CANADIAN PORK SKEWERS
Steps:
- Combine all of the marinade ingredients together and add the pork cubes. Allow to marinate for at least 1 hour, but for best results marinate overnight.
- Place your pork and skewer ingredients on your metal or wood skewers, alternating the ingredients as you go.
- Place the skewers on your preheated barbecue and cook, rotating as necessary, for about 10-15 minutes or until an internal temperature of the pork reaches at least 145°F.
- Serve!
QUEBEC MAPLE PORK SKEWERS
This is one of my favorite pork marinade! It tastes so good, everyone will want this recipe! You can also try this one with chicken. Enjoy! Note : the preparation time does not include the marinating time.

Steps:
- Blend all the ingredients for the marinade except the salt. Put the pork cubes in a large freezer bag, then put the marinade on top of the pork. Remove excess air from the bag and blend it well so all the pork cubes are covered in the marinade. Put the bag in the fridge for 6 hours or for the night.
- Use metal skewers to do this recipe.
- Set your oven on Broil. Put the pork & vegetables that you selected (I recommend bell peppers, onions, mushrooms, etc.) on your metal skewers. Put in the oven for 10-20 min (it depends of the force of your oven). Turn the skewers half-time so they'll cooked uniformly. Salt to taste before serving. If you salt the skewers before cooking them, the meat will loose a lot of juices, we don't want that! ;-).
- Serve on hot cooked rice or couscous.

- Thread a small chunk each of Black Forest ham, weisswurst or bratwurst, and slab bacon onto 12 small skewers. Bake on a foil-lined baking sheet at 450 degrees F until just starting to brown, about 10 minutes. Mix 3 tablespoons maple syrup with a pinch of cayenne; brush on both sides of the skewers and sprinkle generously with coarsely ground black pepper. Continue baking until the bacon is crisp, 7 to 9 more minutes. Brush with the remaining syrup mixture and sprinkle with more black pepper.
MISO-MAPLE PORK & PEAR SKEWERS
Steps:
- In a bowl, combine all the marinade ingredients. Set aside.
- Add the meat to the miso marinade. Marinate in the fridge for 1 hour.
- Preheat the barbecue to high. Oil the grill.
- Thread the meat onto skewers, alternating with pear pieces. Oil the meat.
- Grill the kebabs for about 8 minutes or until the meat reaches pink doneness, turning halfway through cooking.

- Cut the pork into bite-size chunks and cut the spring onions into 3cm lengths. In a bowl mix together the herbs, lemon zest and juice, honey, oil and a little seasoning. Add the pork and onions and stir well to coat all the pieces of meat evenly.
- Thread the meat and onion alternately onto 4 or 8 skewers. Heat barbecue, griddle pan or grill until hot. Cook the skewers for 6-8 mins, turning occasionally, until browned.

- In a medium bowl, mix teriyaki sauce, red wine vinegar, vegetable oil, brown sugar and red pepper flakes. Place pork tenderloin cubes in the mixture. Toss to coat.
- Marinate for at least 4 hours.
- Preheat an outdoor grill for high heat and lightly oil grate.
- Place pork on skewers. Cook on the prepared grill, turning frequently.
- Simmer remaining marinade in a small saucepan while skewers are on the grill.
- Grill 10 to 12 minutes, or to desired doneness.
- Remove from grill, remove pork from skewers and toss in prepared sauce.
- Serve immediately.

- Preheat the oven to 400°F (200°C), and double line a large baking sheet with aluminum foil fitted with a wired rack; set aside.
- In a small mixing bowl add maple syrup and brown sugar, then mix until combined with no lumps.
- Place bacon strips evenly on the wired rack and generously brush maple syrup mixture over the top of the bacon and bake for 12 to 15 minutes. Remove from the oven, flip each strip and brush on the remaining mixture. Return to the oven and continue to cook for another 8-10 minutes or until it reaches your desired level of crispiness, then garnish with coarse black pepper.
- Heat a skillet over medium heat. Butter one side of each slice of bread. Place the buttered side down on the skillet, add 2 slices of cheddar cheese then top with the remaining slice of bread, buttered side out.
- Cook until bread is toasted and golden and cheese starts to melt, about 2 minutes. Flip, and cook until cheese melty and bread toasted and golden. Remove from heat, and set aside for 5 mins.
- Cut each grilled cheese sandwich into even 1.5x1.5-inch squares, set aside.
- Assemble each skewer starting with a grilled cheese square, then bacon strip, alternating until the end by spiralling the bacon strip in-between each square until finished. Serve and enjoy!

- Slice the pork neck into 4cm strips, then toss with your chosen glaze. Leave to marinate for 2 hrs, then thread onto three large skewers. Light the barbecue.
