BEST EVER CRAB CAKES
These are the fastest, easiest crab cakes I have ever made and some of the best I have ever eaten! Serve with coarse mustard on the plate or your favorite mustard sauce.

Steps:
- In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved.
- Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side.

Steps:
- Soften butter and cheese spread at room temperature.
- Mix together well in mixer with seasonings.
- Fold in crab meat and spread on English muffin halves.
- Cut with a sharp knife into four sections and freeze (they cut easier if they're slightly frozen first).
- Flash freeze individually on a cookie sheet until frozen.
- Package in freezer bags and store in the freezer.
- Preheat oven to 400ºF degrees.
- Heat in oven 10 to 15 minutes until hot and bubbly.

CRAB OR SHRIMP ON CRACKERS
My mom has made these ever since I was little. We usually make these with crab meat, but you can use canned shrimp if you'd like. These are very easy and quick to make. I will sometimes make the mixture ahead of time and then just top on crackers and bake.

- Heat oven to 325oF (160oC).
- Mix cereals, snacks and pretzels in a large bowl; set aside.
- Heat corn syrup, honey and margarine to boiling in 1-quart (946 ml) saucepan over medium heat, stirring occasionally.
- Remove from heat; stir in vanilla.
- Pour over cereal mixture in bowl, stirring until evenly coated.
- Spread in ungreased 15 1/2-inch baking pan with sides.
- Bake 20 minutes, stirring after 10 minutes.
- Spread on waxed paper or aluminum foil; cool completely.
- Break into bite-size pieces.
- Store in airtight container.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet, and set aside.
- Combine the cream cheese, sour cream, onion, garlic powder, and sugar in a bowl, and beat until soft and well mixed. Lightly stir in the flaked imitation crab meat.
- Fill a bowl with lukewarm water. Remove a wonton wrapper from the stack, and cover the stack with a damp paper towel to keep the wrappers from drying out. With your finger, wet two adjoining edges of the wrapper with water, and place about 2 teaspoons of filling in the center. Fold the wrapper into a triangle shape, pressing out all the air and sealing the edges well. Place the filled wonton on the prepared baking sheet while you finish filling and folding the wontons.
- Bake in the preheated oven for about 15 minutes, until the wonton edges turn brown and crisp. Serve immediately.
