'FANCY' EGG SALAD



'Fancy' Egg Salad image

This recipe dresses up basic egg salad with parsley, capers, shallots and bacon. The writer, David Latt, cooks his eggs on a low, gentle boil for 30 minutes and finds they come out perfectly done, with the yolk flaky, but feel free to use whatever method you like, as long as the eggs are hard-boiled. (We give instructions for boiling and steaming in our guide to cooking eggs.) You can also add other spices: mustard, ground mustard seed, cumin or rosemary. The parsley can be replaced with cilantro, and the mayonnaise can be flavored.

4 eggs
1 tablespoon Italian parsley, finely chopped
1 tablespoon capers, dried, finely chopped
1 tablespoon finely chopped shallots
1 slice of bacon, crisp, finely chopped
1 1/2 tablespoons mayonnaise
Salt and pepper

Steps:

  • Put the eggs into a gently boiling pot of water and cook for 30 minutes. Cool with water, peel and chop.
  • Toss the eggs in a bowl with the parsley, capers, shallots and bacon. Season with salt and pepper to taste, then add the mayo and mix well. Serve with fresh bread or crackers, on hearts of romaine, or in a salad.

This is a wonderful-tasting egg salad sandwich that you will definitely devour. It's really good on rye.

8 eggs
½ cup mayonnaise
1 teaspoon prepared yellow mustard
¼ cup chopped green onion
salt and pepper to taste
¼ teaspoon paprika

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onion. Season with salt, pepper and paprika. Stir and serve on your favorite bread or crackers.

"DRESSED UP" GREEK-STYLE SALAD



This is a variation of another "dressed-up" salad I make for special occasions. This one is for my occasional "Irish Girl's Greek Night" parties, The salad makes an outstanding presentation by being totally covered with colorful vegetable rings with a circular dollop of feta cheese in the center. After everyone ooos and aaahs, toss it and serve with your favorite Greek dressing. I use a portion of Recipe #68485, the remainder of which stores nicely in frig. I hope you enjoy this very pretty twist of a green salad recipe. (NOTE -- Amounts below are realistic but not written in stone. Measurements also depend on the size of the salad bowl and amount of greens in it, since the salad's "wardrobe" has to totally cover top of greens!) I have also used thinly-sliced celery and/or small pieces of cauliflower as part of the ring wardrobe!

2 bunches romaine lettuce or 2 bunches salad greens, to fill large salad bowl
salt and pepper
1 red onion, halved and thinly sliced
1 (8 ounce) package cherry tomatoes, halved
3 cups shredded carrots
2 large green peppers, diced
2 (4 ounce) cans sliced black olives, drained
crumbled feta cheese

Steps:

  • Cut red onion in half, then slice thinly. Prepare other vegetables.
  • Place torn romaine/greens in serving bowl, keeping top as smooth a layer as possible. Salt and pepper greens to your liking.
  • Starting at edge of bowl, make circular rings of sliced onion, then tomatoes, carrots, green peppers, olives and in the center a dollop of feta cheese.
  • Cover with plastic wrap until ready to serve then present with Greek salad dressing of your choice served on the side.

1/4 cup Miracle Whip
1/2 teaspoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon dill weed
Pinch pepper
6 hard-boiled large eggs, chopped
1/2 cup chopped celery
1 can (2-1/4 ounces) sliced ripe olives, drained
2 tablespoons chopped onion
1 tablespoon chopped pimientos
Bread or pita bread

Steps:

  • In a bowl, combine the first six ingredients; mix well. Add eggs, celery, olives, onion and pimientos; mix well. Cover and chill for at least 1 hour. Serve on bread or pita bread, using about 1/2 cup for each sandwich.

4 ounces cream cheese (1/2 of an 8 oz. package)
4 eggs
1 carrot small, grated
1/4 cucumber chopped
1 tablespoon green bell pepper, chopped
3/4 teaspoon seasoned salt
1/4 teaspoon black pepper
2 tablespoons mayonnaise
1 tablespoon lemon juice

Steps:

  • 1. Place cream cheese in a small mixing bowl and wait about 30 minutes for cream cheese to soften. Note: Or place cream cheese in a small microwavable bowl. Microwave at 100% power (700 watts) for 15 seconds to soften.2. While cream cheese softens, hard cook eggs Cool and peel. Coarsely chop eggs and set aside to use later.3. After cream cheese softens, add to the bowl the carrot, cucumber, green pepper, seasoned salt and pepper. Stir to blend all ingredients. Add chopped eggs, mayonnaise and lemon juice. Stir until blended.4. To use, spread on bread for a sandwich, wrap and pack in a lunchbox. Or, spoon onto a lettuce leaf and eat as a salad.

2 ounces smoked salmon, finely chopped
1 teaspoon dill weed
1 teaspoon capers
1/4 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
1 stalk celery, finely chopped
1 green onion, chopped
14 slices country-style white bread, lightly toasted

Steps:

  • Combine all ingredients except bread in a large bowl; mix until well combined. Spread 1/4 cup egg mixture over half of bread slices; top with remaining bread slices. Trim crusts, if desired. Tip: Toss pillows for outdoor furniture are easy to make using two cotton tea towels and hem tape. Press iron-on hem tape on the wrong side of one towel, then remove the paper backing. Lay the second tea towel on top, wrong sides together, and press, leaving an opening for a pillow. Slip the pillow inside, then press the openings together.
