1/2 cup Truvia Baking Blend
2 eggs
2 teaspoons molasses
1 cup vanilla protein powder
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
2 1/2 cups whole wheat flour
1 cup mini dark chocolate chips

Steps:

  • Preheat oven to 375 degrees F.
  • In a mixing bowl, beat together pumpkin and Truvia Baking Blend until fluffy.
  • Beat in eggs and molasses until well combined.
  • Add vanilla protein powder, salt, baking soda, pumpkin pie spice and flour and mix until combined.
  • Fold in dark chocolate chips.
  • Use a cookie scoop or roll dough into balls and place on a baking sheet sprayed with nonstick cooking spray or lined with parchment paper or a silicone baking mat.
  • Bake for 8-9 minutes, or until just golden brown on the edges.

½ teaspoon baking soda

¾ stick unsalted butter, softened

1 large egg
½ cup chocolate chips
½ cup chopped raw walnuts
¼ cup candy-coated milk chocolate pieces (such as M&M's®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper.
  • Combine flour, protein powder, baking soda, and salt in a large bowl.
  • Combine butter, white sugar, brown sugar, and vanilla extract in another large bowl and beat until creamy. Beat in egg and gradually add flour mixture. Stir in chocolate chips, walnuts, and candy pieces.
  • Drop tablespoonfuls of dough 2 inches apart onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden, 10 to 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

6 tablespoons sucralose and brown sugar blend (such as Splenda® brown sugar blend)
1 teaspoon vanilla extract
2 large eggs
1 (10 ounce) bag chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine whey protein, whole wheat flour, baking soda, and salt in a bowl.
  • Beat butter, white sugar, brown sugar substitute, and vanilla extract together in a separate bowl until creamy. Add eggs one at a time, mixing each one in fully before adding the next. Slowly beat in flour mixture. Stir in chocolate chips and walnuts by hand.
