Goan prawn pulao (pilaf) image

A super delicious, lightly spiced, quick and easy rice recipe with prawns, from Goa made with coconut milk. Rice, prawns and coconut - lunch couldn't be better!

Provided by Kitchen Mai

Categories     Main Course

Time 35m

Number Of Ingredients 26

250 g king prawns (peeled, deveined & washed)
250 g Basmati rice (soaked in water for 30 minutes)
400 ml coconut milk (canned)
100 ml water
½ cup tomato (diced)
½ cup carrots (finely chopped)
½ cup French beans (finely chopped)
½ cup onion (finely chopped)
2-3 chilis (slit)
½ cup coriander leaves (chopped)
1 tbsp ginger paste
1 tbsp garlic paste
2-3 cloves
2-3 cardamom
1 inch cinnamon stick
1 tsp black peppercorns
1 small star anise
2 bay leaves
1 tsp turmeric powder
1 tbsp chilli powder
1 tsp garam masala
1 tbsp lemon/lime juice
3 tbsp ghee
salt to taste
2 tbsp coriander leaves (finely chopped)
2 tbsp fresh coconut (grated)

Steps:

  • Marinate the prawns in ½ teaspoon salt, lime juice and turmeric powder for 15 minutes
  • Heat the cooking pot with the ghee. When it melts, add the whole spices, once they turn fragrant, add in the onions, sautee´until they become soft and light brown. Next add the ginger garlic pastes and chilis, cook for couple minutes and then add the tomato
  • Once the tomatoes soften, add the vegetables and spice powders. Cover and cook for 4-5 minutes and then throw in the prawns, mix well and cook for 2 minutes*
  • Next, add the soaked rice and coriander leaves. Mix well but gently, so as to not break the rice grains
  • Now add the coconut milk, water and salt to taste, give it another mix. Be mindful that the prawns also have salt due to the marination. Cook this on high flame until the water and coconut milk from the surface dries up
  • Then cover with the cooking pot with a lid an cook on the lowest flame for another 8 minutes. Once done, remove the pot from the heat and let it sit for 10 minutes before serving
  • Garnish your delicious Goan prawns pulao with fresh coconut and coriander leaves and serve. Enjoy!

CHILE-CRISP SHRIMP AND GREEN BEANS

Chile-Crisp Shrimp and Green Beans image

This stir-fry is inspired by the taste and textures of chile crisp, that fiery condiment made by infusing oil with dried chiles, garlic and shallots. For this 20-minute recipe, make a quick version of the oil while the shrimp marinates in a combination of soy sauce, sugar, red-pepper flakes and cumin. Use the infused oil to cook the green beans (or asparagus), shrimp and peanuts, then serve topped with the fried shallots and garlic. It's a deeply savory, spicy and satisfying dinner.

Provided by Ali Slagle

Categories     dinner, easy, quick, weeknight, seafood, vegetables, main course

Time 20m

Yield 4 servings

Number Of Ingredients 12

1 tablespoon low-sodium soy sauce
1 teaspoon granulated sugar
1 teaspoon red-pepper flakes
3/4 teaspoon ground cumin
1 pound large shrimp, peeled and deveined
Kosher salt and black pepper
6 tablespoons canola oil
1 large shallot, halved lengthwise and thinly sliced through the root
4 garlic cloves, thinly sliced crosswise
1 cinnamon stick
10 ounces green beans or asparagus, trimmed and cut into 1-inch pieces
1/4 cup roasted, salted peanuts, coarsely chopped (optional)

Steps:

  • In a medium bowl, stir together the soy sauce, sugar, red-pepper flakes and cumin. Add the shrimp, season with salt and pepper, and toss to coat. Set aside while you fry the shallots and garlic.
  • Place a fine-mesh sieve over a heat-proof bowl next to the stove. In a large (12-inch) nonstick skillet, heat the canola oil, shallot, garlic and cinnamon stick over medium-high. When the mixture starts to bubble, reduce the heat to medium and cook, stirring occasionally to break up the shallots, until golden brown, 5 to 9 minutes. (Lower the heat if the shallots are browning too quickly.) Drain through the sieve, catching the oil in the bowl below. Discard the cinnamon, season the fried shallots and garlic with salt, and set aside.
  • Return the oil to the skillet and heat over medium-high. Add the green beans, season with salt and cook until crisp-tender, 2 to 3 minutes. Push the green beans to one side, then add the shrimp and the marinade, along with the peanuts (if using), and cook until the shrimp is cooked through, 2 to 3 minutes per side. Stir the green beans and shrimp to combine, then sprinkle with the fried shallots and garlic. Serve immediately, over rice or noodles, or in lettuce cups, if desired.

MUMMY PING'S SAMBAL PRAWNS & GREEN BEANS

Mummy Ping's Sambal prawns & green beans image

This curry is traditionally very hot - halve or even quarter the amount of dried chillies and serve with plenty of rice for a less fiery dish

Provided by Ping Coombes

Categories     Main course

Time 45m

Number Of Ingredients 12

500g green beans , trimmed and halved on the diagonal
1kg raw, shelled king prawns (defrost if frozen)
200ml vegetable oil
100g tamarind paste , or juice 3 limes, see tip below left
2 tbsp chicken stock powder
3 tbsp golden caster sugar
20 small dried red chillies
16 lemongrass stalks, tender parts only
450g shallots , roughly chopped
50g candlenuts or macadamia nuts , roughly chopped
1 tsp shrimp paste
4 tbsp vegetable oil

Steps:

  • First, make the spice paste. Soak the dried chillies in hot water for 20 mins until soft. Drain, then mix the chillies with the rest of the spice paste ingredients in a processor or blender to make an even, fine-textured paste.
  • Put a large pan of water on to boil, then drop in the green beans and cook for 3 mins. Lift the beans from the water, cool under cold running water, then drain. Using the same pan of water, cook the prawns for 1-2 mins, until they have just turned pink, then run these under cold water too.
  • Heat the oil a large wok or frying pan and fry the spice paste over a medium heat for 8-10 mins. Stir in the tamarind paste, chicken stock powder and sugar, and cook for 2 mins. Add the prawns, green beans and 4 tbsp water, and cook for 4-5 mins more until the prawns are completely cooked through and the beans are just tender. Serve immediately with the Pandan steamed rice (see 'Goes well with').

Provided by Esther Clark

Categories     Dinner, Main course, Supper

Time 40m

Number Of Ingredients 12

3 tbsp olive oil
1 onion , finely sliced
40g plain flour
3 tbsp medium curry paste
600ml milk
150g green beans , cut into 3cm pieces
1.2kg Maris Piper potatoes , cut into 2cm chunks
1 heaped tsp turmeric
1 tsp nigella seeds
300g raw king prawns
½ small bunch coriander , finely chopped
2 tbsp half-fat crème fraîche

Stir the flour and curry paste into the onions and cook for 2 mins. Remove from the heat and quickly whisk through the milk in several additions to make a thick sauce.

Add the potatoes to the water and cook for 5-6 mins or until you can easily insert a cutlery knife into them. Drain and mash. Stir through the remaining oil, turmeric and nigella seeds, then season to taste.
  • Add the prawns and green beans to the sauce. Bring to a simmer and quickly remove from the heat. Stir through the coriander and crème fraîche and season to taste.
  • Heat the grill to its highest setting. Spoon the mixture into a medium heatproof dish. Spread over the mashed potato and grill for 4-5 mins or until golden and bubbling.
