2 tablespoons plus 2 teaspoons extra-virgin olive oil plus additional for brushing
1 1/2 pounds 1-inch-diameter fingerling potatoes, halved lengthwise
2 green onions, thinly sliced
1/4 cup fresh Italian parsley leaves
2 tablespoons fresh tarragon leaves
1 1/2 tablespoons Banyuls vinegar or red wine vinegar
1 tablespoon coarse-grained Dijon mustard
2 hard-boiled eggs, peeled, chopped

Steps:

  • Position rack in bottom third of oven and preheat to 400°F. Brush heavy large rimmed baking sheet with oil. Place potatoes and 2 tablespoons oil in large bowl. Sprinkle with salt and pepper; toss. Arrange potatoes, cut side down, on prepared baking sheet. Roast until potatoes are brown on cut side, about 23 minutes. Using tongs, turn potatoes over. Roast until crisp, deep golden, and tender, about 12 minutes longer. Season to taste with salt and pepper.
  • Stir green onions, parsley, tarragon, vinegar, mustard, and 2 teaspoons oil in small bowl. Season with salt and pepper.
  • Transfer potatoes to dish. Spoon chopped eggs and herb salad over.

3 1/2 pounds fingerling potatoes, unpeeled, cut into 3/4"-1" pieces
1 tablespoon kosher salt plus more for seasoning
9 tablespoons (or more) extra-virgin olive oil, divided
2 tablespoons brown mustard seeds
3 medium leeks (white and palegreen parts only), halved lengthwise, cut crosswise into ¼" slices (about 5 cups)
1 tablespoon (or more) white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper

Steps:

  • Place potatoes in a large pot. Add enough cold water to cover by 3". Stir in 1 tablespoons salt and bring to a boil. Reduce heat to medium and simmer until potatoes are tender, about 10 minutes. Drain. Transfer to a large rimmed baking sheet and let cool slightly.
  • Heat 3 tablespoons oil in a small skillet over medium-high heat. Add mustard seeds to skillet and cook, stirring occasionally, until seeds start to pop, about 2 minutes. Pour oil with seeds into a large bowl.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Add leeks, season with salt, and cook, stirring occasionally, until just tender, 10-12 minutes.
  • Whisk remaining 4 tablespoons oil, vinegar, Dijon mustard, and 1 tablespoon water into mustard-seed oil. Add potatoes and leeks; toss to coat. Season with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover; chill. Return to room temperature before serving, adding more oil and vinegar if dry.

2 pounds purple and/or white fingerling potatoes, scrubbed
1 pound green beans, trimmed
1/4 cup chopped mixed fresh herbs such as chives and garlic chives (with blossoms, if desired) and thyme, parsley, mint and summer savory leaves
2 tablespoons extra-virgin olive oil
1/2 teaspoon freshly grated lemon zest

Steps:

  • In a large kettle, simmer potatoes in salted water to cover until tender when pierced with a fork, about 10 minutes, and drain in a large colander.
  • In a large saucepan, cook beans in 3 inches salted boiling water over high heat until crisp-tender, about 3 to 5 minutes. With tongs or a slotted spoon, transfer beans to colander with potatoes and drain well.
  • In a large bowl, toss together warm potatoes, beans, herbs, oil, zest, and salt and pepper to taste. Salad may be made 1 day ahead and chilled, covered.
  • Serve salad warm or at room temperature.

4 tablespoons cider vinegar
3 fresh jalapeño chiles, seeds and ribs removed from 2 of them
2 cups fresh cilantro sprigs, coarsely chopped
1 1/2 shallots, coarsely chopped
1 garlic clove, coarsely chopped
1/4 cup extra-virgin olive oil

Steps:

  • Cover potatoes with salted cold water by 1 inch, then simmer until just tender, 10 to 15 minutes. (Potatoes will continue to cook after draining; do not overcook or they will break apart.)
  • Drain potatoes and rinse under cold water until slightly cooled. Halve lengthwise and while still warm gently toss with 1 tablespoon vinegar. Cool potatoes to room temperature, then season with salt and pepper.
  • While potatoes cook, coarsely chop jalapeños and pulse in a food processor with cilantro, shallots, garlic, oil, and remaining 3 tablespoons vinegar until finely chopped.
  • Toss potatoes with salsa.

Kosher salt
Freshly ground black pepper

1 jalapeño, thinly sliced into rounds, seeds removed if desired
1/4 cup (lightly packed) torn flat-leaf parsley leaves

Steps:

  • Preheat oven to 450°. Toss potatoes with 1/4 cup oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing once, until golden brown and tender, 30-35 minutes. Let cool slightly, then lightly flatten.

This autumnal salad is a kaleidoscope of shapes and colors, thanks to the scalloped half-moons of squash, wispy leaves of baby arugula, and shiny red jewels of pomegranate seeds. It's as visually pleasing as it is delicious. Boasting both tender greens and roasted potatoes, this dish is sort of a half salad, half starchy side dish. As such, you can serve it alone as an entrée or in smaller portions as an accompaniment. You can roast the potatoes and squash and make the dressing well ahead of time, then assemble at the last minute.

Yield SERVES 6 TO 8 AS A SIDE DISH, OR 4 TO 6 AS AN ENTRéE SALAD

Number Of Ingredients 12

1 1/2 pounds fingerling potatoes (about 16 medium)
1/2 cup plus 3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 medium delicata squash (about 2 1/2 pounds)
2 tablespoons minced shallot
2 tablespoons freshly squeezed lemon juice, more as needed
2 tablespoons champagne vinegar, more as needed
1 teaspoon Dijon mustard
1 teaspoon honey
10 cups packed baby arugula (about 8 ounces)
Seeds from 1 medium pomegranate (about 1 cup)
1 cup shaved or grated Parmigiano-Reggiano cheese

Steps:

  • Position a rack in the center of the oven and heat to 425°F.
  • Cut the potatoes lengthwise into 1/4-inch-thick slabs. Mound on a large rimmed baking sheet, drizzle with 1 tablespoon of the oil and 1/4 teaspoon salt, and toss to coat the potatoes evenly. Arrange in a snug single layer and roast until just tender and starting to brown, 20 to 25 minutes.
  • While the potatoes are roasting, prepare the squash. Trim the squash, halve them lengthwise, and scoop out and discard the seeds and strings. Slice into thin half-moons, about 1/8 inch thick. Transfer to a large bowl, drizzle with 2 tablespoons of the olive oil, and sprinkle on 1/4 teaspoon salt. With your hands, gently toss to coat evenly.
  • When the potatoes are out of the oven, line 2 large rimmed baking sheets with parchment or a nonstick liner and arrange the squash slices across them. Roast, rotating the pans after 10 minutes, until the slices are just tender and starting to brown, 20 to 25 minutes. Be sure not to overcook, or the squash will dry out. Note: Some slices will be darker than others even when cooked perfectly; this provides textural interest and depth of flavor. When done, set aside and let cool to room temperature.
  • In a small bowl, combine the shallot, lemon juice, vinegar, mustard, honey, and 1/8 teaspoon salt. Whisk to blend, and slowly drizzle in the remaining 1/2 cup olive oil, continuing to whisk vigorously.
  • Just before serving, put the potatoes and squash in a large bowl and drizzle with the vinaigrette. Toss well with your hands, taste, and adjust with more vinegar, lemon juice, or salt as needed.
  • Add the arugula, half the pomegranate seeds, and half of the Parmigiano and gently mix in with your hands. To serve, sprinkle the salad with the remaining cheese and pomegranate seeds and top with a few grinds of black pepper.
