Steps:
- Soak the different colors of hominy in separate bowls of water overnight.
- In a small, dry skillet over high heat, roast the cumin and coriander seeds until they toast, about 2 minutes. When cool, grind in a food mill, mortar and pestle or clean coffee grinder.
- Strain the hominy and put each color variety in its own pot, generously covering with water. Add 1-ounce of the baking soda to each pot, bring to a boil, reduce heat and simmer for about 2 hours. Add more water as needed. Check hominy for tenderness; it does not have to be completely cooked as it will be cooked further in the stew. Strain and rinse the hominy.
- While the hominy is cooking, soak the dried chiles in hot water. When softened, remove the seeds and stems, then dice.
- In a separate stockpot, heat the olive oil and saute the onions and garlic with the salt, black pepper, oregano, cumin and coriander until the onions are translucent. Add the diced tomatoes, tomatillos, chiles, vegetable stock and cooked hominy. Bring to a boil, then reduce heat to a simmer for about 1 1/2 hours. The posole is done when the hominy is cooked through. Add the lime juice, cilantro, and season with salt and pepper, to taste.
- Posole is also delicious for breakfast, served over cornbread with a poached egg on top.
PUMPKIN POSOLE
Great comfort food. I love to dish up a mug of this stew and dip some really good wheat or pumpernickel bread into the broth during cold winter nights (yes, I do get cold in Arizona).

- HEAT oil in a large saucepan over medium-high heat.
- Add chicken, onion and carrot; cook for 3 to 4 minutes or until chicken is no longer pink.
- Add celery and bell pepper; cook for 3 to 4 minutes or until vegetables are crisp-tender.
- STIR in pumpkin, broth, hominy, sour cream, cilantro, salt, pepper, oregano, cumin, and nutmeg.
- Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes or until flavors are blended.
TURKEY POSOLE
An authentic rural Mexican dish usually prepared with pork, posole is traditionally eaten at New Year's. This version is a great way to unload those turkey leftovers! Garnish with crisp tortilla chips, shredded green cabbage, and a squeeze of lime.

- In a large Dutch oven, heat oil over medium heat. Cook onions and poblano chiles in oil until soft. Stir in garlic, and cook for one or two minutes. Season with chile powder, cumin, and oregano.
- Stir in turkey broth, cooked turkey, canned green chile peppers, cannellini beans, and hominy. Stir in water if more liquid is needed to just cover everything in the pot. Season to taste with salt and pepper. Bring to a boil, then reduce heat to low, and cover. Simmer, stirring occasionally, for about an hour to blend flavors.

Steps:
- Heat oil in large saucepan over medium-high heat.
- Add chicken, onion, and carrot, cook fo 3-4 minutes or until chicken no longer pink.
- Add celery and bell pepper; cook for 3-4 minutes or until vegetables are slightly tender.
- Stir in pumpkin, broth, green chili, hominy, sour cream, cilantro, and remaining spices/herbs.
- Reduce heat to low; cook, stirring occasionally, for 10-15 minutes or until flavors are well blended.
- CROCK POT INSTRUCTION:.
- Follow step 1-2 as stated above.
- Once chicken is cooked; add to crockpot with remaining ingredients (with exception of sour cream!).
- Cook on low 6-8 hrs; stir in sour cream prior to serving.

- In a Dutch oven, saute chilies in 1 tablespoon oil for 1-2 minutes or until heated through, pressing with a spatula (do not brown). Using a slotted spoon, transfer chilies tn a bowl; add boiling water. Soak for 20 minutes or until softened; remove stems and seeds, reserving water., In the Dutch oven, brown pork in remaining oil in batches, sauteing onion and garlic with the last batch of pork. Return pork to pan and add broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until meat is tender., Transfer chilies and soaking liquid to a blender; cover and process until smooth. Strain through a fine strainer, reserving pulp and discarding skins. Add pulp to pork mixture. Stir in the hominy, oregano and salt. Cover and simmer for 20 minutes. Serve with toppings of your choice.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Place the peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place the blackened peppers into a bowl and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Remove plastic wrap and carefully remove and discard pepper skins. Dice peppers.
- Heat olive oil in a large pot over medium-high heat. Cook and stir onion and garlic in hot oil until tender and fragrant, 5 to 10 minutes.
- Stir pork into onion and garlic; cook and stir until pork is browned, 5 to 10 minutes. Add diced green chiles to pork; cook and stir until fragrant, 5 minutes.
- Pour white hominy, yellow hominy, chicken broth, water, cumin, chili powder, salt, and black pepper into pork mixture. Bring mixture to a boil and cook for 15 minutes; reduce heat to medium-low and simmer until flavors blend and pork is tender, at least 1 hour.

- Drain and rinse the hominy. Put it into a large pan and cover with water by 1-inch. Add the bay leaf and garlic and bring to a boil over a high heat. Cover, and reduce the heat to low. Simmer for 2-3 hours or until the hominy has burst into ‘flowers”. Check the pot from time to time and add more water if it looks dry.
- While the hominy is cooking, with a peeler, take off little patches of skin all over the pumpkin halves until they look polka dotted! This is purely decorative and can be left out if you don''t have a lot of time. (FYI - butternut squash has harder skin and must be completely peeled) Cut the halves into ½ " dice. Set aside.
- Heat the oil in a large soup pot over a medium-high flame. When it ripples, add the onion and sauté stirring until it starts to soften and turn transparent. Add the pumpkin cubes sprinkle with a little sea salt, mix well and cover. Turn the heat down to medium low and sweat the vegetables for about 10 minutes or until the pumpkin has started to soften, and the onion is really soft. The onion should not brown so stir the pot occasionally to make sure it doesn’t stick. Add 6 cups of water or stock, and the cooked hominy along with any liquid left in the pot. Bring to a boil, cover then turn the heat to medium low and simmer until the pumpkin is tender but not mushy, about 20 minutes.
- While the soup is cooking, prepare the garnish. Mix the cilantro, shallot and jalapeno together in a little bowl. Put the other garnishes into separate bowls. Eat the soup with a squeeze of lime juice, and a little of the other garnishes to taste.
VEGETARIAN PUMPKIN POSOLE - BEYOND MERE SUSTENANCE

- Add posole to a large soup pot or dutch oven. Cover with water to 2" above the posole. Add salt, place pot on high heat until it boils. Reduce heat to a simmer. Simmer on low heat until posole is al dente (barely tender) - about 45-50 minutes. Drain, and set aside.
- While posole cooks, prepare squash. See the post for additional information. Cubes may range from 1/2-1" in size. Toss with about 1 tablespoon of olive oil. Spread out on a baking sheet. Roast until edges begin to brown and squash is tender but not soft. Set aside.
- In soup pot or dutch oven (the one used to boil posole is fine provided it is now empty and dry), add remaining tablespoon of olive oil. Add chopped onion and minced garlic. Cook, stirring occasionally, until the onion is transparent. Add ground cumin and Mexican oregano. Stir another minute or so until fragrant.
