STUFFED PUFF PASTRY

- Preheat oven to 350 degrees F.
- Put a medium saucepan on the stove over high heat. Put the figs, honey, and water in the pan, stir, and bring to a boil. Reduce heat, and allow the water to simmer. The honey and natural sugars from the figs should thicken the water. Continue to simmer figs until a sauce is achieved that is thick enough to cover the back of a spoon. When sauce has reached that consistency, remove from heat. Put "fig sauce" in a refrigerator-safe container, and allow cooling for at least 20 minutes.
- Spread a sheet of puff pastry out on a clean, lightly floured surface. Scoop a small amount of fig sauce on the puff pastry sheet with about 2 inches around the sauce on every side. Put a piece of Brie on top of the sauce. Carefully fold the edges of the puff pastry over the cheese. Squeeze the edges of the pastry together then carefully flip the pastry over, so the smooth surface of the pastry is facing up. Gently take the pastry and put it on a sheet tray lined with parchment paper. Repeat this until all the cheese is used. You should have 8 small stuffed pastries.
- When all the pastries are on the sheet tray, take a pastry brush, and lightly brush egg whites on the top and sides of each pastry, this will give the pastry a shine when it comes out of the oven. Drizzle a small amount of honey on top of each pastry.
- Bake the pastries until the puff pastry is a golden brown. This should take about 15 minutes, but keep your eyes on the baking process. When the pastries are golden brown, remove from the oven, and allow them to cool on a cooling rack. Allow them to cool for 3-5 minutes, then serve warm.
BACON-WRAPPED STUFFED JALAPENOS
Sunday is grill-out day for my husband, Cliff, and these bacon-wrapped stuffed jalapenos are one of his specialties. We usually feature them at our annual Daytona 500 party. They disappear from the appetizer tray in no time.

- Make a lengthwise cut in each jalapeno, about 1/8 in. deep; remove seeds. Combine the sausage and cheese; stuff into jalapenos. Wrap each with a piece of bacon; secure with toothpicks., Grill, covered, over indirect medium heat for 36-40 minutes or until a thermometer reads 160°, turning once. Grill, covered, over direct heat for 1-2 minutes or until bacon is crisp.

- In a medium bowl, mix the cream cheese, Monterey Jack cheese, jalapeno peppers, garlic and green onions.
- Fill wonton wrappers with approximately 1 teaspoon cream cheese mixture each. Fold wrappers into triangles and press the edges with a moistened fork to seal.
- In a large, deep skillet, heat the oil over medium high heat. Drop 4 wontons at a time into the oil and quickly fry, turning once. Remove when golden brown and drain on paper towels.

EASY CHEESE-STUFFED JALAPENOS

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

PUFF PASTRY-WRAPPED JALAPEñOS STUFFED WITH OAXACA CHEESE
These guys are spicy! If you're afraid of the heat, you can use güero chiles, but jalapeños are exactly the right size for an appetizer. Oaxaca cheese, like mozzarella, is a mild-flavored white cheese that is excellent for melting. It's popular for quesadillas in Mexico.

- Preheat the oven to 350°F. Spray a large baking sheet with nonstick cooking spray.
- Mix the cheese and the oregano in a medium bowl to blend. Season to taste with salt and pepper. Carefully fill each jalapeño with 1 tablespoon of the cheese mixture. (The jalapeños can be prepared 1 day ahead. Transfer the filled jalapeños carefully to a baking sheet, cover, and refrigerate.)
- Working with 1 sheet at a time, roll the puff pastry on a lightly floured surface to 1/4-inch thickness. Cut it into nine 3 x 4-inch rectangles. Place the rectangles on a work surface, and brush each one lightly with the egg wash. Place 1 jalapeño in the center of each rectangle, on the diagonal. Tightly fold the puff pastry, like an envelope, over the jalapeño to enclose it completely. Brush the pastry lightly with the egg wash. Press the tines of a fork lightly on the seams to seal the pastry. Invert the packets onto the prepared baking sheet so they are seam side down. Brush them lightly with egg wash. Repeat with the remaining puff pastry and jalapeños.
- Bake until puffed and golden, about 20 minutes. Let cool for 5 minutes, and then transfer the pastry-wrapped jalapeños to a platter and serve.
