SPICY CAJUN ROASTED CAULIFLOWER WITH RéMOULADE
A healthy cauliflower dish with a kick! Seasoned roasted cauliflower served with a popular cajun dipping sauce. Even self proclaimed cauliflower haters love it!

Steps:
- Preheat oven to 400ºF. Line a baking sheet with baking paper.
- Cut the cauliflower in half lengthwise.
- Toss cauliflower, olive oil, and Cajun seasoning in a bowl until fully coated.
- Tip onto the prepared baking sheet and roast for 20 minutes.
- Stir cauliflower and place back in the oven for another 5 to 10 minutes until tender and crispy around the edges.
- Serve hot with remoulade sauce.
- Mix together in a bowl and store in an airtight container.
- Combine all ingredients in a bowl and let sit so flavours meld.

PAUL PRUDHOMME'S CAJUN SAUCE FOR BEEF

Steps:
- Combine onions, bell peppers and celery in a small bowl & set aside while you start the roux.
- In a heavy 2-quart saucepan (I prefer a castiron skillet), heat the oil over medium-low heat to about 250°. With a metal whisk, whisk in the flour a little at a time until smooth.
- Continue cooking, whisking constantly, until roux is light brown, about 2 to 3 minutes. be careful not to let the roux scorch or splash on you.
- Remove from heat and immediately stir in the vegetable mixture (with a spoon) as well as the red, white and black peppers.
- Return pan to high heat and cook about 2 minutes, stirring constantly (you're cooking the seasonings and vegetables in the light roux and the mixture should be pasty). Remove from heat.
- In a separate 2-quart saucepan, bring the stock/broth to boil. Add the roux mixture by spoonfuls to the boiling stock, stirring until dissolved between each addition.
- Bring mixture to a boil, then reduce heat to a simmer & cook until the sauce reduces to 3 1/2 cups (about 15 minutes).
- Skim any oil from the top and serve immediately.
PRUDHOMME'S CAJUN CAULIFLOWER IN GARLIC SAUCE

- Steps: Bring 1 quart of water to a boil in a large pot.
- Blanch the cauliflower just until tender-crisp, about 3 minutes.
- Drain well and set aside.
- Place the butter in a large skillet over high heat.
- As soon as the butter begins to sizzle, add the garlic.
- Cook, stirring almost constantly, until the garlic is thoroughly coated with butter, about 30 seconds.
- Add the cauliflower and cook, stirring occasionally, just until the cauliflower is slightly browned, about 4 minutes.
- Remove from the heat, stir in the pepper sauce, cilantro and Cajun spice blend, and mix gently but thoroughly.
- Serve immediately.

GARLIC WHOLE ROASTED CAULIFLOWER

- Preheat the oven to 450 degrees F. Trim the cauliflower: Cut the stem flush with the bottom. Cut a few slits into the core extending into the thick branches of the cauliflower (keep the florets intact). Put 3 thyme sprigs, the smashed garlic, bay leaves, coriander seeds and peppercorns on a square of cheesecloth and tie into a bundle. Combine 12 cups water, the celery, shallot, lemon zest, wine, sugar, 1/3 cup salt and the cheesecloth bundle in a pot large enough to submerge the cauliflower. Bring to a boil, whisking to dissolve the salt and sugar. Carefully add the cauliflower core-side down and cook until there is a slight resistance when pierced with a knife, about 15 minutes. (It's OK if the top of the cauliflower pops up during cooking.) Remove the cauliflower to a baking sheet.
- Meanwhile, make the garlic oil: Combine the remaining 3 thyme sprigs, the sliced garlic, olive oil, 1/2 teaspoon salt and a few grinds of pepper in a small saucepan. Cook over medium heat until the garlic starts browning, 3 to 5 minutes. Discard the thyme. Brush the cauliflower with half of the oil, leaving the sliced garlic behind.
- Roast the cauliflower until browned and tender, 30 to 40 minutes, brushing halfway through with the remaining garlic oil; reserve 1 teaspoon garlic oil and the sliced garlic.
- Transfer the cauliflower to a cutting board or platter using a spatula. Add the parsley to the reserved garlic oil and spoon over the cauliflower. Cut into wedges.
CAULIFLOWER WITH DIJON SAUCE
Cauliflower, mayo, Dijon mustard, Cheddar cheese: simple and easy. The amounts may be adjusted depending on the size of your cauliflower. The cauliflower may even be left whole, just remove the core before cooking.

- Place cauliflower florets in a large glass bowl or casserole dish, and cover with plastic wrap. Poke a few holes in the plastic with a knife. Cook in the microwave for 5 to 7 minutes, or until tender.

- Preheat oven to 375 degrees F (190 degrees C).
- Put mustard in a large bowl. Slowly pour oil into mustard while continuously mixing to form a smooth sauce; stir in shallot and garlic. Add cauliflower to the mustard sauce and stir to coat. Pour coated cauliflower onto a baking sheet, scraping out any shallot or garlic stuck to the bowl and sprinkling over cauliflower.
