OVEN-BAKED STEAK WITH MUSTARD SAUCE
For any of you that are beef lovers, this is an amazing recipe for beef steak! Just make certain to tell your butcher to cut the sirloin to 2-1/2 inch thickness for this recipe. This steak is broiled then baked in the oven in a savory sauce, served topped with delicious mustard sauce, If desired you can just omit the mustard sauce, the steak is really wonderful without it also! The mustard sauce can be prepared hours in advance and refrigerated, then warmed in the microwave when ready to use. This recipe serves two people easily, but can be doubled if desired, just double all ingredients and prepare the with the same method...This is wonderful served with baked potatoes...you will love this!

Steps:
- Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
- Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
- Sprinkle both sides generously with freshly cracked pepper and salt.
- Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.
- While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
- Transfer vegetables to a plate and return pan to heat.
- Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. Add salt and pepper to taste (if you use full-sodium beef broth, you probably wont need salt). If not ready to serve, you can keep the mixture warm over very low heat--do not boil.
- Serve steak alongside steamed green beans, with mustard sauce spooned over both. Enjoy!

BROILED HAM STEAK WITH MUSTARD GLAZE
I made these tasty Ham Steaks for New Years Day along with Hoppin' John and sauteed cabbage. Easy, fast and good! For the ham,I could not find the regular large ham steak so I used two 22 oz. packages of Hillshire Farms Brown Sugar Ham Steaks, each package had 4 thick slices of bone in ham and this worked perfectly for our family. I also doubled the amount for the glaze to accomadate the additional ham.

STEAK A LA MOUTARDE (STEAK WITH MUSTARD CREAM SAUCE)
Mustard is not just for hot dogs anymore. This steak is fast and easy to prepare and would go well with most any side dish. Once the mustard has been added, do not allow to boil or the sauce will become unpleasant.
