- Combine corned beef hash, onion, and bell pepper in an ovenproof skillet. Cook, stirring occasionally, over medium-high heat until vegetables begin to soften and hash begins to brown, 10 to 15 minutes. Make 4 indentations in the hash for the eggs. Remove from heat.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Carefully crack an egg into each indentation. Top with chopped tomatoes.
- Place skillet under broiler; broil until eggs are cooked to preferred doneness, 4 to 10 minutes. Check often to avoid burning eggs. Remove skillet from oven. Top with shredded cheese; sprinkle with salt and pepper.

- Using a large ovenproof skillet, cook the hash browns and the onion in the olive oil until the potatoes are browned and onion is tender. Remove from the heat; stir in corned beef and salt.

- Cover and bake for 15-20 minutes or until eggs reach desired doneness. They will continue to cook after they are removed from the oven.

- In a large pot, bring 2 quarts water to a boil. Add kosher salt, pink curing salt, sugar, and spices; remove from heat and stir until both salts and sugar have dissolved. Let cool completely. Place brisket in a nonreactive container just large enough to hold it; pour cooled brine over meat. Place 2 small plates on top to keep meat submerged; cover and refrigerate 5 days.
- Remove brisket; discard brine. Rinse brisket and place in a large pot. Add enough water to cover by 2 inches. Add halved onion, celery, and halved carrot; bring to a boil, then reduce heat to medium-low, cover, and simmer until very tender, 3 to 3 1/2 hours.
- Meanwhile, set a steamer in a large saucepan. Add enough water to reach the bottom of steamer and bring to a boil. Add turnips, reduce heat to medium-low, cover, and steam until tender, 8 to 10 minutes. Transfer to a bowl. Repeat with small carrots and parsnips (together), steaming until tender, 10 to 12 minutes. Transfer to bowl.
- Transfer beef to a cutting board. Tent with foil to keep warm. Strain broth through a fine-mesh sieve. Return all but 4 cups broth to pot; bring to a boil. Add cabbage, quartered onions, and parsley sprigs; simmer until very tender, about 35 minutes.
- Meanwhile, in another pot, combine reserved 4 cups broth and potatoes. Bring to a boil, then reduce heat to medium and simmer until potatoes are tender, about 25 minutes. Strain (reserving broth), then toss potatoes with butter and chopped parsley; cover to keep warm. Add turnips, carrots, and parsnips to pot with cabbage mixture; cook until warmed through, about 10 minutes.
- Remove and discard parsley sprigs; transfer vegetables to a platter with potatoes, reserving broth. Trim excess fat from beef. Slice thinly against grain, and transfer to platter. Serve with reserved broth and horseradish sauces.

- Heat a large skillet over medium-high heat. Add 1 can of corned beef hash and spread into a layer, approximately ½ inch thick. Let sit over medium-high heat uncovered and undisturbed until the bottom is crispy (approximately 10 minutes).
- Push one edge of the corned beef in a bit to give space to add water to the pan. Create 4 wells in the corned beef hash for the eggs. (doesn't need to be all the way to the bottom of the pan, just enough so the eggs don't run everywhere). Crack the eggs into the wells.
- Add 3 tablespoons of water to the edge that has been cleared for the water. Cover and reduce heat to medium-low to poach the eggs. Check after 2 minutes to see if you need more water. Add another tablespoon if needed to continue poaching and cook another 1-2 minutes to get the desired yolk. (3 minutes total will be fairly runny and 4 minutes will be more firm.) I like them a little runny.

- Hash - Fry it Up. Set the heat to medium-high. When the skillet heats up, add the entire can of hash. If you like yours mushy, just heat it until it's warmed through, and then you're ready to move on to step two.
- Remove Spinach Stems. While the hash is cooking, remove the stems from the spinach. You can also tear any large leaves into smaller pieces. You'll notice the spinach comes to about the 30 oz.
- Hash Browns - Add the Potatoes. Add 1 to 2 cups, depending on how much you like potatoes (and how big your skillet is—you'll notice mine gets pretty full toward the end, and I think I was conservative with the hash browns).
- Mushrooms & Bell Pepper - Saute the Veggies. Now the pan is getting pretty full. I added just a little bit of oil to saute the vegetables in. Again, I pushed what was already cooked off to one side, while sauteing the veggies.
- Crack the Eggs - Add Liquids & Spices. Looks a little bit like a face, doesn't it? This is all four eggs, a few dashes of Frank's, more fresh ground black pepper, dried basil (maybe a teaspoon or so) and some 2% milk (I always use it, but I never measure it out).
- Add Baby Spinach - Cook With Eggs. Push everything to one side of the skillet, add a little bit of oil, then pour in the egg mixture. Now, add the spinach.
- Remove From Heat. Add Tomatoes (Optional) Add Cheese - Shredded Cheddar & Swiss. At this point, it looks more like a pizza than a breakfast skillet. This is Swiss and sharp cheddar, but you can use whatever you like.
