PRESSURE COOKED BLACK-EYED PEAS WITH SMOKED TURKEY LEG
The title says it all. A wonderful combination of black-eyed peas, turkey, and seasonings. It takes less than 1 hour to make these tasty beans in your pressure cooker.

Steps:
- Place peas and turkey leg into a pressure cooker. Stir in onion, garlic, olive oil, pepper, and water to cover. Bring to a simmer. Close and lock lid.
- Adjust temperature until regulator is gently rocking. Cook at high pressure for 15 to 20 minutes. Let pressure release naturally according to manufacturer's instructions for at least 5 minutes; open lid and add more water if needed. Replace lid and cook until beans are tender, 5 to 15 minutes more. Let pressure cooker cool for about 5 minutes before opening. Remove turkey bone.

- Place the smoked turkey leg, sausage, onion, garlic salt, black pepper, and seasoned salt into a large soup pot; pour in water to cover. Bring to a boil over medium heat. Reduce heat and simmer until the meat is tender, about 1 hour.
- Stir the black-eyed peas into the soup, adding more water as needed to cover peas by 1 inch. Bring to a boil. Again reduce heat and simmer until the peas are tender and have begun to break apart, about 1 more hour.
- Remove turkey bones and tendons from the turkey meat and discard the bones. Add sugar and simmer until the soup is slightly creamy and thickened, stirring frequently, about 10 minutes

- Heat the tablespoon of oil in the pressure cooker pot over medium-high heat until the oil is shimmering (Sauté mode adjusted to high in my Instant Pot.) Add the onion and garlic to the pot and sprinkle with 1/2 teaspoon of salt. Saute until the onion softens, about five minutes.
- Add the black-eyed peas and nestle in the ham hock. Pour in the water, sprinkle with 1/2 teaspoon salt, and lock the pressure cooker lid.
- Lock the lid and pressure cook for 15 minutes in an electric pressure cooker, or 12 minutes in a stovetop pressure cooker. (On the Instant Pot, use the Manual or Pressure Cook setting, and set the cook time to 15 minutes.) When the cooking time is over, let the pressure come down naturally, about 20 minutes. (You can quick release any remaining pressure after 15 minutes if you’re in a hurry.) Remove the lid, tilting it away from you to avoid any hot steam.
- Discard the ham hock, and stir the pot. Taste and stir in salt and pepper until the beans go from bland to fully seasoned. (I usually add another half teaspoon to teaspoon of fine sea salt to the pot, plus a lot of fresh ground black pepper.) Serve and enjoy!
