PRUNE COOKIES
When you crave for something sweet, these prune cookies are exactly what you need! Gooey on the inside and crunchy on the outside, they go well with both coffee and tea!

Steps:
- Preheat the oven to 360 degrees F/180 degrees C.
- Put the prunes in a bowl and sprinkle about one tablespoon of icing sugar on them. Set them aside for 30 minutes.
- Add the butter into the kitchen aid bowl and start processing it.
- Add the sugar gradually and continue to process, until you incorporate it all.
- Add the eggs gradually, while you continue mixing.
- Add the almond extract, lemon and lime zest.
- Stop the kitchen aid and sift the flour in the bowl. Process again until you get a thick and creamy batter. Set the batter aside.
- Flour your workspace and spread the puff pastry using a rolling pin, until you make a thin sheet. Remove its edges to form one square or rectangular puff pastry sheet.
- Lay a baking tray with parchment paper and add the puff pastry sheet.
- Bake the crust for 15 minutes.
- Take the tray out of the oven and spread the batter in an even layer over the puff pastry sheet.
- Top with prunes and almond flakes. Embed the prunes into the batter just a little, using your fingers.
- Return it to the oven and bake it for 30 minutes at 320 degrees F/160 degrees C.
- Meanwhile, mix the icing sugar with lemon juice to get a glaze.
- Take the tray out of the oven, cut small cookies, let them cool a little and then glaze them again before serving.

- In a large bowl, dissolve yeast in warm milk. Add the butter, shortening, egg yolks, sugar and salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Cover and refrigerate overnight., In a large saucepan, cook plums in water 12-15 minutes or until liquid is absorbed. Mash; add sugar and lemon juice. Cook for 8-10 minutes over low heat until thickened. Cool and refrigerate., Turn dough onto a lightly floured surface; divide in half. Roll each portion into a 3-in. x 9-in. rectangle. Dot with butter; sprinkle with cinnamon. Spread about 1/3 cup plum filling down the center of each. , Fold a third of the dough lengthwise over filling. Fold remaining dough over top; pinch seams to seal and tuck ends under. Place seam side down in two greased 15x10x1-in. baking pans. Cover and let rise in a warm place for 2 hours or until doubled. , Bake at 350° for 25-30 minutes or until golden brown. Remove from pans to wire racks to cool. Combine the glaze ingredients; drizzle over loaves.

- Cook filling ingredients until thick, stirring constantly. Cool. Mix flour with baking powder and salt. Cream shortening and sugar. Add egg, milk and vanilla, then dry ingredients. Roll thin and cut into 2 or 3 inch rounds. Place rounds on greased cookie sheet. Place 1 tsp cooled filling in center of rounds. Place another cookie round on top of filling. Press edges of cookie to seal in filling. Bake in 350 degree oven until golden brown.
SPICED PRUNE COOKIES
These cookies come from the (now deceased) mother of a friend. My copy of the recipe is in her handwriting and is very much a treasure. Most people believe that the cookie contains dates, not prunes. I don't bother to correct most. They are so good; why spoil it for them? (hehe)

- Cream sugar, eggs and butter.
- Mix flour, soda, salt and spices.
- Add to creamed mixture.
- Add milk, prunes and nuts.
- Chill one hour.

PRUNE AND RAISIN FILLED COOKIES
This is a prune and raisin filled cookie with chopped walnuts added if desired. The cookies are made into loaves approx. 3 1/2 to 4 inches wide and 8 to 10 inches long. After baking the loaves are cut into slices crosswise approx. 1 inch wide. Cookies are glazed on top and decorated with colored sprinkles. Prepare the fruit filling the night before baking.

- To Make Filling: Boil prunes until plump. Put raisins in pan, cover with water and heat until water steams. Strain and add 1/2 cup of sugar to raisins, mix well and heat again until almost dry. Remove from heat and set aside. Pit the cooked prunes, if not already pitted, chop and add to raisins. Add chopped nuts, if desired. Set fruit mix aside overnight.
- The next day make the dough. In large bowl, mix together the flour, baking soda, sugar and salt. Make a well in the center. Add the eggs, milk, grated lemon rind and oil and mix to form dough. Knead the dough to the consistency for rolling.
- Divide the dough into 6 parts. Roll each part into a rectangle of 1/8 inch thickness. Put 1/6 of the fruit mix onto the dough rectangle and spread evenly.
- Fold the dough lengthwise into the center. Fold the other side in slightly past center, and press seam lightly. Pinch ends to close. Lift the loaf with a spatula and place on lightly greased cookie sheet with seam under.
- Bake in 400 degree F (205 degrees C) oven for 18 - 20 minutes (top should be lightly brown). Allow to cool then cut crosswise slices about 1 inch thick.
- To Make Glaze: Use juice of 1 lemon and enough confectioners' sugar to obtain consistency for brushing top of cookie. Drop sprinkles onto glaze and allow glaze to set. Enjoy!

- Soak prunes and brandy in a small airtight container at room temperature overnight. Drain prunes. Puree in a food processor until smooth. Transfer to a small bowl. Stir in bread crumbs and sugar. Refrigerate until ready to use, up to 1 day ahead.
