GRILLED CAPRESE WITH PROSCIUTTO

Steps:
- Line a baking sheet with parchment paper. Wrap each mozzarella slice with prosciutto until mostly covered. Put on the prepared baking sheet and cover with plastic wrap. Freeze until firm, about 30 minutes.
- Preheat a grill to medium high. Grill the prosciutto-wrapped mozzarella until the prosciutto is crisp and the cheese just starts to melt, about 1 minute per side.
- Arrange the prosciutto-wrapped mozzarella and sliced tomatoes on a platter, overlapping slightly. Top with the cherry tomatoes. Drizzle with the olive oil and vinegar and season with salt and pepper. Top with the basil.

GRILLED MOZZARELLA AND TOMATO SKEWERS
Created by Chef Richard Krause for "Chef on a Shoestring." The CBS Saturday Early Show challenge was to create a gourmet 3 course meal for 4 people for less than $20. I love the presentation of this, much more interesting than simple bruschetta. Cut the bread into about 3/4" thick rounds for this. The ingredients after the skewers is for the sauce. I've also made this without the bread before and served it over couscous as a main dish. BE VERY CAREFUL cooking these as you only want them lightly toasted. It literally takes seconds. If you leave them over the heat too long, the cheese will melt all over the place.

Steps:
- Cut mozzarella in half, then into eight 3/4" slices.
- Place ingredients on the skewers in the following order: bread, tomato, basil, mozzarella, tomato, basil, mozzarella and bread. Set aside while you make the sauce.
- Mix all the sauce ingredients (everything following the skewers) together in a saucepan and warm for 1-2 minutes before serving. You don't want the tomatoes to break down, but rather just to be warmed.
- Brush the skewered mozzarella and tomato with a little olive oil and season with salt and pepper.
- Grill over high heat on both sides until the bread is lightly toasted and the cheese begins to melt, about 30-45 seconds per side.
- Spoon the sauce onto 4 warm dinner plates. Set the skewers neatly on top of the sauce, slide out the skewers and serve.

PROSCIUTTO WRAPPED MOZZA & GRAPE TOMATO BBQ SKEWERS
When we grill for ourselves or have company over this is one of the BBQ sides we always consider having. Everyone who has had these love them. The salt of the prosciutto mixing with the mozza and the sweetness of the grape tomatoes just go together. Try them and let us know what you think. Feel free to put more on the skewers if you want, we often slide in some red peppers or pineapple depending on whats at hand......the sky is the limit I guess. Enjoy. J & D. Steps:
- Soak your four wooden skewers in cold water for at least 30 minutes before cooking.
- Cut the 100g of Mozzarella cheese into 1" squares.This will give you about 12 squares.
- Depending on the type of prosciutto you have you should be able to wrap each square with half a slice of the prosciutto.
- Alternate the grape tomatoes and prosciutto wrapped mozzarella on the skewers. Brush each skewer with the oil and season with a little fresh ground black pepper.
- We cook them on the BBQ over medium heat on the top rack turning once for about 10 minutes. Use a strip of aluminum foil to protect the exposed part of the skewer while cooking, it makes them real easy to handle. During our cold Canadian winter we have also made these in the oven, roasting them at 350F for about 10 minutes.
