My pumpkin bread recipe is my favorite fall treat ever!

Number Of Ingredients 14

1.5 cups coconut sugar
1/2 cup melted coconut oil
2 eggs
1/3 cup water
1/2 of a 15oz can of pumpkin (about 2/3 cup)
1 1/4 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9×5 inch loaf pan.
  • In a large mixing bowl, cream together the coconut sugar, coconut oil and eggs using a hand mixer or stand mixer; beat until smooth. Add water and beat until well blended. Mix in pumpkin puree until combined.
  • In medium bowl, combine the whole wheat flour, all purpose flour, ginger, allspice, cinnamon, cloves, baking powder, baking soda, and salt using a wooden spoon. Add dry ingredients to egg/sugar/pumpkin mixture and blend just until all ingredients are mixed. Pour into your prepared pan.
  • Bake until a toothpick comes out clean, 35-45 minutes. Don't over bake!
  • Cool completely on a wire rack and store in an airtight container.

  • In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
  • In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.

1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
4 large eggs, room temperature
1 can (15 ounces) pumpkin
1/2 cup molasses
3-1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
2-1/2 teaspoons ground ginger
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 cup shredded peeled apple
Confectioners' sugar
SAUCE:
1/2 cup butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Stir in pumpkin and molasses. Combine the flour, baking powder, baking soda, ginger, salt and pie spice; add to the creamed mixture. Beat just until combined. Fold in apple. , Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioner's sugar., For sauce, in a large bowl, beat the butter, confectioners' sugar and vanilla until smooth. Serve with gingerbread.

Steps:

  • Preheat oven to 350F.
  • Mix together flour and sugar.
  • Use a pastry blender to mix in butter until mixture resembles fine crumbs.
  • In a 9-inch square baking pan, place 1 3/4 cups of the mixture and press evenly along the bottom to form a crust.
  • Add pecans, baking soda, ginger, cinnamon, salt, and cloves to crumb mixture and stir well.
  • Mix in buttermilk, molasses, pumpkin and egg.
  • Pour batter on top of crust in the baking pan.
  • Bake at 350F for 40-50 minutes or until you can insert a toothpick in the center and it is clean when you remove it.
  • To prepare sauce, melt the butter in a saucepan and stir in the brown sugar and corn syrup.
  • Stirring constantly, bring mixture to a boil, and cook for 1 minute or until sugar dissolves.
  • Gradually add whipping cream and return to a boil.
  • Remove from heat.
  • To serve, spoon warm sauce over warm gingerbread.
  • If desired, place ice cream on top of gingerbread, spoon sauce over ice cream, and sprinkle with nuts.

This is my favorite pumpkin recipe of the season... Adapted from a pumpkin bread recipe i found on Allrecipes.com, my version is more like spicy gingerbread with the added richness of pumpkin!! It is wonderful with a cup of tea and keeps well in the fridge for up to two weeks. Also makes a nice gift! For muffins, reduce cooking time by 30 minutes (i like to add pecans and raisins to the batter for chewy-crunchy muffins, yum!)--. Enjoy!
