APPLE PULLED PORK SANDWICHES
Apple flavoured BBQ pulled pork sandwiches, served on crusty rolls with apple slaw. Great Fall eating!

- Place pork shoulder in a large, heavy bottomed Dutch oven or pot on the stove-top. If necessary, cut the pork in to a couple of large chunks to fit. Add all the rest of the ingredients to the pot. Cover and turn burner on to medium. After 10-15 minutes, stir the mixture well and flip the pork over. Cover pot, reduce heat to medium-low and allow to cook for 3-4 hours, flipping pork and stirring several times during that period.
- For the Slow cooker, cook on high for about 4-5 hours or on low for 7-8 hours. If the roast is exposed on the top, I like to open the lid a couple of times during cooking and flip it over, but it isn't really necessary if it's not convenient. Cook for 20-30 minutes at the end with the lid off to thicken the sauce.
- When pork is tender enough to pull apart with a fork, remove the pork to a rimmed baking sheet. Remove and discard any bone. Using two forks, shred the pork, discarding any fatty pieces. Return the shredded meat to the pot with the sauce and stir well. Allow to simmer over low heat for about 30 minutes, or until the sauce thickened.
- For the apple coleslaw, combine all the coleslaw ingredients in a medium bowl and stir together well.
- Serve on buns, topped with apple coleslaw.

BBQ PULLED PORK SANDWICH

- 4 hamburger buns, warmed
- For the BBQ sauce: Combine the ketchup, brown sugar, vinegar, Worcestershire, cayenne, red pepper flakes and salt and black pepper in a small bowl.
- For the spice rub: Combine the paprika, oregano, black pepper, brown sugar, salt and cayenne in a medium bowl and toss with your fingers to mix. Rub the spice mixture onto the pork on all sides.
- Place the pork in a slow cooker insert. Add 1/2 cup BBQ sauce and cover the slow cooker. Cook on high until the pork is fork-tender, 4 to 5 hours, or on low, 8 to 10 hours. Transfer the pork to a carving board. Let the pork stand, about 5 minutes.
- Meanwhile add 2 tablespoons of the simmering pork liquids to the remaining BBQ sauce. Bring the BBQ sauce to a simmer in a small saucepan over low heat, about 10 minutes.
- For the tangy carrots: Pour the vinegar into a medium bowl and sprinkle with the granulated sugar. Whisk until well combined. Add the parsley and carrots and toss. Sprinkle with salt and black pepper.
- Using two forks, shred the pork and discard any excess fat. Heap the pork onto the buns and top with extra BBQ sauce and the tangy carrots. Serve immediately.
PULLED PORK AND APPLE GRILLED CHEESE
Steps:
- Add butter to a pan over medium-low heat. Add two slices of bread to the pan.
- Add cheddar cheese and pulled pork. Thinly slice the apple and layer it on the sandwich. Add the last two slices of bread on top.
- Cook on each side for a few minutes until the cheese melts and each side gets golden brown. It may be helpful to put a lid on the pan to help the cheese melt.
- Remove from pan and drizzle with honey. Enjoy!
GRILLED APPLE AND SWISS CHEESE SANDWICH
My mother taught me this recipe, and it has become one of my favorite quick meals. I find that Granny Smith apples work best, as well as a crunchy seed bread.

- Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. - Spread butter on 1 side of each slice of bread; flip, so that buttered sides are facing down. Top 2 slices of bread with apple slices, 1/3 cup Gruyere cheese, and a sprinkle of thyme leaves. Place the other 2 slices of bread on top, buttered sides facing up.
- Heat a large skillet over medium-low heat. Add sandwiches to the hot pan and cook until bread has toasted and cheese has slightly melted, 4 to 5 minutes. Flip carefully using a spatula, pressing down lightly. Cook sandwiches until golden brown and cheese has melted, 3 to 4 minutes more, watching and adjusting heat if necessary to keep bread from burning before cheese has melted.

GRILLED MAC AND CHEESE WITH PULLED PORK

- Put 6 tablespoons butter and the mayonnaise in the bowl of a stand mixer; beat with the paddle attachment until combined, scraping down the sides of the bowl as needed. Set aside.
- Spread the macaroni and cheese in an 8-inch-square baking dish to about 3/4 inch thick. Cover with plastic wrap and chill until firm, about 45 minutes. Cut the macaroni and cheese into squares that are slightly smaller than the bread slices.
- Meanwhile, melt the remaining 2 tablespoons butter in a skillet over medium heat. Add the onions and cook, stirring, until caramelized, about 20 minutes. Season with salt and pepper.
- Combine the barbecue sauce and pulled pork in a saucepan over low heat and cook until warmed through, about 5 minutes.
- Generously spread the butter-mayonnaise mixture on one side of each bread slice. Flip over half of the bread slices; layer 1 slice of cheddar, 1 macaroni-and-cheese square and another slice of cheddar on each. Top each with one-quarter of the pulled pork and caramelized onions and another slice of cheddar. Top with the remaining bread slices, buttered-side up.
- Heat a large skillet or griddle over medium-low heat. Working in batches, cook the sandwiches until the cheese melts and the bread is golden, about 5 minutes per side.
APPLE GRILLED CHEESE SANDWICH
This is another one of my creations. I love grilled cheese sandwichs and Im always trying to make new versions! I reallllllly liked this one! Please only use a tart apple like a granny smith; sweet apples may produce an undesireable result. I really loved this sandwich!!!

- First core your apple, and cut it in half.
- Slice very thin slices from the end of one half, until you have enough to cover your bread (not overlapping. Now take your shallot, and shave paper thin slices, about 4 or 5- reserve rest of shallot for another use. Then take your garlic clove, and shave paper thin slices of garlic from the clove, about 4 or 5 slices, reserve rest of garlic for ).
- Heat 1/2 tablespoon butter and lightly fry the apple, shallot and garlic. Fry for about 2 minutes and then remove to a plate.
- Take one slice of bread, butter one side, and then salt it and place it in the pan, and continue by placing 1 slice of cheese on the bread, layer the apple slices evenly over the piece of bread and randomly place the garlic and shallot pieces, place other piece of cheese on top, and then take second piece of bread, butter and salt one side, and place it on top of the cheese slice, butter side up.
- Fry the sandwich over medium heat until browned on both sides, pressing down on the sandwich whiling cooking to slightly flatten it out; When browned nicely, cut in half and serve.

- Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove.
