RICE KRISPIES® CHOCOLATE PEANUT BUTTER BALLS

Steps:
- In large electric mixer bowl, beat peanut butter, margarine and sugar on medium speed until thoroughly combined. Add KELLOGG'S RICE KRISPIES cereal, mixing thoroughly. Portion mixture, using rounded teaspoon. Shape into balls. Place each ball in paper cup. Refrigerate.
- Melt chocolate morsels and shortening in small saucepan, over low heat, stirring constantly. Spoon 1 teaspoon melted chocolate over each peanut butter ball. Refrigerate until firm. Store in airtight container in refrigerator.

ITALIAN RICE BALLS
These are served with Italian dinners as a side, like a bread. They're great with sauce and pasta dishes.

Steps:
- In a medium bowl, whisk together eggs, cheese, parsley, pepper, and 1 teaspoon salt. Cover and refrigerate.
- Pour water and 1 teaspoon salt into a large saucepan and bring to a boil. Stir in rice and reduce heat to low. Cook rice until water is almost absorbed, stirring frequently. Remove from heat and slowly pour in egg mixture, stirring rapidly to prevent egg from scrambling. Allow rice mixture to cool for 1 hour.
- Pour bread crumbs into a pile on one end of a cutting board. Dampen hands and roll rice mixture into 1 inch balls, then coat each one with bread crumbs.
- In a small, deep skillet, heat olive oil to 350 degrees F (175 degrees C). (Should have enough oil to completely cover rice balls.) Fry rice balls 6 at a time, turning as needed to ensure even browning. Drain on paper towels and serve warm.

PURPLE RICE BALLS
This is an addictive dessert treat which may be familiar to folks from Hawaii. Classic luau or party snack. While the dish is probably Filipino in origin, anybody who likes mochi or sweet rice snacks will like this. My mom made this when I visited home recently and it was wonderful!

Steps:
- Add sweet rice and pirurutong rice in rice cooker, along with 2 cups of water.
- Mix the rice up to get the two rice types combined, and cook.
- When the rice is done, use a wooden spoon and fold in the remaining ingredients. I find it easiest to do this while the rice pot is still in the cooker.
- Allow to cool for 15-20 minutes.
- Get a baking sheet or flat pan that will fit in your refrigerator.
- Line baking sheet with parchment paper or waxed paper.
- Use a small cookie dough scoop and scoop out balls of rice onto baking sheet.
- Place sheet in refrigerator.
- Once the rice balls have cooled, they may be transferred to a container for storage in the refrigerator.

- Lower-Calorie Directions:.
- Substitute 1 cup pourable Splenda and 1-1/2 cups unsweetened shredded coconut. When adding in to the rice, add in a bit of Splenda at a time or it may clump.
- Pirurutong rice: This is a Filipino rice which appears dark in uncooked form. You might be able to find it in Asian grocery stores or get some online. It may also go by the name "Purple Rice", you can find it online, too.
- This recipe was originally from Hawaiian Electric Company's website, I added lower-calorie directions (how I personally make the dish) and the coconut extract.

Steps:
- In a medium bowl, mix rice, spinach, cheese, lemon juice, salt, pepper and 2 eggs.
- Shape mixture into 1 inch balls.
- In a pie plate, using a fork, beat 1 tbls water with remaining egg.
- Dip rice balls in egg, then into bread crumbs to coat evenly.
- In a 5 quart Dutch oven, heat 3/4 inch of oil over medium heat.
- Fry rice balls a few at a time for 1 1/2 minutes or until golden brown, drain on paper towels and serve warm.
