- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
- Mix potatoes, olive oil, Parmesan cheese, and rosemary in a bowl. Season with salt and pepper. Spread potato mixture over prepared baking sheet.
- Bake in preheated oven until potatoes are golden brown and tender, stirring once, about 40 minutes.

This wonderful dish is great for a cookout. I've even made it while camping, cooked over a charcoal grill. Squeeze the roasted cloves of garlic over your potatoes or on crusty buttered chunks of French bread. A taste sensation!

- Preheat oven to 400 degrees F (200 degrees C).
- Arrange potatoes in a large roasting pan; nestle garlic, cut sides up, between potatoes. Dot vegetables with butter and sprinkle with rosemary. Drizzle white wine and olive oil over vegetables; season with salt and black pepper.
- Bake in preheated oven until potatoes are golden and crisp and garlic is soft when squeezed, about 45 minutes.

- Remove papery outer skin from garlic; separate into cloves, leaving them unpeeled. In a large bowl, combine potatoes, onion and garlic. Add oil and salt; toss to coat. , Arrange potato mixture in a single layer in a 15x10x1-in. baking pan coated with cooking spray. Top with rosemary sprigs. Bake at 450° for 15-17 minutes or until garlic is tender. , Remove garlic cloves; cool. Stir potato mixture; bake 5-8 minutes longer or until potatoes are tender, stirring occasionally. Discard rosemary. Squeeze softened garlic into a large bowl; mash with a fork. Add mustard and vinegar. Add potato mixture and stir gently to coat.

- Scrub potatoes well, and toss into a baking dish with the garlic and the oil.
- Roll them around so they are well coated.
- Season generously with salt and pepper and sprinkle on the rosemary and vinegar.
- Roast in 200°C oven for at least one hour until potatoes are golden and cooked through.
- Smell is wonderful!

I saw this recipe on Food network. It is a Giada recipe and it looks tasty. You could use regular potatoes if you can't find the purple ones. I think the purple ones are used for the pretty color. I haven't made this yet. I wanted to put it here so I could find it again.

- Preheat the oven to 375.
- Season tilapia fillets with salt and pepper.
- Layer potato slices on top of the fillets, overlapping the potatoes to cover.
- Sprinkle the potatoes with salt and pepper and 1 tablespoon of the rosemary leaves.
- In a large, oven proof skillets melt the butter and the olive oil.
- When the butter is melted and the oil is hot, carefully add the fish, potato side down.
- Place the skillet in the oven and bake until the fish is cooked through, about 15 to 17 minutes.
- ROSEMARY CHIVE OIL.
- Combine the extra-virgin olive oil, chives, the remaining 1 Tbsp rosemary, salt and pepper in a small bowl.
- To serve, drizzle the rosemary chive oil over the fish, potato side up.
