PURE COMFORT HOT BUTTERED RUM

Steps:
- In a large bowl, beat butter and brown sugar until fluffy.
- Beat in cream and icing sugar until smooth.
- Stir in spices.
- Chill for 30 minutes to firm up. Scoop out 2 tablespoons worth and roll into balls. Place in freezer to firm up before placing in a freezer container.
- To serve:
- Place rum, boiling water and a buttered rum ball in a mug. Stir and enjoy!

- In a stand mixer on medium speed, cream together butter, sugar, cinnamon, cardamom, nutmeg, cloves, and salt for 3 minutes. Use immediately (while at its soft & fluffy best!) or store in a covered container in the refrigerator. If storing in the refrigerator, know that the spiced butter will harden - simply take it out of the fridge 30 minutes prior to serving.
- To create a cup of hot buttered rum coffee, place 2 tablespoons of spiced butter in a medium cup. Pour in 2 ounces of rum (use more or less, to your liking). Then pour in coffee to fill the cup. Stir to incorporate/melt the spiced butter. Add a splash of cream or half & half. Garnish with whipped cream and a sprinkle of cinnamon, if desired.

- Put the rum, lemon peel, cinnamon and cloves in a pewter tankard or any heavy 12-ounce mug that has been rinsed in very hot water to warm it. Heat the cider or water to the boiling point and pour into the spiced rum. Add the pat of butter and stir well. Grate a little nutmeg on top. A cube of sugar may be added as well.
