Steps:
- In a medium bowl, whisk together the oil, mustard, vinegar and 1/4 teaspoon salt until smooth and emulsified.
- Meanwhile, bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Add the asparagus to the water and, depending on the size of the asparagus, blanch for 3 to 5 minutes. It should still have some bite left to it. Add the warm asparagus to the dressing and toss well to coat.
- Fan the asparagus out on a platter and sprinkle with the mizuna. Scatter the hazelnuts and goat cheese on top and drizzle with any dressing that may remain in the bowl.

- In a large saucepan, heat oil over medium heat. Add onion, garlic and pepper flakes; cook and stir until onion is softened, 4-5 minutes. Add asparagus and broth; bring to a boil. Reduce heat; simmer, covered, until asparagus is tender, 6-8 minutes. Remove from heat; cool slightly., Place nuts, basil and lemon juice in a blender. Add asparagus mixture. Process until smooth and creamy. Return to saucepan. Stir in almond milk, tamari sauce and salt. Heat through, taking care not to boil soup. If desired, top with shaved asparagus.

Steps:
- Heat olive oil in a saucepan over medium heat.
- Cook and stir garlic and green onions in saucepan until garlic is just golden, about 3 minutes.
- Cook and stir asparagus with garlic and green onions until slightly softened, about 2 more minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer until asparagus is tender, about 10 minutes. Turn off heat and allow to cool slightly.
- Pour soup into blender, filling no more than halfway full. Cover with a lid. Carefully start the blender, using a few quick pulses to get soup moving before leaving it on to puree. Puree in batches until smooth.
- Transfer soup back to saucepan and reheat. Season with salt and ground black pepper to taste.

- Melt 1 tablespoon butter in heavy medium saucepan over medium heat. Add chopped onion and cook until tender, stirring occasionally, about 8 minutes. Add flour and stir 2 minutes. Gradually mix in canned chicken broth. Bring mixture to boil. Add asparagus pieces and summer savory and simmer until asparagus is very tender, about 25 minutes. Cool slightly.
- Drain asparagus, reserving cooking liquid. Puree asparagus in food processor. With machine running, Gradually add 1/2 cup cooking liquid. Return mixture to saucepan. Season with salt and pepper. (Soup can be made 1 day ahead. Cover and refrigerate.) Bring soup to simmer. Ladle into bowls. Top with dollops of sour cream or yogurt, if desired.

- Heat the butter and oil in a large saucepan until foaming. Fry the asparagus tips for a few mins to soften. Remove and set aside.
- Add the shallots, asparagus stalks and garlic, and cook for 5-10 mins until softened but still bright. Stir through the spinach, pour over the stock, bring to the boil, then blitz with a hand blender.
- Season generously and add hot water to loosen if needed. Ladle into bowls and scatter the asparagus tips over each. Drizzle with olive oil and serve with sourdough bread, if you like.

- Break off bottom part of each asparagus stalk, and discard. Coarsely chop the rest of stalks, leaving 12 or 16 of the flower ends whole. Put butter or oil in a large, deep skillet over medium-high heat. A minute later, add asparagus and tarragon, raise heat to high, and cook, stirring occasionally, until nicely browned, about 10 minutes. Remove whole flower ends; set aside.
- Add stock and some salt and pepper; bring to a boil, reduce heat and simmer until asparagus is very tender, about 10 minutes. Cool at least a few minutes.
- Pour soup into a blender, in batches if necessary, and carefully purée. Return to pan, and, over medium-low heat, reheat gently. When soup is hot, adjust seasoning. Put 3 or 4 asparagus flower ends in each of 4 bowls; ladle in soup, and serve.

The first time I made this was when my parents came over to my house for dinner. I was making a hazelnut crusted mahi mahi for dinner and needed the perfect side dish to go with it. Well, I had asparagus and hazelnuts, so I decided to throw this together and am I glad that I did! It has quickly become one of our favorite ways to eat asparagus. The recipe came from my Mayo Clinic Cookbook.

- In a large pot fitted with a steamer basket, bring about 1 inch water to a boil. Add the asparagus, cover, and steam until tender-crisp, about 4 minutes. Remove from the pot.
- In a large bowl, combine the asparagus, garlic, chopped parsley, hazelnuts, 1/4 teaspoon lemon zest, lemon juice, olive oil and salt.
- Toss well to mix and coat.

ARTICHOKE-HAZELNUT SOUP

- Peel leaves from artichokes. Remove chokes with a spoon and discard. In a food processor, puree the artichoke bottoms with lemon juice until smooth. Reserve.
- Spread the hazelnuts in one layer in a 10-inch round dish. Cook, uncovered, at 100 percent power 7 minutes in a large oven, or 9 minutes in a small oven. Pour the hazelnuts onto a clean kitchen towel, fold it over and rub until most of the skins are removed. Process the nuts in a food processor or blender until finely ground.
- In an 8-cup glass measure whisk together the artichoke puree, ground nuts, broth and cream. Season with salt and pepper.
- Heat, uncovered, at 100 percent power 6 minutes, stirring twice.

- In 12-inch skillet, heat water to boiling. Add asparagus. Heat to boiling; reduce heat to medium. Cover and cook 4 to 6 minutes or until crisp-tender. Drain; set aside.

- In a large saucepan, soften the onions in the butter. Meanwhile, trim about 5cm off the ends of 16 of your thinnest asparagus spears and set these aside. Roughly chop the remaining asparagus and stir into the onions. Cook for a few mins, then tip in the stock. Cover and boil for 10 mins, then uncover, stir in the peas and cook for 2 mins more.
- Whizz the soup with a blender until smooth, then return to the pan. Season well and add a splash more water if it looks a little thick.
- Meanwhile, cook the reserved asparagus tips in boiling water until just cooked, then drain and dry on kitchen paper.
- When you're ready to serve, warm the soup gently. Brush the baguette slices with the hazelnut oil and toast, then spread with some goat's cheese and top with a couple of the asparagus tips, plus a sprinkling of hazelnuts. Ladle the soup into bowls, float a toast on each with a few pea shoots and drizzle with a little more hazelnut oil. Serve extra toasts on the side.
