Everyone needs a basic quiche recipe. This savory tart is the perfect make-ahead meal for brunches, lunches, and even dinner-but it's not always the healthiest option. So how do you slash the fat without compromising the flavor? Our basic quiche proves you can make a healthier-but just as indulgent-version. Make it, memorize the formula, then customize it with whatever ingredients you have on hand. Here's how we pulled it off: The Crust: The traditional quiche crust recipe-flour, butter, salt, and cold water-is a bit high in sat fat for our standards. For a healthier crust that captures the simplicity of the original recipe, Wholly Wholesome Organic Pie Dough (find it at Whole Foods) is, hands down, our top pick. No wonky ingredients, just flaky, buttery goodness. Try the whole-wheat version, which has over 2g of fiber per serving. For gluten-free crust, try making a quinoa pie crust or a sweet potato crust. The Custard: For your custard to set properly in the oven, use this easy ratio: 1 part dairy to 2 parts eggs. Classic custards use heavy cream, but 2% milk contains a fraction of the sat fat and is still plenty rich. Flavor your custard with salt, pepper, a pinch of nutmeg, and fresh herbs such as chives, oregano, parsley, or tarragon. The Filling: For a 9-inch quiche crust, you'll need about 1 ½ cups total of pre-cooked veggies, plus a little cheese. Meat is optional, but a small amount of bacon or ham gives a big flavor boost. For veggies, we love sliced mushrooms, broccoli or cauliflower florets, cubed sweet potatoes, diced bell peppers, or sliced cherry tomatoes. - Preheat oven to 400°.
- Pre-bake the crust: Roll dough to fit slightly larger than a 9-inch fluted tart pan. Press dough into fluted edges of pan, trimming off excess pieces if needed. Poke several holes in the crust with a fork. Line crust with parchment paper, and fill with pie weights or dried beans. Place pan on a foil-lined baking sheet. Bake 10 minutes. Remove weights and foil, and bake 5 more minutes. Cool completely on baking sheet on a wire rack (about 15 minutes). Reduce oven temperature to 375°.
- Cook the mushrooms: Heat a medium skillet over medium heat. Pour in oil, add mushrooms, and saute until softened and browned, about 5 minutes. Set aside.
- Prepare the custard: In a large bowl, whisk together eggs, milk, chives, nutmeg, salt, and pepper.
- Assemble the quiche: Spoon the mushrooms, bacon, and cheese into the crust. Pour in egg mixture and carefully transfer to oven.
- Bake until set (a knife inserted into the center should come out clean), about 35 to 40 minutes. Let cool at least 10 minutes. Cut into 6 wedges and serve warm or at room temperature.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.

- Preheat oven to 400 degrees. Preheat a cookie sheet or upside down cast iron pan.
- Parbake pie crust by lining uncooked pie crust with parchment paper and filling with pie weights or uncooked dry beans.
- Bake atop cookie sheet or cast iron pan for 10-15 minutes, or until golden brown.
- While crust is baking, mix together eggs and milk until thoroughly combined.
- Add onion powder, pepper and nutmeg.
- Sweat onions in oil/butter until soft.
- Sprinkle with salt while cooking to prevent browning.
- If they get a little brown, that is okay.
- Remove onions from heat and set aside.
- Shred cheese, if necessary.
- You should have 8 ounces total of shredded cheese. The weight is AFTER shredding.
- Mix shredded cheese with flour.
- Remove crust from oven.
- Fill with onions, bacon, cheese in that order.
- Pour egg/milk mixture over fillings until crust is full (just below the crust edge). DO NOT OVERFILL!
- (If you have extra custard mix, you can cook it in small Pyrex ramekins with a bit of cheese for a crustless mini-quiche.)
- Cover edges of pie crust with foil to prevent over-browning. Remove this foil for the last 10 minutes of baking.
- Bake at 400 degrees for 30 minutes on the preheated cookie sheet or cast iron pan.
- Allow to cool slightly before serving.
- This can also be served cold for brunches or breakfast.
- To reheat in the microwave, place 1 slice on a plate; cover with paper towel; warm on 70% power for 1-2 minutes.

- In a large bowl, whisk together eggs and half-and-half. Season with salt, white pepper and nutmeg. Place shredded Jarlsberg and mozzarella in the pie shell. Pour egg mixture over cheese.

QUICHE BASIC...THEN YOU TO ADD YOUR FAVORITES
A good quiche recipe to have on hand with basic ingredients and then you add all the wonderful ingredients of your choice to finish off the quiche. This is my go to quiche recipe. You can also add a bottom crust if you prefer more of a crust on your quiche. I acquired this recipe from my daughter in law. She has given me such wonderful recipes over the years.

- In a large bowl mix your eggs, milk, cheese and salt and pepper with a whisk. After beating your egg mixture you can add your meats and veggies of your choice by folding them through mixture until blended. Pour in greased pie pan, add 1/2 cup cheese on top and bake for 45 minutes at 350 degrees. After finished baking I usually let my cool for 15 minutes.
- Note: Make sure the quiche is cooked all the way through. Check the center to see if firm to the touch.
