1 tablespoon unsalted butter
2 garlic cloves (minced)
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups half and half
1 tablespoon cornstarch
16 ounces sharp white cheddar cheese (freshly grated)
8 ounces monterey jack cheese (freshly grated)
1 pound chorizo
1/2 sweet onion (diced)
1/4 cup chopped fresh cilantro
1 lime (juiced)
1/4 teaspoon salt
8 4-inch flour or corn tortillas
8 hard-shell corn tortillas

Steps:

  • Heat a saucepan over medium heat and add the butter. Stir in the garlic. Add the salt and pepper. Cook for just about 60 seconds. Slowly stream in 1 cup of the half and half, whisking the entire time. In a bowl, whisk together the remaining 1/2 cup half and half and cornstarch until no lumps remain to create a slurry. Stir the slurry into the saucepan and cook for a minute until the milk thickens. Reduce the heat to low.
  • Stir in the grated cheese, one small handful at a time, until melted.
  • Heat a large skillet over medium heat and add the chorizo, breaking it apart with a wooden spoon. Cook, stirring often and crumbling the chorizo apart, until it's browned, about 6 to 8 minutes.
  • In a bowl, stir together the onion, cilantro and lime juice with a pinch of salt.
  • To build the tacos, spread a few tablespoons of the queso on the flour tortilla. Wrap it around one of the hard shell tortillas. Fill the hard shell with the crumbled chorizo. Top with the onion and cilantro mixer. Repeat with remaining ingredients and serve with the extra queso!

2 garlic cloves, finely minced
4 tablespoons (1/4 cup) butter
1/4 cup all-purpose flour
1 cup whole milk
1/4 cup heavy cream (or use more whole milk)
6 ounces Monterey Jack cheese, coarsely shredded
6 ounces Quesadilla or Oaxaca cheese, coarsely shredded
Kosher salt and freshly ground black pepper, to taste
2 poblano peppers, cored, seeded and thinly sliced
1 pound fresh chorizo, removed from casings
Eight 6-inch flour tortillas
Eight hard corn taco shells
4 green onions, white and green parts thinly sliced
Cilantro leaves, picked from stem
Crumbled Cotija cheese
Crema or sour cream
Lime wedges

Steps:

  • Preheat the oven to 200°. Place the hard shell tacos on a baking sheet in a single layer and leave in the oven to warm while you prepare the rest of the recipe. (This will help keep your queso melty when you're eating!).
  • To make the cheese sauce: Melt the butter in a saucepan over medium heat. Add the flour and whisk to combine; cook for 3 to 4 minutes. Slowly whisk in the milk, ensuring no lumps form. Cook until thickened and coats the back of a spoon, about 5 minutes. Lower the heat and slowly whisk in the cheeses. When smooth, lower the heat and keep warm.
  • In a large skillet, add about 1 teaspoon of vegetable oil and preheat over medium-high heat. When hot, add the poblano peppers and a pinch of salt; sauté, stirring frequently, until softened and pliable, about 6 to 8 minutes. Transfer to a bowl.
  • Add another teaspoon of vegetable oil and the chorizo. Use the back of the spoon to break the chorizos up as it cooks. Cook for 9 to 10 minutes, until cooked through, browned and slightly crispy. Transfer to a paper towel-lined plate to drain.
  • To assemble, toast the flour tortillas over the open flame on a gas burner, or warm in the microwave until pliable. Spread a thin layer of the cheese sauce all over one side of the tortilla and place the warm taco shell in the center, folding up the sides and gently pressing together to adhere the tortilla and taco shell to one another. Continue until all of the taco shells are assembled.
  • To assemble: layer the poblano pepper strips, chorizo, green onions, cilantro, and Cotija in the shells. Drizzle with crema, if desired, and squeeze the lime over top. Eat them fast and while they're hot!

The dish is often prepared tableside in restaurants, where it is flambéed and presented bubbling hot in small casserole dishes as an appetizer. In this version, chorizo is sautéed until crisp and golden, then combined with queso Oaxaca for a simple, yet no less delicious, snack. Spoon the queso onto soft tortillas and serve individually, or set the pot between a group of people and dig in.

½ lb ground chorizo
5 flour tortillas, 6 in (15 cm)
6 oz Oaxaca queso
kosher salt, to taste

Steps:

  • Preheat the oven to 450°F (230°C).
  • Crumble the chorizo into a large pan over high heat and cook until the fat has rendered and the chorizo caramelized and cooked through, about 10 minutes. Turn off the heat and arrange the tortillas on top of the chorizo to warm.
  • Meanwhile, tear the cheese by hand into a small baking dish. Season the cheese with salt, if needed. Transfer to the oven and bake until the cheese is melted and bubbly. Top with the chorizo.
  • Serve the queso fundido with the warmed tortillas.

5 drops hot pepper sauce (such as Tabasco®)
12 corn tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
  • Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.

This cast iron skillet queso fundido with Oaxaca cheese, Monterey Jack, roasted poblano pepper, and Mexican chorizo, is the ultimate party dip. This easy queso fundido recipe only has 4 ingredients, but is packed full of flavor.

8 oz. Oaxaca Cheese, freshly grated
8 oz. Monterey Jack Cheese, freshly grated
1 large poblano pepper
1 cup diced white onion
1 tbsp avocado oil
8 oz. Mexican Chorizo
Fresh cilantro
2 Roma tomatoes, diced
Tortilla chips and/or warmed tortillas

Steps:

  • Put oven on high broil, and place a whole poblano pepper on a small sheet pan. Broil until it's charred on each side (about 10 minutes total). Remove from oven and cover with foil, allow the pepper to steam for 5 minutes, this helps the skin easily peel off. Peel the skin off the poblano pepper, then dice, discarding the seeds.
  • Preheat oven to 400F degrees
  • In a cast iron skillet, over medium/high heat, add in the chorizo. Cook the chorizo fully through, breaking it up into smaller pieces as it cooks. Use a slotted spoon and set aside.
  • Lower the heat to medium, add in avocado oil, diced onion and roasted poblano peppers. Sauté until the onion becomes translucent, about 4 minutes. Add onion and poblanos to the chorizo bowl and mix together.
  • Turn the heat off and add half the grated cheese to the bottom of the skillet evenly. On top of the cheese, add in the chorizo, onion, poblano mix, and evenly spread. Add the rest of the cheese on top.
  • Place in the oven for 8-10 minutes, until the cheese is browned and bubbling.
  • Remove from the oven, garnish with cilantro and roma tomatoes, and serve immediately in the cast iron skillet.
  • Use tortilla chips or scoop the queso fundido into warmed tortillas. Enjoy!

1 (16-ounce, bulk) package beef chorizo sausage, casing removed
1 cup medium chunky salsa, drained
1 cup shredded mild cheddar cheese
6 fajita-size flour tortillas
1 cup prepared guacamole (refrigerated section)
1/4 cup sour cream

Steps:

  • Preheat oven to 400 degrees F. In a large skillet, saute sausage over medium heat until browned, about 6 minutes. Drain 1/4 cup of oil from cooked sausage. Set sausage aside to cool. Stir salsa and cheese into sausage in skillet. Place 1 tortilla on a clean work surface. Spoon 1/4 cup of the sausage mixture down the center of tortilla. Fold tortilla in half, then roll up. Secure with toothpicks. Place on a foil-covered cookie sheet. Repeat 5 times. Bake until filling is hot and tortilla is crisp and golden brown, about 18 minutes. Cut taquitos in half crosswise. Serve hot with guacamole and sour cream.

1 teaspoon olive oil
2 links chorizo sausage, casings removed
1 small red pepper, stemmed, seeded and chopped
1 small green pepper, stemmed, seeded and chopped
1 small onion, chopped small
1 carrot, chopped
2 cloves garlic
2 cups canola oil, for frying
2 flour tortillas
2 tablespoons chopped fresh cilantro leaves
2 tablespoons apple juice
1 tablespoon yellow mustard
1 1/2 cups grated Cheddar cheese

Steps:

  • To make the taquito: In a large skillet, heat the olive oil over medium-high heat. Add the chorizo to the pan and break it up with a spoon. Cook the sausage until its browned on all sides. Remove the sausage from the pan and spoon out some of the oil leaving a bit in the pan. Add the peppers, onion, carrot, and garlic to the pan. Cook until the carrots are tender, about 8 minutes. Stir in the cooked chorizo.
  • To make the queso: In a sauce pan, combine the apple juice and mustard. Stir well and bring to a simmer over low heat. Stir in the Cheddar cheese. Cook and stir until the cheese is melted. Turn off the heat and cover the cheese sauce to keep it warm.
  • Pour the canola oil into a deep heavy skillet with high sides. Heat the oil over medium-high heat until it reaches 375 degrees F.
  • Heat the tortillas in the microwave for 30 seconds. Lay the tortillas on a plate and divide the meat mixture between them fold in 2 opposite sides then roll the tortilla tightly.
  • Fry the taquitos in the hot oil until golden brown, about 3 to 5 minutes. Drain them on paper towels to remove the excess oil.
  • To serve: Spoon some of the warm queso on each plate, slice the taquitos in half and place the 2 halves on each plate. Sprinkle the taquitos with chopped fresh cilantro and serve.
