PULL-APART PARMESAN FOCACCIA BREAD

Steps:
- Heat oven to 425°F.
- Mix seasonings. Place dough on lightly floured surface. Drizzle with 1 Tbsp. oil, then sprinkle with half the seasoning mixture; knead dough until evenly blended.
- Spray 9-inch round pan with cooking spray. Shape dough into 2-inch balls. Measure 2 Tbsp. of the remaining oil into small bowl. Dip dough, 1 ball at a time, into oil, turning to evenly coat ball with oil; place in prepared pan. Drizzle with remaining oil; sprinkle with remaining seasoning mixture, then cheese.
- Bake 15 min. or until golden brown. Cool 10 min. Remove from pan to wire rack; cool slightly.

- Preheat the oven to 350 degrees. Throw the cold 1/2 stick of butter in a Bundt pan and let it melt in the preheating oven. While the butter melts, cut the Grands biscuits into quarters. In a bowl, toss the biscuit pieces, garlic, Italian Seasoning, and Parmesan cheese together. Once the butter is melted, add the biscuit mixture, sprinkling with any cheese and garlic that gets let behind in the bowl. Bake at 350 degrees for 20- 22 minutes until golden brown. Turn out on a dish.

- Pour frozen rolls out onto a cookie sheet to thaw. You want the rolls to be soft but not fully raised.
- Once rolls are soft, combine butter, minced garlic, basil, and oregano in a medium size bowl. Cover with a paper towel and melt together in microwave (30 to 45 seconds on high).
- Dip each roll in the butter mix then roll in the cheese. Layer the rolls in a bundt pan. Let raise for 20 to 30 minutes. Bake at 350 for 30 to 35 minutes. Let cool for 5 to 10 minutes, then turn over onto a serving plate.

- In a small saucepan add the cut up potato and 3 cups of water. Bring the mixture to a boil and cook for about ten minutes or until the potato can easily be poked with a fork. Using a slotted spoon transfer the cooked potato to a small bowl and then measure out one cup of the hot potato water and set both aside to cool.
- Once the potato had cooled enough to touch grate it on the largest holes of your box graters and set aside (this should be about one cup of grated potato that is lightly packed).
- Add the cooked potato, 3 1/2 cups of flour, 2 tablespoons of olive oil, yeast, and salt to the bowl of a stand mixer. Using the dough hook mix on low speed. Slowly add the reserved potato water (that has cooled to 110 degrees) and mix until it starts to form a dough, about 2 minutes.
- Increase the speed to medium low and continue to mix until a smooth and elastic dough is formed. The dough should start to pull away from the edges of the mixer bowl but still stick to the bottom. If after 4 minutes the dough is too sticky add the remaining flour as needed just a tablespoon or two at a time until the dough leaves the edges of the bowl.

- Add 350 ml of warm water with machine working on low speed until no more flour is visible. Be sure to scrape down sides and bottom of bowl with rubber spatula. Add olive oil and salt last. Dough should be worked on medium speed for roughly 5-7 minutes, until it comes away from the sides but still sticks to the bottom of bowl. If it looks too dry at the 4 minute mark, add bit more water. Amount of liquid may need adjusting depending on the humidity and other factors.
- Place dough in a lightly oiled medium bowl and cover with plastic wrap. Let rise in a warm place(85 F) until doubled (about 1 -1 ½ hours). Gently, lift dough and fold over in thirds, releasing some of the air but not all. Let stand again for 20 minutes.
