- Heat your oven to 425 degrees. Slice the puff pastry dough into 6 evenly sized pieces. Brush 1 teaspoon of pesto over each piece of puff pastry. Then add a half slice of prosciutto on top. Rinse your asparagus, slice off the ends, and then slice the asparagus in half. Arrange the asparagus using 8 slices of asparagus to create a border on the edges of each puff pastry piece. Next, add the cheese. Use the cheese to create a border around where the egg will go so that the cheese will hold the egg in place. Carefully crack the eggs and place them in the middle of the pieces of puff pastry. Sprinkle salt and pepper over the top. Bake the puff pastry breakfast tarts for 15 minutes, then serve right away.

BLACKBERRY PUFF PASTRY TARTS
This simple yet delicious recipe is certain to please anyone with a sweet tooth. You can use either puff pastry sheets or shells for this recipe. If you use sheets, put the filling in before you cook the pastry, and then cook them all the way in one go. These are equally good warm or cooled, but I advise against reheating them in the microwave or refrigerating them.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
- Mix the cream cheese, sugar, and cinnamon together in a bowl until thoroughly blended. Set aside.
- Place the puff pastry shells on the prepared cookies sheet. Brush each shell with milk and sprinkle with turbinado sugar.
- Bake in preheated oven until shells expand and turn golden brown, 10 to 15 minutes. Watch closely to make sure shells bake thoroughly, but do not overbake. Remove shells from oven, and use a fork to remove the cap from each shell. Set the caps aside.
- Spoon 2 tablespoons of the cream cheese mixture into each shell. Top with 6 to 8 blackberries. Place a puff pastry cap on top of each shell over the berries.
- Return filled pastry shells to oven, and bake until pastry tops are golden brown and the filling is warm, about 5 minutes more.

Steps:
- Preheat oven to 350°F (180°C).
- Make three vertical cuts from top to bottom of each puff pastry sheet. The cuts should be about 2.5-inches (6-cm) apart. Repeat horizontally to make 18 squares.
- Brush a square pastry lightly with water then place another square on top of it. Cut off any uneven edges. Repeat with the remaining squares.
- Place the square pairs about 1-inch apart on a baking sheet, and brush the top of each with the egg wash.
- Bake for 20 minutes or until pastry is a pale golden color. Remove from oven and let cool.
- In a large pan, combine olive oil, peppers, salt and pepper. Cook for 8 minutes or until the peppers have softened.
- Cut a rectangle in the middle of each square puff pastry and push it down. Fill the inside of the puff with a thin layer of bacon, cheddar cheese, and peppers. Use a small spoon or utensil to push the layers down. Carefully crack an egg on top.
- Bake for an additional 20 minutes or until egg white is no longer translucent or runny.
- Serve with pepper and chives.
