Prune and Almond Braised Short Ribs image

When the chef Tony Maws's grandparents died, he decided to start having Passover Seder at his restaurant, Craigie on Main in Cambridge, Mass. This short rib recipe, brought to The Times in 2011, was among the dishes he served, both to his family (on the first night) and his diners (on the second and third nights). It's a Sephardic take on his grandmother's tsimmes and brisket, prepared a day in advance and refrigerated to let the flavors meld and the fat float to the top to be skimmed. Serve it as part of a Seder, or for just about any special occasion. It is sure to impress.

7 pounds beef short ribs or 5 pounds flanken, cut in 4-inch portions
Salt
Black pepper
1/4 cup rendered duck fat or chicken fat, or canola oil
1 large Spanish onion, diced
3 large carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, peeled and smashed
1 (1-inch) piece ginger, peeled and smashed
2 cups ruby port
2 cups red wine
4 cups pitted prunes
1 1/4 cup slivered almonds, lightly toasted
4 ounces shiitake, crimini or other mushrooms, diced
1/2 cup loosely packed chopped parsley
4 fresh thyme sprigs
1 bay leaf
1 cinnamon stick
1 clove
1 star anise
Zest of 1 orange, in strips
4 cups veal, beef or chicken stock, or as needed

Steps:

  • Heat oven to 325 degrees. Season short ribs or flanken with salt and pepper. Place a heavy wide pan over medium-high heat. Add the fat or oil and heat until shimmering. Add beef and brown well on both sides. Transfer to a plate.
  • Add onion, carrots, celery, garlic and ginger to the pan, and stir until the onions begin to brown, about 3 minutes. Add port and wine, scraping the bottom of the pan with a wooden spoon. Simmer until reduced by half, about 10 minutes.
  • In a large Dutch oven or heavy braising pan, combine 2 cups of the prunes, 1 cup almonds, and the mushrooms. In a piece of cheesecloth, tie up 1/4 cup of the parsley with the thyme, bay leaf, cinnamon, clove, star anise and orange zest, and add to the pot. Add the meat, the vegetable mixture and enough stock to cover. Place over high heat to bring to a boil, then transfer to the oven. Cook, covered, until the meat is falling off the bones, about 2 1/2 hours. Cool completely in the pan, then refrigerate overnight or until well chilled.
  • Skim the fat, then transfer beef to a large bowl, discarding any loose bones. Discard the cheesecloth packet, and transfer remaining broth and vegetables to a food processor. Purée, then return to a clean pan. Add meat and remaining 2 cups whole prunes. Place over medium-low heat, stirring occasionally, until gently reheated. Garnish with remaining 1/4 cup parsley and 1/4 cup almonds.

32 ounces dried pitted prunes
8 ounces toasted almonds
8 ounces powdered sugar
1 egg
1 tablespoon lemon juice
2 tablespoons cognac
8 ounces sugar
2 tablespoons water

Steps:

  • Prepare prunes by cutting them in half making a pocket to stuff them.
  • In a food processor mix almonds, powder sugar, egg, lemon juice and cognac until it turns into a paste.
  • Roll small balls with the almond paste and fill the prunes.
  • Let them dry for an hour.
  • Caramel: Combine sugar and water in a saucepan. Cook over medium-high heat, stirring with a wooden spoon just until sugar dissolves. Then bring to a boil without stirring. Continue cooking to a medium to deep amber color.
  • Cover stuffed prunes with caramel and let them cool down until harden.

Spruce up your scones with prune and almond for a different take on an afternoon tea classic. Perfect for picnics or whenever you fancy a sweet treat

225g self-raising flour , plus extra for dusting
¼ tsp salt
50g butter , very cold, diced
100g prunes
40g chopped flaked almonds
a few drops of vanilla extract
150ml buttermilk (or milk)
beaten egg

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the flour, salt and butter in a food processor and pulse until you can't feel any lumps of butter (or rub in any remaining lumps with your fingers).
  • Halve and stone 100g prunes and add them to the pulsed dry flour mixture along with 40g chopped flaked almonds. Add a few drops vanilla extract to the buttermilk before combining with the flour mixture.
  • Use a knife to quickly combine everything together to form a dough - stop when it has just combined and don't overmix it.
  • Tip the dough onto a floured surface and lightly bring it together with your hands a couple of times. Press out gently until about 4cm thick, then stamp out 6-7cm roundsor cut into squares or triangles (pat the dough into a neat rectangle first to ensure straight edges). Re-shape any trimmings until all the dough is used. Brush the tops with a beaten egg before baking. Spread out on a lightly floured baking sheet and bake for 10-12 mins or until well risen and golden.

Until my move to France, I really didn't feel one way or the other about prunes. But as I've traveled the country, I've discovered the wonders of this rich dried fruit. Something happens to the prunes in this tart as they bake, turning them into almost a sweet, compact candy. Be sure to make a good, strong tea (I used about one tablespoon of loose Earl Grey tea leaves to the two cups of water) for soaking the prunes.

1 partially prebaked and cooled flaky sweet pastry shell
2 cups strong black tea
1 pound prunes, pitted
1/4 cup whole unblanched almonds
1 large egg, slightly beaten
5 tablespoons granulated sugar
2 tablespoons plum eau-de-vie or brandy
3/4 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • At least one hour before preparing the tart, pour the hot tea over the prunes and set aside to marinate.
  • Preheat the oven to 375 degrees.
  • Prepare the cream filling. In a spice grinder or the bowl of a food processor, grind the almonds to a fine powder. Thoroughly blend the almonds with the egg, sugar, brandy and cream. The mixture should be very smooth.
  • Thoroughly drain the prunes, discarding the soaking liquid. Carefully arrange the prunes in the cooled, prebaked tart shell. This will seem like a lot of prunes, and you may have to arrange them in two layers. Pour the cream filling over the prunes and place the tart in the center of the oven.
  • Bake until the cream filling has set and the tart shell is nicely browned, about 45 minutes. Remove from the oven and sprinkle with confectioners' sugar.
