PRINCESS COOKIES
This recipe gets its name from a story that I read to my son about a princess whose only wish is to find a prince that can make a cookie that is as tiny and delicate as she is. This is a delicious little lemon cookie that will not disappoint! They can either be drizzled with a lemon glaze made of confectioners sugar and fresh lemon juice, or rolled in sugar before baking for a more subtle lemon flavor.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk together the flour, baking soda, and salt in a bowl until thoroughly combined. In a mixing bowl, beat the butter and sugar with an electric mixer until creamy, about 5 minutes, then beat in eggs, one at a time, incorporating each before adding the next. Beat in the lemon juice, lemon zest, and vanilla extract. Gently mix in the flour mixture until just incorporated. Chill the dough about 30 minutes.
- Scoop up about 1 1/2 teaspoon of dough per cookie, gently form into a ball, and place the balls onto baking sheets about 2 inches apart.
- Bake in the preheated oven until the cookies are set and just beginning to brown at the edges, about 8 minutes; cool on baking sheets for 1 minute before removing to finish cooling on racks.

AVOCADO TOAST CAKE

- Preheat oven to 350 degrees and grease an 8x8 baking pan.
- Sift together the flour, sugar, baking powder and salt. Using an electric beater, add in the butter in small pieces, about 10 seconds apart. Beat until the butter is incorporated in small crumbs, then add the oil and continue to beat until there are no clumps and you have a fine, crumbly, cornmeal-like texture (this will take a few minutes).
- Add ½ cup of the milk to the mixture and beat for 4 minutes until pale, thick and smooth (beating for this long will help create a more even consistency that will bake into a more even cake). Beat the eggs and vanilla into the remaining milk mixture and gradually add the egg mixture to the rest of the ingredients. Increase speed to medium and beat for one minute, then scrape down the sides and fold batter a few times to make sure everything is incorporated.
- Divide the batter in half. Beat the matcha into half the batter until evenly incorporated.
- Pour batter into prepared pan, marbling as desired, and bake for 35-40 minutes, or until edges are golden and an inserted toothpick comes out clean. Let cool before cutting into a toast shape.
- Beat the butter and sugar together. Beat in the salt, vanilla, and milk until smooth.
- If going for an ombre look, divide the frosting into 2-3 bowls. Keep one bowl of frosting plain. Add matcha 1/4 teaspoon at a time to the other bowl(s) of frosting until you achieve your desired color and flavor (taste as needed). Use a large offset spatula to frost the cake in sweeping waves of frosting! Add gold flakes/milk crumbs/other cake bling as desired.
PRINCESSES (BULGARIAN GROUND MEAT SANDWICHES)
This is an extremely popular snack food here. Lately it is becoming less popular in cafeterias but it is still a favorite at almost any home. Feel free to alter the condiments but keep the pepper, the onions and the cumin. You could also grate some cheese on top, or add it to the meat mixture.

- Combine ground beef, egg, onion, thyme, black pepper, cumin, coriander, and ginger in a bowl; knead well.
- Mixture should be soft enough to spread. If it is not, add an extra egg. In this recipe too soft is better than too thick.
- Spread the mixture over the bread slices.
- Place in an oven at medium to high heat.
- Bake for 5 to 10 minutes or until meat is golden and cooked through.

FRENCH TOAST CASSEROLE
French Toast Casserole is the easiest way to serve a breakfast favorite to a large group. This dish is easily prepared in 15 minutes, chilled overnight, and popped in the oven in the morning for a delicious brunch.

- Spray a 9x13 baking dish with cooking spray, set aside.
- Cut the 2 day old loaf of french bread into cubes and place in the bottom of the 9x13 baking dish.
- In a separate large mixing bowl combine eggs, whole milk, half and half, sugar, almond extract, cinnamon, salt, and allspice. Whisk together well.
- Pour egg mixture over the cubes of french bread in the 9x13 baking dish, making sure to soak all pieces as you are pouring. NOTE: If using optional pecans, go ahead and top the bread mixture in the casserole dish with ½ cup chopped pecans.
- In a separate medium mixing bowl combine the brown sugar, cold butter, and cinnamon. Use two knives to cut the mixture together until crumbly. Sprinkle over the top of the french toast casserole.
- Cover with foil and refrigerate overnight.
- When ready to cook the french toast casserole preheat the oven to 375 degrees. Uncover and place on the middle rack in the middle of the oven and cook for 35-40 minutes. Check to make sure the center of the french toast casserole is set and not jiggly. Continue to cook, checking every 5 minutes until the casserole is set in the middle.
- Remove from the oven and let sit for 5 minutes to allow it to completely set.
- Sprinkle powdered sugar over the top of the casserole and serve with maple syrup.
