EASY SKILLET CHICKEN PARMESAN



Easy Skillet Chicken Parmesan image

This is a very easy, tasty and far healthier version of one of my favorite dishes--no breading required! It comes from an old Prego advert, which is sitting beat up in a drawer just begging to get lost, so I'm posting it here just in case. :)

3 tablespoons grated parmesan cheese
2 cups bottled traditional spaghetti sauce
1 tablespoon olive oil
1 1/2 lbs boneless skinless chicken breasts (4 to 6 breasts)
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • Stir 2 tablespoons parmesan into the spaghetti sauce and set aside.
  • Heat olive oil in a large skillet over medium high heat. Add the chicken and brown. (About 10 minutes).
  • Pour the spaghetti sauce mixture over the chicken. Reduce heat to medium and cover the pan. Cook another 10 minutes or until chicken is no longer pink.
  • Top the chicken with the shredded mozzarella and sprinkle with the remaining tablespoon of parmesan. Let stand for 5 minutes or until the cheese melts.
  • Serve over angel hair pasta or (if you're going completely healthy) go for my personal favorite and serve it with spaghetti squash.

This is so quick and simple for a fast weeknight dinner. I like to use the Prego Ragu Chunky Gardenstyle Tomatoes, Garlic, and Onions sauce.

1/2 cup dry Italian style breadcrumbs
1/4 cup parmesan cheese
2 boneless skinless chicken breasts
1 egg, slightly beaten
1/4 cup salad oil
1 (15 1/2 ounce) jar spaghetti sauce, Prego
1 cup mozzarella cheese, shredded

Steps:

  • Combine bread crumbs and cheese.
  • Flatten chicken breasts with flat side of knife to 1/2-inch thickness. Dip in egg then in bread crumb mixture.
  • In skillet, brown chicken in oil; drain on absorbent towels.
  • Place in 2-quart shallow baking dish, 12x8x2. Top with sauce. Sprinkle with cheese.
  • Bake, covered at 400ºF for 20 minutes or until done.

  • Heat oil in 12-inch skillet over medium-high heat. Add chicken and cook 10 minutes or until well browned on both sides.
  • Stir sauce and 3 tablespoons Parmesan cheese in skillet. Reduce heat to medium. Cover and cook 10 minutes or until chicken is cooked through.
  • Sprinkle mozzarella cheese and remaining Parmesan cheese over chicken. Let stand 5 minutes or until cheese is melted.

  • Preheat the oven to 400 degrees F (205 degrees C), with a rack in the middle position. In a large high-sided sauté pan, heat the oil over medium-high heat until it shimmers. Season the chicken generously with salt and pepper; add to the pan and cook until lightly golden, about 2 minutes. Flip the pieces over and cook 1 minute more.
  • Sprinkle the garlic around the chicken, followed by the pepper flakes and oregano. Pour the tomatoes evenly over the chicken, season with salt and pepper, then gently shake the pan to distribute the sauce (you can also do this with a small spoon). Top the chicken with the mozzarella and Parmesan (if using) to taste.
  • Bake until the sauce is bubbling and the chicken is just cooked through, 12 to 14 minutes. (Brown it under the broiler, if you like.) Off the heat, top with the basil leaves (if using), tearing any large ones. Let the Parm rest for about 5 minutes before serving, and keep the pan's handle covered with an oven mitt; it's easy to forget it's hot. Serve with more Parmesan cheese, if you like.
