QUESO BURGERS
Delicious melty queso over grilled burgers. Tastes just like a fiesta in your mouth!

Steps:
- Melt velveeta and rotel in a medium saucepan over low heat. You can also melt in the microwave 3-5 minutes, stirring after 3 minutes.
- Preheat grill to medium and shape hamburger meat into 6 patties. Lightly season with salt and pepper. Grill 4 to 5 minutes each side or until no longer pink.
- To assemble the burgers, place burger on bottom bun and top with 2 Tbs melted cheese. Top with lettuce, tomato and top bun and enjoy!

QUESO FRITO BURGERS
Thick, juicy burger with lettuce, tomato, pickled onions, a beautiful slice of queso frito and a good slather of mayo-ketchup sauce.

- Season beef with salt, pepper, oregano and homemade sofrito. Divide the meat into four. Take ¼ of a pound of the meat and roll into a ball with the palm of your hands. Then, press lightly to make into patties.
- Cook the beef in a hot pan over medium high heat for about 3-4 minutes in each side. Remove from the pan and set aside.
- In a separate pan, heat vegetable oil over medium high heat. Add cheese. Cook each side until golden brown, about 2 minutes each side. Remove from the heat and set aside.
- In a small bowl, mix mayonnaise, ketchup and garlic powder until well combined.
- Toast the burger buns slightly and start building your burger. Top the bun with lettuce, tomato, burger, fried cheese and pickled onions. Add a good slather of the mayo-ketchup sauce to the top bun and place on top.
- Serve immediately.

HOUSTON TEXANS QUESO FRITO BURGER

- Once I saw that Fritos got their start in Houston, the direction for my Texans inspired burger was pretty well set. The burger itself is a straight forward beef patty, seared off on the stove (although the grill would be great too). But of course, we're not going to stop there. The real action comes in the topping. I make some queso with good old Velveeta cheese, and spices (go as hot as you want). Now the queso is great on it's own, but to add some more flavor, and importantly more texture, mix in some Frito corn chips. How could the best that combo, topped on a burger, not be great. Enjoy Texans fans! Ingredients Seeded burger bun 5 ounces of ground beef 6 ounces of Velveeta cheese Dash of hot sauce Dash of Worcestershire sauce Pinch of Cumin powder 4 Tablespoons of salsa Onion Fritos Corn Chips Salt Pepper Olive oil Directions Oil a skillet and place it over a medium-high heat. Saute half a sliced onion. Add salt and toss for 15-20 minutes over medium-low heat. Put the Velveeta cheese in a bowl. Add hot sauce, cumin powder, Worcestershire sauce, and 2 Tablespoons of salsa. Mix & toss, then microwave for 2 minutes. Wipe the pan and add more oil. Form a beef patty dimpled in the center to avoid shrinking, and season both sides with salt and pepper. Cook one side for about 3 minutes, then flip the patty and cook other side for about 2 minutes. Kill the heat, remove the patty, and let it rest on a plate. Top the patty with onions. Toast the bun. Put Fritos into the melted Velveeta cheese sauce and mix until coated. Plate the bun and place cooked patty upon it. Top with a generous helping of Frito Queso. Add top half of bun and cut the sandwich in half. Serve with a side of Fritos, of course. How can such a meaty, cheesy, crunchy combo be anything less than phenomenal? CHILE CON QUESO CHEESEBURGER
If you love Chile con Queso, sink you teeth into this cheesy gooey burger for a real taste explosion! Have a napkin and some tortilla chips ready to catch what your mouth misses because you will want to save every bite! Beer Recommendation: A rich malty, roasty beer that absorbs the heat and provides a great counterpart to chilies and grilled meat is a good choice to pair with these burgers. If you happen to find a Noche Buena, a great dark beer from Mexico, this would be my first choice. Second would be Negra Modelo, a slightly sweet brew with some fruitiness, it's malty for a Mexican beer and goes well with Anaheim and Jalapenos.

- Light your grill and when it is heated brush the grate with oil. Put the Anaheims in a small bowl with olive oil and toss to coat. Thread the jalapeños and garlic onto a metal skewer or a wooden one that has been soaked in water and grill until blackened all over. Repeat with the Anaheims using grill tongs to turn. Peel and remove stems and seeds from the chilies and discard. Peel garlic. Add tomatoes to a small bowl. Chop the chiles and garlic and add to the tomatoes. Fold in the cheeses, sprinkle with cumin, and chili powder and season with salt and pepper, toss.
- Cut eight 6"squares of wax paper; divide the beef among them. Pat each portion into a 5" round pattie that is a little thicker in the center. Using a 1/4 cup measure, mound one-fourth of the cheese mixture in the centers of 4 patties. Top with the remaining patties; press the edges to seal and pat smooth. Pat the centers so that the burgers are even. Brush with oil and season with salt and pepper. Brush the insides of the rolls with oil.
- Brush the grate with a little more oil and grill the burgers over a hot fire, turning once, about 7 minutes for medium to medium-rare meat. Lightly toast the rolls on the grill. Place the burgers on the rolls and top with lettuce leaves, onion and tomato. Serve with mayonnaise and ketchup.

- Heat grill to medium heat.
- Shape meat into 6 (1/2-inch-thick) patties. Grill 5 to 6 min. on each side or until done (160ºF).
- Meanwhile, microwave VELVEETA and tomatoes in microwaveable bowl on HIGH 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring after 3 min.
- Place burgers on bottom halves of buns; top each with 2 Tbsp. VELVEETA sauce. Cover with lettuce, tomato slices and tops of buns. Refrigerate remaining VELVEETA sauce to use as desired. (See tip.)
