bamboo sticks, skewer on the prawns and asparagus. Repeat until the skewer is full. Brush the butter mix onto to skewer.
- On a coal BBQ, cook the steak skewers for 1-2 minutes a side, until the prawns turn pink and are cooked through.
- Enjoy!
