PRINCESS FRESH TUNA STEAK
This is a very nice summer recipe that I came upon while on a Princess cruise ship. The tuna and the sauce can be finished well in advance and refrigerated separately. The fresher the tuna, the better this dish will be. Prep time does not reflect the marinating time or the chill time.

Steps:
- Marinate the tuna with lemon juice, salt, pepper and half the Italian herbs for at least 2 hours in the refrigerator.
- Bake 20 minutes at 350^F.
- Allow to cool.
- Chill.
- In a bowl, mix the oil with the tomatoes, garlic, capers, onion and the remaining Italian herbs.
- Add the dry white wine.
- Top the tuna steak with this cold sauce just before serving.
- Garnish with parsley.
- Serve cold.

PAWHUSKA CHEESE STEAKS

- Heat 2 tablespoons of the butter in a large skillet over medium-high heat. Throw in the roast beef and move it around with a spatula, breaking it up a bit as you go. Add a few dashes of Worcestershire sauce and warm for about a minute or so, then remove to a plate and set aside.
- Add 2 more tablespoons butter to the same skillet and throw in the onions and peppers. Reduce the heat to medium low and cook the veggies until dark golden and soft, 8 to 10 minutes.
- Add the black pepper and cayenne to the processed cheese sauce, then microwave according to the package instructions.
- Melt the remaining 2 tablespoons butter on a griddle over medium heat, then place the deli roll halves on the griddle until golden brown.
- To build the sandwiches, place a pile of beef on the bottom half of each roll. Spoon cheese sauce over the beef. Top with peppers and onions, then top with more cheese sauce. Place the top half of the roll on top and serve immediately as is, or with a little spicy mustard, horseradish or hot sauce if you like!

- To Make Ahead: Prepare the dough (Steps 2 and 3), cover and refrigerate for up to 1 day. Store the cookies in an airtight container at room temperature for up to 3 days. Roll in the second coating of confectioners' sugar just before serving.
- Recipe Description:
- Working on this makeover of a classic Russian Tea Cake made Bridget Klein feel closer to her late sister, Gina, because they are "a great match for her personality: delicate and refined, pretty to look at, and yet a definite character that inspires adoration and loyalty." Gina's middle name, Sarah, means "princess," in Hebrew; hence the name of these confections. Klein's mom "swore these cookies couldn't be made without butter," she says, "until she tasted them." Klein continues: "Gina was a traditionalist, too, but I think I might have been able to fool her with these."
- Recipe Ingredients:
- Preheat oven to 400 degrees F.
- Pour oil into a medium bowl. Whisk all-purpose flour, white whole-wheat flour, 1/4 cup confectioners' sugar, cornstarch and salt in another bowl.
- Mix half the dry ingredients into the oil by spoonfuls. Scrape down the sides of the bowl and add vanilla. Mix in the remaining dry ingredients by spoonfuls until thoroughly combined. (The mixture will resemble creamed butter and brown sugar.) Stir in nuts.
- Roll the dough into 1-inch balls; place about 1 inch apart on an ungreased baking sheet.
- Bake the cookies until just set, being careful not to let the bottoms get too brown, 10 to 12 minutes. Cool on the pan for 2 minutes; transfer to a wire rack to cool slightly.
- When the cookies are still warm, but no longer hot, roll them in the remaining 1 3/4 cups confectioners' sugar and place them back on the rack to continue cooling. (Reserve the sugar.) When the cookies are completely cool, roll them in the sugar again.

SAVORY PAN-SEARED TUNA STEAKS
These marinated tuna steaks, served rare, taste 'fancy' but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish.

- Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
- Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
- Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
