Spicy Szechuan Green Beans image

I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

½ pound green beans, trimmed and cut into 1-inch pieces
¼ cup water
1 tablespoon minced ginger
2 cloves garlic, minced
1 teaspoon sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
½ teaspoon white sugar
¼ teaspoon red pepper flakes

Steps:

  • Combine green beans and water in a skillet over medium-high heat. Cover and cook, stirring occasionally, until beans are tender crisp, 4 to 5 minutes. Add ginger, garlic, and sesame oil; cook, stirring frequently, until garlic is lightly browned, 1 to 2 minutes.
  • Mix soy sauce, rice vinegar, sugar, and red pepper flakes together in a small bowl. Pour over beans and cook until sauce thickens enough to coat beans, 3 to 5 minutes.

1 tablespoon extra-virgin olive oil
1 tablespoon salted butter
1 1/2 pounds green beans, trimmed
1 red bell pepper, finely chopped
1 teaspoon red pepper flakes
Kosher salt

Steps:

  • Add the oil and butter to a skillet over medium-high heat. When the butter is melted and hot, add the green beans and bell pepper and toss to coat. Add the red pepper flakes and some salt and toss again. Cook, stirring frequently, until the beans are crisp-tender, about 5 minutes.

1 tablespoon extra-virgin olive oil
½ shallot, minced
½ jalapeno pepper, seeded and minced
8 ounces fresh green beans, cut into 2 inch pieces
½ teaspoon salt
1 tablespoon lemon juice

Steps:

  • Heat the olive oil in a large skillet set over medium-high heat. Add the shallot and jalapeno; cook and stir until tender, about 5 minutes. Add green beans and season with salt. Cook and stir until tender but still bright green, 4 to 5 minutes. Reduce heat and stir in lemon juice to loosen any bits from the bottom of the pan. Serve immediately.

1 lb green beans, trimmed
1 cup red wine vinegar
1/2 cup cider vinegar
1/4 cup balsamic vinegar
2 tablespoons mustard seeds
1 tablespoon black peppercorns
2 tablespoons salt
1 tablespoon sugar
2 teaspoons fennel seeds
2 teaspoons red pepper flakes, crushed
8 garlic cloves, chopped
8 fresh dill sprigs, chopped
4 bay leaves

Steps:

  • Cook the beans in a large saucepan of boiling water until crisp-tender, about 3 minutes. Drain and cool in a bowl of ice water. Strain and set aside in a shallow baking dish.
  • In a medium saucepan, combine the vinegars, mustard seeds, peppercorns, salt, sugar, fennel seeds, pepper flakes, garlic, dill and bay leaves over high heat. Bring to a boil, and cook for 1 minute to dissolve the sugar and salt.
  • Pour the vinegar solution over the beans to cover completely. Marinate, refrigerated for at least 24 hours. The beans will keep refrigerated for 3 to 4 weeks.

1/3 cup water
1 teaspoon salt
2 tablespoons ghee or 2 tablespoons butter
3 -4 garlic cloves (minced)
1 in knob ginger (minced)
2 teaspoons turmeric
2 teaspoons ground cumin
1/8 teaspoon cayenne
3 tablespoons sesame seeds

Steps:

  • Put the green beans, water, and salt into a bowl and set aside.
  • Meanwhile, melt the ghee in a large pan, then add the garlic, ginger, and spices and cook for about one minute.
  • Add the green beans. Water and all. Cover and cook 4-6 minutes, or until tender. Turn the heat off.
  • Add the sesame seeds and cook (over no heat) for 2 minutes. Serve hot.
