PURPLE JELL-O POKE CAKE (1978)
Steps:
- Prepare cake mix as directed on package, baking in well-greased and floured 13- by 9-inch pan at 350 degrees for 30 to 35 minutes.
- Cool in pan 15 minutes, then poke with a fork at 1/2 inch intervals.
- Dissolve gelatin in boiling water.
- Add cold water and pour over cake in pan.
- Chill 3 to 4 hours.
- Top with thawed Cool Whip non-dairy whipped topping.

Never had a good name for this jello- my kids always ask me to make the purple jello.

Steps:
- Sprinkle gelatine over cherry juice. Pour cherries and geltine mixture in a small saucepan and heat until gelatine is dissolved.Remove from heat and allow to cool. Combine the cream cheese and gelatine mixture when cool in a large bowl. Add pineapple ,marshmallows and mix gently. Fold in Cool Whip, Pour into a glass bowl or mold and chill overnight.

- Set out the glasses that you are planning to put the dessert in as well as a larger bowl for any excess jello. For our recipe, these ingredients proved us with enough jello to make 4 glasses of jello AND enough to put aside in a large bowl for the kids to nosh on since they knew I would be taking pictures of the jello dessert glasses.
- Following the directions on the jello boxes prepare ONE box at a time! You will need to make one box, pour it into the glasses, then let it sit until the jello has set up. Then you will make another box of the jello according to directions, layer that color on top of the one that is already set up, then repeat the process until you get the layers you desire.
- For each dessert glass, for each color of the jello, I measured out 1/2 cup of jello for each layer. Then I topped it off with whipped cream.
