Steps:
- Gather the ingredients.
- In a small bowl, whisk together the milk, egg, vanilla extract, cinnamon, and salt.
- Toss the cubed brioche with the milk mixture and soak for 1 minute.
- Spoon the soaked bread mixture into a 12-ounce mug. (Discard any remaining liquid in the bowl.) Microwave for 2 minutes.

- Melt butter in the bottom of a large microwave-safe mug in the microwave, about 30 seconds. Tilt mug to coat all sides with melted butter.
- Stir melted butter, milk, egg, cinnamon, sugar, and vanilla extract together in the mug. Press bread cubes into milk mixture.
- Microwave on High until set, about 90 seconds.

- Place butter in mug, ramekin, or other microwave-safe small bowl and microwave until butter is melted, 15-20 seconds. Add the milk, syrup, cinnamon, vanilla, nutmeg, and egg and use a fork to whisk until mixture is combined.
- Add cubed bread pieces and gently fold them into the mixture without breaking them apart, until each piece is no longer dry. Let sit for about 1 minute, to allow bread to soak up the mixture.
- Microwave for 1 minute. If there is still liquid, microwave for another 10-30 seconds, depending on your microwave, until the mixture is solid. (1 minute and 20 seconds works well for me.) Careful, mug may be hot!
- Serve warm and add toppings, if desired.

- Cut the crust off of the bread and cut each slice of bread into 3 pieces.
- Combine eggs, 1/4 cup of sugar, 4 teaspoons cinnamon, and vanilla extract in a bowl. Dip bread in the egg mixture until it is soaked through.
- Place about 6 sticks at a time into a greased skillet set over medium heat. Cook until golden and cooked though, 2 to 3 minutes per side. Continue until all sticks are cooked.
- Mix remaining 1/4 cup sugar and 2 teaspoons cinnamon together in a separate bowl. Transfer each stick into the mixture and turn until fully coated. Place on a platter and serve.
